FORTUNE COOKIES

This is a great recipe that came from the Food Network, so I wanted to post it here (I was looking for a really good fortune cookie recipe on here). One thing, I did find that when I used the recommended tablespoon in putting the batter on the cookie sheet, the centers of the cookies were too "doughy" and the edges were golden brown, and the cookies broke when I tried to bend them into the fortune cookie shape. So, using a rubber bowl scraper, I put a small amount on the cookie sheet and just swirled it around until it was a nice, thin layer, about 3-inches in diameter. This worked perfectly! But, when the recipe says only make a few at a time, it's no joke! These harden quickly and unless you've got others in the kitchen to help or you move with lightning speed, I suggest only making 2 or 3 at a time.

Steps:

  • You will also need: 2 1/2 x 1/2-inch fortune strips.
  • Preheat oven to 350°F.
  • Grease a cookie sheet thoroughly.
  • Whip the egg whites on low speed until light and foamy.
  • Blend in the sugar and continue to beat until soft peaks form.
  • Pour in the melted butter, flour, salt, and extracts; mix until well combined.
  • Drop a tablespoon of the batter onto the prepared cookie sheet.
  • Using the back of a spoon, spread the batter evenly into very thin 3-inch rounds.
  • Alternatively, use the lid of a jar with a 3-inch circle punched out as a template, pour the batter in the ring, and remove.
  • Because you must work quickly to shape these cookies, bake just 3 at a time.
  • Bake for about 5-8 minutes or until the edges are a light golden color.
  • Remove the cookies with a spatula and place on a work surface.
  • Lay a fortune in the lower middle of the cookie, and fold in half to make a semi-circle.
  • Bend the edges up toward each other to make a crescent.
  • Drag the crease across the rim of a small measuring cup, with the ends facing down.
  • Cool in mini muffin tins to hold shape until crisp.
  • Repeat with remaining batter.

Steps:

  • Print and cut out 3-inch wide paper fortunes.
  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone mat or parchment paper.
  • Combine egg white, sugar, milk, vanilla extract, almond extract, salt, and butter in a bowl. Whisk until sugar is dissolved. Add flour and whisk until batter is smooth and falls off the whisk in ribbons.
  • Scoop 1 tablespoon of batter onto the prepared baking sheet; spread out into a 4-inch circle using the back of a spoon. Repeat once more.
  • Bake first batch in the preheated oven until crispy and golden brown on the edges and still pale in the centers, about 10 minutes.
  • Quickly lift up cookies using a spatula. Add a fortune to each. Fold cookies in half, pressing edges together lightly. Bend each cookie over the rim of the pan, bringing ends down on either side. Lift up and curl ends towards each other. Place cookies in ramekins or muffin tins to hold their shape while they cool.
  • Bake remaining batter in batches, folding and shaping the cookies while hot. Remove from ramekins or muffin tins when completely cool.

Steps:

  • Preheat oven to 400 degrees F. Butter a cookie sheet. Write fortunes on strips of paper about 4 inches long and 1/2 inch wide. Generously grease 2 cookie sheets.
  • Mix the egg white and vanilla until foamy but not stiff. Sift the flour, salt, and sugar and blend into the egg white mixture.
  • Place teaspoonfuls of the batter at least 4 inches apart on one of the prepared cookie sheets. Tilt the sheet to move the batter into round shapes about 3 inches in diameter. Be careful to make batter as round and even as possible. Do not make too many, because the cookie have to be really hot to form them and once they cool it is too late. Start with 2 or 3 to a sheet and see how many you can do.
  • Bake for 5 minutes or until cookie has turned a golden color 1/2 inch wide around the outer edge of the circle. The center will remain pale. While one sheet is baking, prepare the other.
  • Remove from oven and quickly move cookie with a wide spatula and place upside down on a wooden board. Quickly place the fortune on the cookie, close to the middle and fold the cookie in half. Place the folded edge across the rim of a measuring cup and pull the pointed edges down, one on the inside of the cup and one on the outside. Place folded cookies into the cups of a muffin tin or egg carton to hold their shape until firm.

