Italian Salad-on-a-Stick image

Steps:

  • Cut each cheese piece into 4 chunks; cut each cucumber half into 8 chunks.
  • Thread cheese and cucumbers onto 16 (6-inch) wooden skewers with all remaining ingredients except dressing. Place on platter.
  • Drizzle with dressing.

1 cucumber, peeled, cut lengthwise in half
16 grape tomatoes
16 jumbo black olives, pitted, drained
32 arugula leaves
1/4 cup KRAFT Balsamic Vinaigrette Dressing

Steps:

  • Build each skewer by threading on a chunk of lettuce, a tomato, a cheese cube, lettuce chunk, cucumber chunk and finally, another lettuce chunk. Arrange the skewers on a platter.
  • Whisk together the oil, vinegar, Italian seasoning and some salt and pepper in a small bowl. Right before serving, brush the dressing onto the skewers.

1/2 head iceberg lettuce, cut into small chunks
12 cherry tomatoes
8 ounces mild Cheddar, cut into cubes
1/2 English cucumber, cut into chunks
1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 teaspoon Italian seasoning
Kosher salt and freshly ground black pepper

  • Place all of the salad ingredients except for the cheese in a large bowl. Right before serving, add about half of the dressing and toss well. Add more dressing little by little as necessary; be sure to dress greens very generously, otherwise salad will be bland. Toss in the cheese, then taste and adjust seasoning with salt and pepper, if necessary.
  • Note: Ricotta salata is an Italian sheep's milk cheese that has a salty, slightly tangy flavor, almost like a dry Italian feta. It is not the same as the wet ricotta in the tub. You can find it at Whole Foods, gourmet grocers or specialty cheese shops.
  • Note: Nutritional information was calculated assuming 1/2 cup of ricotta salata and all of the dressing was used.

  • In a small saucepan, combine the vinegar, water, brown sugar, and salt. Bring to a simmer over medium heat and stir frequently until the sugar has dissolved and the glaze has reduced to the desired consistency (at least by half). This takes 10-15 minutes.
  • Once the glaze has reached almost the desired thickness (it will thicken as it cools), remove from the heat and place in a glass container.
  • To make the skewers, wash and pat dry the tomoatoes and basil. Drain the liquid from the fresh mozzarella. Cut each slice of prosciutto in half lengthwise.
  • Make the skewers by threading one end of the prosciutto onto the skewer, adding a ball of mozzarella and a bit of basil, running the skewer through the prosciutto again, adding a tomato, the prosciutto, a bit of basil, the last bit of the prosciutto, and finishing off with a ball of mozzarella.
