Steps:

Peel boiled potatoes while they are still warm and cut into large, bite-sized cubes.
Toss together with remaining ingredients.
Refrigerate for at least one hour.

Steps:

Place the potato pieces on a large baking sheet; drizzle with 1/8 cup oil. Sprinkle with 1 tsp black pepper and the salt; toss well. Bake at 425 degrees for 35 minutes or until the potato pieces are tender.
Cook the pepper strips and onion in 1/8 cup oil in a large skillet over medium-high heat, stirring constantly, until the vegetables are crisp tender.
Combine the potato pieces, bell pepper mixture, and artichoke hearts in a boil. Add the remaining 1/8 cup of oil, freshly chopped basil, and garlic; toss. Serve warm or at room temperature.

Italian Potato Salad (Insalata Di Patate) image

Steps:

Dressing.
Combine olive oil, wine vinegar, garlic cloves, salt, and pepper in salad shaker or screw-top jar.
Shake well.
Chill in refrigerator.
Shake thoroughly before using.
Salad.
Dice and cook potatoes until tender.
Chill cooked potatoes in refrigerator while you prepare celery, cucumber, olives and onion.
Carefully combine cooked potatoes, celery, cucumber, olives, and onion with 3/4 cup Italian Dressing and oregano.
Cover salad, and chill in refrigerator for at least an hour before serving.
