- Place the onions, carrots and green peppers in a 5-qt. slow cooker. Sprinkle meat with 1/2 teaspoon salt and 1/2 teaspoon pepper. In a large skillet, brown meat in oil in batches. Transfer to slow cooker., Add broth to skillet, stirring to loosen browned bits from pan. Combine the flour, paprika, tomato paste, caraway seeds, garlic, sugar and remaining salt and pepper; stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Pour over meat. Cover and cook on low for 7-9 hours or until meat is tender., Cook noodles according to package directions. Stir sour cream into slow cooker. Drain noodles; serve with goulash.

Steps:
- Cook bacon until crisp, then crumble and set aside.
- Add onions to skillet and brown on medium low in drippings.
- Stir in paprika and caraway seed.
- Cook for 10 to 15 seconds, stirring.
- Add meat.
- Stir to coat evenly withpaprika.
- Add 2 cups of the tomatoes, cover and simmer for 1 hour, until meat is almost tender.
- Season to taste with salt and pepper.
- Add potato and cook 25 minutes more, until potatoes and meat are both tender.
- Stir in reserved tomatoes and heat thru.
- Sprinkle with reserved bacon and serve with sour cream if desired.
HUNGARIAN GOULASH WITH SAUERKRAUT
There is Goulash and there is Goulash and there is this Goulash, they are mostly all good but I find this one distinctive. The saurerkraut gives great flavor. Do ahead and reheat the flavor is even better. I use wine cured kraut.

- In a dutch oven heat oil and brown the meat on all sides, when browned set aside.
- Add onions to the skillet, saute 5 minutes.
- Pour off excess fat and return meat to the pot.
- Sprinkle in the paprika and Majoram.
- Top with sauerkraut.
- Bake covered for 1 hour 350F degrees oven.
- Add salt.
- When ready to serve stir in the sour cream and caraway seeds.
- Serve over hot buttered noodles.

- Place beef and onion in a 3-qt. slow cooker. Combine the flour, paprika, garlic salt and pepper; sprinkle over beef and stir to coat. Stir in tomatoes; add bay leaf. - In a large sauté pan, heat the olive oil and sauté the onions and sugar until caramelized. Add the garlic and caraway seed. Cook another minute.
- Add the sweet and sharp paprika, marjoram, thyme and bay leaf. Sauté another minute, until fragrant.
- Add the tomato paste. Deglaze with the vinegar and the stock and add the pieces of beef shank, salt and pepper. Bring to a boil, then lower to a simmer and cook until very tender, about 2 hours, stirring occasionally.
- Taste and adjust seasoning with kosher salt and freshly ground pepper.

- Melt butter in a large soup pot over medium high heat. Saute onions until soft, then add beef and brown. Stir in caraway seed, marjoram, garlic and paprika. Pour water over all, lower heat to low and simmer for 2 1/2 hours.

- Heat up the oil or lard in a pot and braise the chopped onions in it until they get a nice golden brown colour
- Sprinkle the braised onions with paprika powder while strirring them to prevent the paprika from burning.
- Add the beef cubes and and sautee them till they turn white and get a bit of brownish colour as well.
- The meat will probably let out its own juice, let the beef-cubes simmer in it while adding the grated or crushed and chopped garlic (grated garlic has stronger flavour), the ground caraway seed, some salt and ground black pepper, the bayleaf, pour water enough to cover the content of the pan and let it simmer on low heat for a while.
- When the meat is half-cooked (approx. in 1,5 hour, but it can take longer depending on the type and quality of the beef) add the diced carrots and the potatoes, the cellery leaf and some more salt if necessary (vegetables tend to call for more salt). You'll probably have to add some more (2-3 cups) water too.
- When the vegetables and the meat are almost done add the tomatoe cubes and the sliced green peppers. Let it cook on low heat for another few minutes. You can remove the lid of the pan if you want the soup to thicken.
- Hungarian goulash is neither a soup nor a stew, its somewhere in between. Though in Hungary its considered rather to be a soup than a stew.
- The soup is hearty enough without any pasta just serve with some fresh bread
HUNGARIAN GOULASH
This is a perfect comfort meal. I like to sometimes use rice instead of the noodles, just for a change; cheesey mashed potatoes are another choice.This is a great meal, full of all kinds of flavors. Each ingredient stands alone, but works so well with the other flavors.

- In a large stock pot over medium-high heat, add the butter or margarine. Add the onions and sauté until softened, 3 to 5 minutes, stirring frequently. Reduce the heat to medium and add the paprika, garlic, caraway seeds, dill seed, and marjoram. Cook for 1 minute, stirring constantly.
- Add the beef and stir to combine. Cook for 2 minutes, stirring frequently. Add the flour and stir until it is absorbed into the onions and beef, 1 to 2 minutes. Add the broth, tomato paste, and Worcestershire sauce. Bring to a boil and stir to deglaze and dislodge any bits of food that have stuck to the bottom of the pan and to incorporate the flour. Scrape your stirring spoon to free any flour that has adhered to it.
- Reduce the heat, cover, and simmer for 1 hour, stirring occasionally. Add the potatoes, cover and simmer for 30 to 45 minutes, or until the meat is tender, stirring occasionally. Season with salt and pepper. Top each serving with 1 tablespoon of sour cream, if using.

HUNGARIAN GOULASH SOUP
This soup might take a tad longer to make than some other soups -- but the time is definitely worth it. I got this recipe from Bon Appetit Magazine. I took one look at the picture and knew I had to try it -- and boy, am I glad I did. The flavors are wonderful. I know it sounds like a lot of paprika -- but it's in no way overpowering. And DON'T skip the dollop of sour cream!

- Heat oil in heavy large hot pot over med. heat. Add onion and caraway seeds and sauté until onion begins to soften, about 8 minutes. Add beef and paprika, sauté until meat is brown on all sides, about 15 minutes. Add broth. Bring to a boil, scrapping up browned bits at bottom pot. Reduce heat to low, simmer until meat is just tender, about 40 minutes (I find this sometimes takes about 30 minutes longer).
- Stir potato, parsnip, carrot, celery, bell pepper and garlic into soup. Simmer until vegetables are tender, about 20 minutes. Stir in tomatoes. Simmer until vegetables and meat are very tender, about 20 minutes longer. Cool slightly.
- Transfer 3 ½ cups of soup to blender or food processor. Blend/process until smooth. Add back to soup in pot. Stir in parsley. Season soup to taste with salt and pepper. (Can be made up to 2 days ahead. Cool slightly, chill uncovered until cold, then cover and refrigerate. Bring to a simmer before serving). Six servings.
- To serve: Ladle soup into bowls. Top each with a generous tablespoon of sour cream.
