GRILLED PINEAPPLE DESSERT

- Drain pineapple, reserving 1/3 cup juice and six pineapple slices (save remaining juice and pineapple for another use)., In a small microwave-safe bowl, combine the butter, brown sugar, vanilla, cinnamon and reserved juice. Microwave, uncovered, on high for 1-2 minutes or until butter is melted. Brush half of the mixture on both sides of pineapple slices., Grill, uncovered, over medium heat or broil 4 in. from the heat for 3-5 minutes or until lightly browned, turning once and basting with remaining butter mixture., Place pineapple in dessert bowls; top with ice cream. Drizzle with caramel topping; sprinkle with granola.

GRILLED PINEAPPLE TOPPED WITH ICE CREAM AND CANDIED WALNUTS
This is put together with a couple of my recipes.The grilled pineapples recipe #66296 I had left over so I reheated it in a pan on the stove top. This is for 8 serving but go ahead and make it for a crowd. Fattening but YUMMY! This is served on top of a hot slice of pineapple. So it's warm, cold, sweet, crunchy, and creamy good! Or you can chop the grilled pineapple and place it on top.

Steps:
- Grilled pineapple--.
- Mix tequila, marmalade, sugar, butter, vanilla, cinnamon and mint together heat till sugar is dissolved.
- Preheat Grill.
- Place pineapple on grill.
- Baste with tequila mixture while grilling.
- Turn occasionally.
- Grill about 10 to 15 minutes.
- Serve hot with a scoop of your favorite ice cream.
- Sundae--.
- Starting with the first ingredient place in each bowl follow by each ingredient till you have a beautiful sundae!
- Enjoy!

GRILLED PINEAPPLE
Steps:
- Prepare a charcoal grill with a single layer of hot coals.
- When the grill is ready, brush the pineapple wedges lightly with the oil and place them on the grill. Cook for 6 to 8 minutes per side until nicely charred and lightly colored. Remove to a serving plate and drizzle with honey.
GRILLED PINEAPPLE WITH VANILLA ICE CREAM AND RUM SAUCE
Steps:
- Cut the top and bottom off of the pineapple, peel and cut it crosswise into 8 rings, about 1/2-inch each. Use a spoon or apple corer to carve out the center core of each ring.
- Spray a large grill pan with cooking spray and heat over a medium flame. Grill the pineapple, in 2 or 3 batches, for 2 to 3 minutes on each side, until it is nicely brown and grill marks have appeared. (You can also grill this on an outdoor grill sprayed with cooking spray before being heated.)
- While the last batch of pineapple cooks, heat the butter, sugar and rum in a small saucepan over a low heat, stirring, until the sugar is dissolved and the sauce has thickened slightly, about 2 minutes. Remove the sauce from the heat.
- Place a pineapple ring on each plate, scoop 1/4 cup of ice cream into the center of the ring, and drizzle about 2 teaspoons of sauce on top.

- Prepare grill. Cut pineapple lengthwise through leaves, keeping leaves attached, into 8 wedges. Grill pineapple wedges, a cut side down, on a lightly oiled rack set 5 to 6 inches over glowing coals until just charred, about 2 minutes on each cut side.
- Serve pineapple with ice cream and dulce de leche.
