ITALIAN SAUSAGE STROMBOLI (AKA SAUSAGE BREAD)

I wanted to use up some left-overs and had some frozen pizza dough and this is the result. This is really tasty and can be used as a main dish or as an appetizer.

Italian Sausage Stromboli (Aka Sausage Bread) image

Steps:

  • Lay pizza dough on a lightly floured surface so it can rest.
  • Slice Italian sausage into 1/2 inch slices; fry in a 10" skillet over medium heat until browned, about 10 minutes.
  • Add 1/2 cup water, peppers and onions; bring to boil and cover.
  • Reduce heat to low and cook about 5-10 minutes more, or until veggies are tender and sausage is heated through.
  • Drain liquid from skillet and sprinkle sausage mixture with Italian seasoning; set aside.
  • ***If you have leftover sausage, onions and peppers, like I did, you just need to warm it up***.
  • Preheat oven to 375 degrees and spray a baking sheet with cooking spray.
  • Roll pizza dough (on a lightly floured counter) into a rectangle, approximately 11 x 17.
  • Sprinkle with sausage mixture, then the cheeses.
  • Start at the bottom of the long side and roll jellyroll fashion, stopping occasionally to stuff sides it. When you get to the end, pinch seam together, trying to squeeze air out as you go.
  • Place seam side down on baking sheet; bake for about 25 minutes at 375 degrees.
  • Remove from oven and lay a clean dish towel on top of loaf; this will allow the crust to soften up and it will be easier to slice and eat.
  • After about 10 minutes or so, slice into 1 inch slices. Serve with warmed sauce for dipping, if desired.
  • Enjoy!

1 lb frozen pizza dough, defrosted
1/2-3/4 lb Italian sausage
1 green pepper, 1/4 inch wide slices
1 medium onion, 1/4 inch wide slices
italian seasoning
1 -1 1/2 cup mozzarella cheese
2 -3 tablespoons grated parmesan cheese
pizza sauce (optional)

Steps:

  • In a large bowl, dissolve yeast and sugar in water; let stand for 5 minutes. Add the oil, 1/8 teaspoon salt and 2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 5 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Meanwhile, in a large skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. Add the tomato sauce, green pepper, garlic, Italian seasoning, pepper and remaining salt; set aside. Punch dough down. , On a large greased baking sheet, roll dough into an 18x12-in. oval. Spread sausage mixture lengthwise down the center., Combine the sour cream and cream cheese; spread over sausage mixture. Sprinkle with cheeses. Fold one long side of dough over filling. Fold other long side over the top; pinch seam and ends to seal. With a sharp knife, cut slits in top of dough. Cover and let rise until doubled, about 30 minutes., Brush top with egg white; sprinkle with fennel seed. Bake at 400° for 25-30 minutes or until lightly browned. let stand for 10 minutes before slicing.

Savory, salty, spicy and cheesy: these little stromboli bites are perfect for any party. Fill store-bought pizza dough with Italian meats, pepperoncini, olives and cheese and then roll 'em up like tiny burritos.

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment. Reserve 2/3 cup of the marinara for dipping.
  • Lightly flour a work surface. Roll the pizza dough out to a 12-by-15-inch rectangle. Cut the rectangle into fifteen 3-by-4-inch rectangles. Spread 1 teaspoon of the remaining marinara over each little rectangle, leaving a 1-inch unsauced border.
  • Cover the sauce with 3 to 4 slices of pepperoni, and then 3 to 4 pieces of salami, neatly layering them. Top the meat with about 1 teaspoon each black olives and pepperoncini. Sprinkle 1 heaping tablespoon mozzarella on top of each.
  • Roll each rectangle up like a burrito: Fold a long edge of each rectangle snugly over the filling, tuck in the sides and roll up tightly. Pinch the seams to seal. Put the stromboli seam-side down on the prepared baking sheet. Sprinkle the tops with Parmesan. Bake until golden brown,15 to 20 minutes.
  • Meanwhile, microwave the reserved 2/3 cup marinara in a microwave-safe bowl until warm. Serve with the stromboli bites for dipping.

Italian Sausage Stromboli Appetizers image

Steps:

  • In a skillet, brown sausage until no longer pink; drain. On a lightly floured surface, roll bread dough to a 16-in. x 12-in. rectangle. Transfer dough to a greased baking sheet. Combine cream cheese and garlic, spread lengthwise over center third of dough. Top with the sausage, peppers, olives and cheese. Fold dough over filling, pinching seam to seal. Make slits across top of dough every 2 inches. Brush lightly with water and sprinkle with poppy seeds. Bake at 400ºF for 20-25 minutes or until golden brown. Let stand 10 minutes before slicing. Note: I've found that the best way to thaw frozen bread dough loaves, is to wrap them frozen with plastic wrap and refridgerate overnight. The next morning they are perfectly thawed but not risen.

1 (16 oz.) - pkg. johnsonville italian mild ground sausage
1 (1 bl.) - loaf frozen bread dough, thawed, see note at bottom
4 oz. - cream cheese, softened
2 - garlic cloves, minced
1 (7 oz.) - jar roasted red peppers, drained and sliced
1/3 cup - (pitted) sliced kalamata olives or ripe olives
2 cups - (8 oz.) shredded swiss cheese
1 tsp. - poppy seeds
