Ice Cream Sodas Recipes

Steps:

• Place 3 tablespoons chocolate syrup in each of four 16-oz. glasses. Add 1/4 cup milk and 1 cup carbonated water to each; stir until foamy. Add two scoops of ice cream to each glass. Top with whipped cream if desired.

• Place 1 to 2 tablespoons fruit or a peach half in a large soda glass. Add 2 scoops ice cream and 3 to 4 tablespoons cream. Shake seltzer bottle and squirt into glass. Top soda with cherries or strawberries.

• Pour 1/2 cup club soda into each of four tall glasses. Add 1/2 cup ice cream to each glass. Fill glasses with soda. Serve immediately.

• Using an ice cream scoop, put 1/2 cup of sherbet into each glass. Scoop 1/2 cup of vanilla ice cream on top of the sherbet. Pour 1/3 cup club soda on top of the ice cream. • In a small saucepan, whisk together the orange juice and cornstarch until smooth. Add the raspberries, raspberry jam and sugar. Pour the mixture through a fine-mesh sieve into a small bowl, pressing on the solids with a wooded spoon to extract as much liquid as possible. Cool the syrup for 30 minutes.

Whisk with a fork, then slowly, while still whisking, add the club soda until the glass is three-quarters full. • Combine the cocoa, salt, sugar and 1 cup of water in a medium saucepan and bring to a boil. Add the coffee granules, and simmer for 5 minutes. Pour the syrup into a bowl and add the vanilla. Cover and refrigerate until ready to use.
• Combine the raspberries, sugar, and lemon in a container. Cover and refrigerate for at least 2 hours, or overnight. Strain the syrup into a pitcher, pushing down on the berries to extract all the liquid.
