PAKISTANI CHAPLI KEBAB
Chapli kebab is a form of kebabs widely popular in Pakistan. Mixed together with a South Asian blend of spices, the beef is flattened into circles and shallow-fried. The patty must have a charred exterior for an authentic look and flavor! Serve in a bun with pickled red onions or with a side of pita bread. Add my traditional raita (yogurt dip) to your beautiful platter!

Steps:
- Spray a small skillet with cooking spray; warm over medium-high heat. Pour egg into the skillet; cook and stir until scrambled and set, 3 to 5 minutes.
- Combine scrambled egg, beef, chopped tomato, onion, cilantro, mint, ginger-garlic paste, coriander seeds, salt, cumin, and cayenne pepper in a bowl. Mix by hand until well combined. Shape mixture into patties. Press a tomato slice into the center of each patty.
- Heat oil in a deep skillet to 375 degrees F (190 degrees C). Cook patties in the hot oil in batches until charred, 4 to 6 minutes per side.

i realize that most people associate "kabobs" with a shish kabob.. something grilled and on a stick, but for us its actually more of an arab burger, typically not cooked on a skewer. frying isnt healthy but it sure tastes great!! served with toasted pita, and your choice of fresh veggies

KABOB KOOBIDEH (PERSIAN GROUND MEAT KABOBS)
Kabob koobideh is made with ground lamb or beef or a combination of the two. This is one of the most delicious kabob recipes I have ever found. The kabobs are usually grilled over hot coals or any BBQ.

Steps:
- Shave onions with a grater into a fine mesh strainer. Gently press pulp into the strainer to remove juices. Place pulp into the center of the cheesecloth and gently press until no further juice drips out.
- Place lamb and beef in a pot. Add green onion and onion pulp; mix until thoroughly combined. Mix in baking powder, salt, pepper, sumac, and turmeric. Add eggs and mix thoroughly. Cover the pot and place in the refrigerator until flavors have melded, at least 30 minutes.
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Mold meat mixture onto the skewers.
- Cook on the preheated grill, rotating every minute, until nicely browned on all sides, and meat is no longer pink in the center, about 25 minutes.

ISRAELI KABOBS
These have a very middle-eastern flavor. They taste just like something you could order at most Israeli/Mizrachi restaurants. When I was living in a mircaz klita (an absorption center for new immigrants) in Jerusalem, a Jewish-Iraqi family taught me how to make these for Shabbat. The lady shaped them into little footballs, but I just make small patties. These would be great on a grill as well! Enjoy.

Steps:
- Combine ingedients in a large bowl and mix well.
- Form into oblong patties (or mini-hamburger shapes).
- Place patties onto sprayed broiler pan and place in oven.
- Broil for about 10 minutes on each side.
- Serve with hummus, pita and Israeli salad!
- B'tayavon!

- Mosul Kubba ( (كبة موصلية. Kubba is known across the middle east, especially in Lebanon and Syria. It is ground meat-stuffed dumplings made mainly with minced rice and is usually served as an appetizer.
- Kubba Hamuth ( (كبة حامض. Translated as sour kubba, kubba hamuth is a sour turnip and Swiss chard soup with meat-stuffed dumplings. It is traditionally cooked in the rainy season, the reason for which is unknown to this day.
- Qeimeh (قيمة) Although originally an Iranian dish, Iraqis love qeimeh. It is a stew consisting of diced mutton, tomatoes, split peas, onion, and dried lime.
- Quzi ( (قوزي. A very popular meat dish in Iraqi cuisine, quzi or qoozi is stuffed roasted lamb and is a very heavy dish. The lamb is stuffed with rice, vegetables, nuts, and spices all cooked slowly on a low heat until the meat starts to fall apart.
- Makhlama ( (مخلمة. Another very popular breakfast in Iraq, makhlama is basically a large skillet of fried eggs, tomatoes, onions, and heavily spiced diced lamb, which you eat by scooping it up with pieces of warm Iraqi tannour bread and enjoyed with a warm cup of Iraqi tea, known locally as chai.
