Strawberries and Spiced Honey image

Steps:

  • Combine the honey with the chipotle chile powder and the lemon juice. Allow to sit at room temperature for 30 minutes. Spoon the honey into small ramekins and place each ramekin in the center of a large shallow wide-rimmed soup bowl. Arrange crushed ice around the ramekins. Place the strawberries on the ice and serve.

1 cup wildflower honey (whatever is native to your region)
1 teaspoon chipotle chile powder (cayenne can be substituted)
1 teaspoon fresh lemon juice
Crushed ice
6 cups washed, ripe whole strawberries

Fried Strawberries With Honey Cream image

Steps:

  • Wash strawberries and remove stems; Pat dry with paper towels; Set aside.
  • Whip Cream and Honey in a bowl until thick and put in fridge.
  • In a large saucepan or deep fryer heat 2 inches oil to 375 degrees.
  • Combine flour and 1 tablespoon sugar; Make a well in the center.
  • Combine eggs, wine and the 2 tablespoons oil;
  • Add to flour mixture and beat until smooth.
  • Dip berries, a few at a time, into batter.
  • Fry strawberries in hot oil for 1 to 2 minutes.
  • Remove with slotted spoon; drain on paper towels.
  • While still warm, roll in the remaining 1/2 cup sugar.
  • Cool slightly before eating.
  • Serve warm with Honey Cream.

Steps:

  • Combine all dry ingredients.
  • In a small bowl, combine the eggs, honey and oil.
  • Stir in strawberries and almonds.
  • Add the liquid mixture to the dry ingredients, stirring only well enough to moisten the flour mixture.
  • DO NOT OVERMIX!
  • Pour into a well greased loaf pan and bake at 350 degrees for 50-55 minutes.
  • Cool for 5-10 minutes before removing from pan.
  • This can be served warm or cold.

Steps:

  • Add the strawberries to food processor and purée into a smooth paste.
  • Add the strawberry purée to a small saucepan with the simple honey syrup. Simmer over medium heat for 5 minutes, until slightly reduced. Let cool completely, then strain into an airtight glass container and store in the refrigerator for up to 2 months.
  • To serve, mix 1-2 tablespoons of strawberry syrup with 8 ounces of seltzer water in a glass over ice.
