- Grill directions:.
- Heat grill. Rub both sides of pork chops with salt and pepper. In small saucepan, combine all glaze ingredients; mix well. Bring to a boil, stirring constantly. Set aside.
- When ready to grill, place pork chops on medium heat 4 to 6-inches from medium coals. Cook 15 minutes, turning once.
- Brush pork chops with glaze. Cook an additional 10 minutes or until no longer pink, turning once and brushing frequently with glaze. Bring any remaining glaze to a boil; serve with pork chops.
- Oven Directions:.
- Preheat oven to 350 degrees.

- In a large shallow dish, combine the flour, salt and pepper. Add pork chops and turn to coat. In a large ovenproof skillet, cook chops in butter over medium heat until a thermometer reads 145°, 4-5 minutes on each side. Remove and keep warm. , Meanwhile, in the same skillet, bring the vinegar to a boil. Reduce heat; add maple syrup. Cover and cook for 10 minutes. Combine cornstarch and water until smooth; gradually add to maple mixture. Bring to a boil; cook and stir until thickened, about 2 minutes. , Place chops on a broiler pan; sprinkle with brown sugar. - Dry the pork chops well and season with salt and pepper, to taste.
- Add the oil to the pan and heat
- Add chops and brown each side.
- Transfer to a plate and keep warm.

- For the polenta: Heat the olive oil in a small skillet over medium heat. Add the sage to the oil and cook until the sage is slightly crisped, about 1 minute. Remove from the heat and set aside. Meanwhile, put the broth and milk in a medium saucepan and bring to a boil over high heat. Slowly whisk in the polenta, reduce the heat to low, and cook, whisking occasionally, until the polenta is thick and creamy, about 15 minutes. Pull the saucepan from the heat and whisk in the pumpkin, sage with the oil, cheese, salt, and pepper. Hold in a warm place.

- Bring the chicken broth, vinegar, maple syrup, chipotles in adobo, chili powder, tomato sauce, garlic, a generous pinch of salt and a few grinds of pepper to a simmer in a medium saucepan over medium heat. Reduce heat to medium-low and gently simmer until thick, stirring occasionally, about 25 minutes. Reserve 1/2 cup of the sauce for serving.
- While the sauce simmers, adjust an oven rack about 4-inches below the heat source and preheat the broiler to high.
- Put a broiler pan or foil-lined baking sheet under the broiler to preheat for 5 minutes. Sprinkle the pork chops with salt and pepper, put on the preheated pan and brush with the some of the sauce. - Fry bacon in a large skillet and set aside. Remove most of the bacon grease leaving about a tablespoon in the pan.
- Sautee the corn, onions, and bell pepper in the reserved bacon grease for about 5 minutes.
- Crumble the bacon on top and add the balsamic vinegar. Mix together.
- Salt and pepper to taste. Add more balsamic if you like the tang!
- For pork chops.
- Bring the maple syrup and balsamic vinegar to a simmer in a small sauce pan. Simmer for about 5 minutes or until the mixture coats the back of a spoon. Add freshly ground pepper to taste.

- Pour 4 tbsp olive oil into large frying pan (preferably NOT non-stick) over a medium heat. Season the pork chops with 2 tsp salt and add to pan when oil is hot.
- Cook for 3-5 mins on each side until nicely browned all over and cooked through. Transfer cooked chops to warmed plate, cover with foil and keep warm.
- If very little oil left add an extra tbsp and fry the onions and thyme leaves. Season with salt and stir fry for 3 mins until onions have softened but not browned. Pour in the vinegar and using a wooden spoon deglaze pan scraping any browned residue from the chops. Bring to a simmer for 2 mins then stir in maple syrup and 1 tsp pepper.
- Bring back to simmer, cook for 7-10 mins until the sauce has reduced to a sticky glaze. Check for seasoning then pour sauce over the pork chops and serve.

- With a mallet or rolling pin pound pork chops in-between two sheets of plastic wrap until 1/4 inch thin.
- Salt and pepper both sides of chops.
- Peel and core apples, cutting into 12-16 wedges each (up to you how thin you want the slices).
- Melt 1 T.
- butter in a 12 inch fry pan over mediun heat.
- Cook apples and onions until lightly browned, about 8 minutes total.
- Remove to a plate and cover to keep warm.
- Add the remaining 1 T.
- butter inccreasing heat to medium high.
- Add chops and cook for 3 minutes on one side, turn and cook for another three minutes.
- Cut one to check if no longer pink and if not, remove to the plate with the apples and onions, covering again to keep warm.
- Mix together broth, cider, syrup, mustard and cornstarch.
- Add to fry pan and bring to a boil.
- Cook until reduced to about 1/2 cup, around 5 minutes.
- Gently toss chops with apple mixture.
- Drizzle glaze over top and serve.