  • Preheat the oven to 375 degrees F.
  • In a medium bowl, whisk together the sugar, flour, salt and cardamom. In a separate medium bowl, whisk together the extracts and egg whites. Sift in the dry ingredients and whisk it -- whisk it good -- until you have a smooth batter.
  • Grease a baking sheet with cooking spray. Spread 1 tablespoon of batter into a 3-inch circle on the baking sheet (it helps to use the lid of a mason jar as a guide); make 2 more circles on the baking sheet (only bake 3 circles at a time so you have time to mold the cookies before they cool). Bake until the edges are brown, 5 to 7 minutes.
  • Working quickly (but carefully, so as to not burn your fingers), use a spatula to flip a circle over. Place a fortune in the center, fold the circle in half and then pick it up and bend the folded side over the edge of a bowl to form a fortune cookie shape. Place in a muffin tin so the shape holds while it cools. Repeat with the remaining circles. Bake and mold the remaining batches.

3-Ingredient Homemade Fortune Cookies image

Steps:

  • Preheat oven to 350°F. Lightly grease muffin tin with butter.
  • Working with one wonton wrapper at a time, place one folded fortune in the center of the wrapper. Dip your fingers into a small bowl of cool water and lightly wet all four edges of the wrapper. Fold in half, gently pressing to seal the edges.
  • Fold ends of wrapper toward each other to create the shape of a traditional fortune cookie.
  • Working quickly with a pastry brush, generously brush each wonton wrapper with butter on all sides. Sprinkle each with 1/2 tsp. sugar, then place in a prepared muffin cup. Repeat with remaining wrappers.

Steps:

  • Preheat the oven to 180C/160 fan/gas 4 and line a large baking sheet with baking parchment, or use a silicone baking sheet. Write or print fortunes on paper measuring 6cm long by 1cm wide.
  • Put the egg whites, vanilla, almond extract, oil and 2 tsp cold water into a bowl and whisk with an electric hand whisk until frothy, 20-30 secs. Measure the flour, cornflour, sugar and a good pinch of salt into a bowl, then sift into the egg white mixture. Whisk everything together until you have a smooth batter-like consistency. Chill the mixture for 1 hr.
  • Next, put a tbsp of mixture onto the prepared baking sheet. Oil a metal spoon, then use the back of it to swirl the mixture out into a 8-10cm circle. Repeat with another tablespoon of the mixture, to create 2 cookies. Make sure there is space between each cookie as they will spread in the oven. It is best to only bake 2-3 cookies at a time, as you will need to shape them whilst they are hot. Sprinkle 1 of the cookies with black sesame seeds, then bake for 10-12 mins until the edges of the cookies turn golden.
  • One at a time remove the cookies with a palette knife once they are out the oven. You want them to still be soft so you can shape them so work quickly. Turn the cookie over so that the sesame seeds are face down and put the fortune in the middle of the circle. Fold the circle in half to secure the fortune and pinch the 2 edges together to seal. Pop the cookie on the rim of a mug or cup and very gently pull the 2 corners down to get the fortune cookie shape. Hold for 10 secs, then transfer the cookies to muffin tins so that they hold their shape whilst cooling completely. Repeat with the remaining cookie mixture.

  • Preheat oven to 400°. Write fortunes on small strips of paper (3-1/2x1/4-in.); set aside. Line a baking sheet with parchment. Using a pencil, draw two 3-1/2-in. circles on a sheet of parchment. Steps:

  • Sift the flour. Place the flour and salt in a large bowl. Mix. Rub the butter into the flour with your fingertips until the mixture resembles breadcrumbs.
  • Next add approximately 1/2 of the egg yolk . Mix well using your hands. Try to work quickly.
  • Wrap the dough in plastic wrap and chill for 10 -15 minutes.
  • Now take the chilled dough and roll out into a 12 inch square that is about 1/8 inch thick, using a rolling pin. Use a cookie cutter and cut out cookies using your favorite cookie cutter shape (the recipe should make about 25, depending on how big your cutter is).
  • Make flower stem: Next cut the remaining dough into strips - 1/8 inch width and 6 inch long. Fold strip in half and twist strip together. I've done this in the photo above.
  • Lightly butter a baking tray and then line with oiled or baking sprayed parchment paper. Place the flower stems onto the baking tray.
  • Next brush the egg wash on top of the stem.Take a flower cookie and place on the top of the stem. Now make one hole on the top of flower using a toothpick.
  • Brush the egg on top of the flowers and stems.
  • Bake about 15 minutes at 200 c degrees or until the crust is golden brown.
  • Remove from oven and let cool.
  • Take a small strip of paper and write your fortune and connect it to the cookie with a piece of string threaded through the hole that you made in the flower. After that decorate.
  • Enjoy.
