WARM STICKY FIGGY PUDDING

Warm Sticky Figgy Pudding image

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the dates, dried figs and water to a medium saucepan and bring to boil over medium heat. Remove the pan from the heat and stir in the baking soda. Let cool for about 5 minutes, then add to a blender and puree.
  • Using a hand mixer, cream the butter and sugar in a large bowl. Add the eggs and beat well. Fold in the flour, the pureed date mixture and the chocolate.
  • Put the mixture into 4 buttered, 1-cup individual ramekins, filling halfway or slightly under. Put in the oven and bake for 20 to 25 minutes.
  • Prepare the sauce by stirring the sugar and cream in a medium saucepan over low heat. Simmer until the sugar dissolves. Raise the heat and bring to a boil, then reduce the heat and simmer for 5 minutes. Add the butter and stir until incorporated.
  • Remove the ramekins from the oven and let stand for 10 minutes. May be served in the ramekin or unmolded onto a small serving plate. With paring knife cut a cross in the top of the puddings for the sauce.
  • Pour the sauce into the cross in the center of each pudding, then pour more sauce over the puddings and it allow to soak in slightly. Top with fresh figs and vanilla ice cream or heavily whipped cream. Serve warm.

Instant Pot Sticky Toffee Pudding image

Steps:

  • For the cake: Add the dates and 3/4 cup water to a 6-quart Instant Pot®. Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high pressure for 10 minutes (see Cook's Note).
  • After the pressure cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick release cycle is complete. Be careful of any remaining steam and unlock and remove the lid. Transfer to a small bowl and use the tines of a fork to smash the dates and cooking liquid into a paste. Chill until cool, 30 minutes.
  • Meanwhile, thoroughly butter a 7-inch (6 cup) Bundt pan, making sure to get into all the curved or ridged places; dust the pan with almond flour (do this even if your pan has a nonstick coating).
  • Whisk together the oat flour, almond flour, baking powder, baking soda, allspice, cinnamon, ginger, clove and salt in a medium bowl until completely combined.
  • Beat the butter with an electric mixer on high speed, occasionally scraping down the sides and bottom of the bowl, until light and fluffy, about 3 minutes. Add the sugar and continue to beat until light and creamy, about 2 minutes. Add the eggs, one at a time, and beat on low speed until incorporated, then increase to high speed and beat, scraping down the bottom and sides of the bowl once, until light and airy, about 5 minutes. Reduce the speed to low and add the flour mixture. Beat, scraping down the sides and bottom of the bowl, until completely combined. Add the dates and beat on low speed until evenly distributed. Scrape the batter into the prepared pan and smooth the top. Tap the pan firmly a few times on the counter to force the batter into the edges of the pan.
  • Place two 18-inch pieces of twine criss-crossing one another on a clean work surface. Place the cake pan over the twine where they cross. Take the two ends of one piece of twine and tie them into a tight knot over the cake pan. Repeat with the remaining twine so that you have two twine handles crossing one another at the top of the cake pan, to support and lift it.
  • Set a rack inside the pot and add 2 cups water. Using the twine handles, place the cake pan inside the pot. Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high pressure for 35 minutes (see Cook's Note).
  • After the pressure cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick release cycle is complete. Be careful of any remaining steam and unlock and remove the lid.
  • Lift the cake out of the pot and transfer to a wire rack. Let the cake cool in the pan, about 15 minutes. Cut the twine, invert the cake on a serving plate and carefully remove the pan.
  • For the sauce: Clean the pot and place back in the base. Set to saute on high, then add the sugar, cream, butter, vanilla and salt to the pot and cook, stirring frequently, until the sugar has melted and the sauce is thick and syrupy, about 5 minutes. Brush half of the sauce over the warm cake to glaze. Let cool, about 1 hour. Serve the cake with the remaining sauce.

  • Gently heat buttermilk and figs in a saucepan over medium-low heat until softened, 10 to 15 minutes; set aside until cool.

Instant Pot Figgy Pudding image

Steps:

  • Place the dates, dried figs and 2 cups water in a medium saucepan and bring to boil over moderate heat. Remove the pan from the heat and stir in the baking soda. Let cool for about 15 minutes, before adding to a blender and pureeing until smooth.
  • Cream the butter and sugar in a large bowl, until fluffy, about 3 minutes. Add the eggs and beat until well combined. Fold in the flour and the pureed fig mixture. Stir in the chocolate chips. Pour the batter into a greased 6-qt glass heat-proof bowl with butter or baking spray.
  • Insert a metal trivet into the Instant Pot and pour in the remaining 1 ½ cups water. Place the bowl with the batter into the Instant Pot and lock the lid in place, making sure the valve is set to seal. Pressure cook on high for 40 minutes, allowing to natural release for 10 minutes before manually releasing any remaining pressure.
  • Carefully open the lid and transfer the pudding bowl to a wire rack to cool. Remove the metal trivet and discard the water. Wipe the inner bowl dry and set to sauté. Once hot, add the brown sugar, cream and butter. Cook, stirring often, until the sauce has thickened, about 8 minutes. Turn the machine off and stir in the vanilla, bourbon (if using) and salt.
  • Invert the figgy pudding bowl onto a platter and slice. Serve with the warm sauce and a dollop of cream.

Steps:

  • Preheat oven to 325 degrees.
  • Grease a 9-inch tube pan.
  • Beat butter until soft.
  • Add eggs and molasses and beat till fluffy.
  • Add chopped figs (try to use good quality figs), grated lemon rind, and buttermilk.
  • In another bowl combine all the rest of the ingredients (all dry ingredients).

Steps:

  • In a large saucepan set over medium-low heat, combine 1 cup figs, 1/2 cup water, and the brandy; cook 15 minutes. Puree in the bowl of a food processor; set aside.
  • Place remaining 1/2 cup figs and the apricots in a small bowl. Cover with hot water, and let soak until fruit is plump. Drain thoroughly, and set aside.
  • Butter a 5-cup pudding bowl and a circle of parchment paper several inches larger than bowl, and set both aside.
  • In the bowl of an electric mixer, cream together butter and sugar. Beat in eggs and vanilla. Beat in fig puree. Sift together flour, baking powder, and salt, and add to butter-fig mixture alternately with milk.

Remove bowl from pot, and let sit, uncovered, for 15 minutes before turning out the pudding onto a serving plate.
