Steps:
- Preheat the oven to 375 degrees.
- Mix the eggs and milk together and whisk well.
- Sesaon the egg mixture with salt, pepper, and herbs.
- Spray the oil into a deep pie dish.
- Layer the sausage and cheese and red pepper into the pie dish and pour the egg mixture on top.
- Pop into the oven and bake until middle is firm, about 40-45 minutes.
- Serve with hot Italian bread.
CRUSTLESS 'QUICHE'
I suppose crustless quiche is a contradiction in terms, like seared ceviche. But if, like me, you sometimes crave what amounts to savory pie filling without the hassle of making an actual crust, this is the way to go. Once you take the crust out of the quiche you not only radically alter the concept but expand its possibilities. You can produce a "quiche" Lorraine by softening onions (lots) in butter or bacon fat, then adding eggs, cooked bacon and cream or half-and-half, and baking it all as you do in the recipe here.

- Heat oven to 325 degrees and set rack in middle of it. Combine all ingredients except butter and beat until well blended.
- Pour into 4 to 6 buttered ramekins (or a buttered gratin or pie plate) and bake for 20 to 30 minutes, or until almost firm; it should still jiggle just a little in middle. Cool on a rack, then serve warm or at room temperature.

ITALIAN STYLE CRUSTLESS QUICHE
Since my SO is on a modified low carb diet and I'm not, I wanted to come up with something Italian that we both would enjoy. And this seemed to fit the bill, please feel free to add or even omit some of the things you would like instead. For this recipe a smoked Italian sausage was used. Steps:
- Preheat oven to 350°F.
- Place margarine in a quiche dish or a deep dish pie plate, place in oven and let melt for about 3 to 5 minutes.
- While margarine is melting, lightly brown sausage, onion and green pepper for about 10 minutes or until onion and pepper is slightly soft, drain if needed.
- Beat together eggs, milk, Italian seasoning, salt, and pepper until light and slightly foamy.
- Then add in sausage mixture, and 3/4 cup of mozzarella cheese.
- Pour into dish, and top with remaining cheese.
- Bake for 25 to 30 minutes or until center is puffy.
- Test for doneness with a toothpick inserted between the center and edge of pan.
- Let set for 10 minutes.
- This will serve 6 with a salad or 4 without a salad.

ITALIAN QUICHE
I got this one from Cucina (yet again) but I have great reasons to post this recipe. Why dont you give it a try and see for yourselves. This quiche freezes really well so you might want to make another quiche and freeze it for another great meal or just in case you get asked for more.

- Pre-heat oven to 350°F.
- Place eggs, cream, salt, cayenne pepper, nutmeg, dried oregano, basil and cheddar cheese in a bowl. Beat with an electric mixer for 3 minutes at medium speed.
- Heat olive oil in a frying pan. Saute the onions, garlic, zucchini and spinach.
- Arrange the bocconcini cheese slices, tomato slices and sauteed vegetables in the bottom of the pie shell.
- Pour egg mixture over the vegetables.
- Bake for 30 minutes or until set.
- Remove from oven. Garnish with snipped basil leaves and toasted pine nuts.
- Serve hot with green salad.

CRUSTLESS QUICHE SQUARE
I wanted an egg & cheese appetizer to add to a brunch that I was preparing. I needed to prepare it a day ahead and didn't have time to make pie crust. My friends asked for the recipe and my family enjoyed them too!

Steps:
- Preheat oven to 350 degrees.
- Place 1 tbsp butter in a 9 inch square or 10 x 6 inch pan.
- Melt in the oven about 3 minutes.
- Beat together eggs, milk, basil, salt, onion, and pepper.
- Add your filling from above.
- Stir in 3/4 cup grated cheese.
- Pour into baking dish.
- Sprinkle with remaining cheese.
- Bake 35- 40 minutes until centre puffs up and is firm.
- A knife inserted near the centre comes out clean.
- Let stand 5- 10 minutes before serving.
- Don't under cook as it will be runny and don't over cook as it will be dry.
- Makes about 24 squares.
- You can prepare a day or 2 ahead and reheat in oven for a few minutes until warm.
CRUSTLESS MINI QUICHE LORRAINE
My favorite comfort food on a low-carb diet is this quick and easy crustless quiche. I make them with and without spinach, and sometimes double the amount of bacon, as the mood strikes me. This is a crustless, low-carb version of quiche Lorraine that I developed when my family switched over to a LCHF diet. Not intended for low-fat diets!

- Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a 12-cup standard muffin tin with nonstick spray.
- Spray a skillet with nonstick spray. Saute spinach over medium-low heat just until wilted, about 3 minutes. Remove from heat.
- Divide bacon among the muffin cups. Squeeze moisture out of the spinach and place on top of bacon. Sprinkle with chives, then top with equal portions of Swiss cheese.
- Blend eggs, cream, seasoning blend, onion powder, garlic powder, and pepper in a mixing bowl. Pour mixture slowly into each cup, stopping just before it reaches the top.
- Bake in the preheated oven until a knife inserted in the center comes out clean, about 25 minutes. Remove from the oven and let rest for 5 minutes before serving; it's normal for puffy quiche to settle and flatten.

- Preheat the oven to 325 degrees F (165 degrees C). Spray an 8x8-inch baking dish with cooking spray.
- Allow mixed vegetables to cool once cooked.

- Reserve 2 Tbsp. each onions and tomatoes for later use. Cook bacon in large skillet until crisp. Remove bacon from skillet, reserving 1 Tbsp. drippings in skillet. Drain bacon on paper towels. EASY CRUSTLESS QUICHE
Yet another crustless quiche that is designed for a low-carb, high-fat (LCHF) diet. It is very rich and cheesy. The Parmesan and butter on the bottom form a nice skin on the bottom that really helps. The egg and cream mixture is quite flexible and the ratio of egg to cream and the heaviness of the cream is a personal choice. The cheese can easily be replaced with any hard cheese that holds up well when shredded such as Swiss, Cheddar, Gouda, or Provolone. The meats can be replaced with anything that isn't too wet; whether it is meat or vegetable.

- Cook and stir bacon and sausage in a large skillet and over medium-high heat until evenly browned and bacon is crisp, about 10 minutes; drain on a paper towel-lined plate.
