MAKE YOUR OWN CAKE MIX
I see all these cool recipes using cake mixes and I usually don't have any on hand. I found this recipe on Recipelink.com, where it is credited as being from Make Your Own Groceries. I've used it, and it does the job! There is another cake mix recipe on this site (#182515), but I thought I'd go ahead and post this one since it is slightly different (it's made with shortening, so it can be made ahead and stored in a plastic bag) and it also includes notes for variations. I'm posting a recipe for a chocolate cake mix as well.

Steps:
- Mix together flour, baking powder, and salt; stir to blend.
- Mix in sugar.
- Cut the shortening into the dry ingredients until the mixture looks crumbly.
- Label and store in a sealed plastic bag at room temperature.
- Makes 1 pakage mix. Each package makes two 8 or 9 inch layers or one 9 x 13 x 2 inch rectangle.
- To Use:.
- Pour 1 package of mix into a mixing bowl;.
- add 3/4 cup milk and 1 1/4 teaspoons vanilla extract.
- Using either an electric or manual rotary beater, beat at slow to medium speed for two minutes (by hand, beat 3 minutes averaging 135 strokes per minute). Scrape the sides of the bowl frequently as you beat.
- Add 2 eggs; beat 1 minute more (2 minutes by hand).
- Grease and dust with flour your choice of pan(s); spread batter evenly in pans.
- Bake round cake pans at 375 degrees F. for about 25 minutes or until a toothpick inserted in the center comes out clean.
- bake the 9 x 13 x 2 inch pan for 30 to 35 minutes or until a toothpick comes out clean.
- Cool cake(s) for 10 minutes in their pan(s) before turning out on racks.
- Variations:.
- WHITE CAKE.
- Follow the same directions as for Yellow Cake replacing the 2 eggs with 3 unbeaten egg whites. Use an electric mixer for beating.
- SPICE CAKE.
- Add to the package of Yellow Cake Mix: 1/4 cup sugar, 1 teaspoon ground cinnamon, 1/2 teaspoon ground cloves, and a pinch of ground allspice. Follow Yellow Cake directions.
- EXTRACT FLAVORED CAKES.
- Replace the vanilla in either the Yellow or White Cake recipes with 2 to 3 teaspoons of the extract of your choice. You may want to add a few drops of food coloring for the flavors like lemon, orange, or cherry, etc.
- FRESH ORANGE CAKE.
- Pour 1 package of Yellow Cake Mix into a bowl; add 2 tablespoons sugar and 1 tablespoon freshly grated orange peel (1 teaspoon dried). Squeeze the juice from 1 large orange and add to it enough water to measure 1 cup. Add this orange juice to the mix, beat for 2 minutes as directed previously; add 2 eggs; beat and bake as directed.
- CUPCAKES.
- Pour cake batter into greased cupcake tins or tins lined with paper baking cups; fill 1/2 to 2/3 full. Bake at 375 degrees F. for 20 to 25 minutes or until an inserted toothpick comes out clean.
- Makes about 2 dozen.
- NOTE: To prevent a cake from sticking to its pan, put the pan on a wet towel to cool as soon as you take it out of the oven.

ANY FLAVOR CAKE MIX COOKIES
Very simple recipe to turn your favorite flavor cake mix into perfect cookies! (You know, the kind with a nice cracked pattern on top, and a tiny bit of almost under done center). We went on a diet so I no longer keep white flour in the house, however a single cake mix managed to elude me. I found it when I was looking for something to bring to church. Now I keep a cake mix for bringing cookies, it's a lot less dangerous than a bag of flour! (Its best with a mix that has pudding in it for chewiness; you can also use the dry ingredients from your favorite from scratch recipe).

Steps:
- Toss all ingredients into a bowl, using enough Crisco to form a stiff dough. (I found it to take less time than pulling my mixer out, so I mix by hand).
- Form into little balls, place on a baking sheet 2 inches apart, gently flatten the balls, and bake at 350°F for 8-10 minutes, till puffy, and just barely golden around the edges. (They do spread a little while baking).
- Remove from heat, cool 5 minutes before removing to a rack to cool. (Okay, I didn't use a rack the second time, they still turned out great!) They will shrink down a little in height and form a perfect cookie!
CAKE MIX COOKIE SANDWICHES
Easy cookie that utilizes a cake mix. It is nice to have the ingredients on hand for thse for when unexpected company pops over or you need a quick sweet treat. These are a softer cookie with a cake-like texture. Mix and match cake mix and frosting varieties for a new flavor combination.

Steps:
- Preheat oven to 350.
- In a bowl mix together the cake mix, oil and eggs. Do this by hand as it is very stiff. You are looking for everything to just come together to form a dough.
- Roll dough into 1" balls. Place about 2" apart on an ungreased cookie sheet.
- Note: if dough is too sticky to roll into balls easily, refrigerate for a short time.
- Bake cookies 8 to 11 minutes at 350. Cookies should still be soft but the tops will have a cracked appearance when done.
- Remove cookies from baking sheets to cool.
- Allow to cool completely.
- Choose 2 cookies that are the same size and shape. Place about 1/2 to 1 teaspoon of frosting on the bottom of one cookie. Put the two cookies together bottoms facing each other to form the sandwich.
- Note: I like to use the following combinations, but feel free to experiment. Chocolate cookie with fudge frosting, chocolate cookie with vanilla frosting, white cake with vanilla frosting (add about 1/2 teaspoon of almond extract to the frosting), carrot cake cookies with chream cheese frosting, funfetti cookies with rainbow chip frosting (kids love this one for the colors).
