Steps:
- Mix meat, Worcestershire sauce, salt, garlic powder, and pepper.
- Shape the mixture into 12 thin patties, each about 4 inches in diameter.
- Mix the cream cheese, ancho chili powder, cumin, dried onion, and minced jalapeno.
- Top 6 patties with the cheese mixture, spreading it to within 1/2-inch of the edge (if the mixture is difficult to spread, try heating in the microwave for about 15 seconds).
- Cover each patty with one of the remaining 6 patties, sealing the edges well.
- Broil or grill the patties (4 inches from the heat), turning only once if possible, until preferred doneness and cheese is melted, about 10 to 15 minutes.
- Low-carb serving: top with a bit of grated cheddar, guacamole, and enjoy!
- High-carb serving: eat with a bun and other condiments.

JALAPENO TURKEY BURGER

- For the jalapeno jam: In a small saucepot, combine the jalapenos, sugar and marmalade and bring to a simmer over low heat. Simmer until the liquid reduces to a glaze, about 1 hour.
- For the turkey burgers: In a bowl, combine the ground turkey, salt and pepper and mix well. Form the mixture into 6 patties.
- Heat a cast-iron skillet over high heat until it begins to smoke. Add 1 tablespoon of the grapeseed oil to the pan and reduce the heat to medium. Add 3 of the patties to the pan and cook until the first sides are seared, 3 to 5 minutes. Flip and cook until the burgers are cooked completely through, about 5 minutes. Repeat with the remaining tablespoon grapeseed oil and the other 3 burgers.
- Butter each of the buns on both sides and toast them in the hot skillet until golden brown.
- Dress each of the bottom halves of the buns with lettuce, tomato, red onion and avocado. Place a burger on top of each dressed bun and top with 2 tablespoons of the jalapeno jam. Finish with a bun top.
JALAPENO CHEDDAR BURGERS
I used to saute onions and fresh jalapenos to top our grilled cheeseburgers. Not any more! I mix the chopped fresh jalapenos, onions and shredded cheddar right into the hamburger patties. Oh, my. To complete the flavor attack you could add slices of crispy bacon to the pile....your choice!

JALAPENO SALMON BURGERS
OK I admit it... I love canned salmon. The redder the better, canned sockeye salmon is tops for me. This recipe cried out for a 14-15 ounce can of salmon & that's how I'll continue to make it. I appreciate a salmon patty sans bread for this time of year as well. I skipped the pita & served with some slowly simmered spicy black beans & a fast canned tomato salsa. High protein, great taste & low carb, low fat. Just what the doctor ordered. Included the original recipe (with it's 90 minute freeze of the salmon) for those who want to make as it was originally conceived. - Heat oven to 400 degrees. Cut the semi-frozen salmon into 1/3-inch dice. Place salmon, green onions, bell pepper, jalapeno, sour cream, red pepper sauce, 1/2 teaspoons of the salt and black pepper to taste in medium bowl; fold together with a spatula. Add the egg white; fold in gently but thoroughly. (The mixture will be loose.).
- Heat the oil in a large oven-proof non-stick skillet over medium-high heat; form the fish into 4 burgers. Slide the burgers into the skillet, reshaping, if necessary with a spatula. Cook to set bottoms, 1 minute. Place skillet in oven; bake until tops are opaque and milky, about 5 minutes. Remove skillet from oven; let burgers rest in skillet 5 minutes.
- Meanwhile, split the pitas; brush the insides with olive oil. Grill or toast pitas until hot. Mash the avocado in a small bowl; stir in lime juice and remaining 1/8 teaspoons of the salt. Put each burger on a pita half; divide avocado to top the burgers. Top with remaining pita halves.

- Allow the frozen dough to rise overnight in the fridge (if using fresh let it rise to double it's size).
- Knead in your mixer for 5 minutes (by hand 10 minutes).
- Add all the ingredients to the dough and knead for a further 10 minutes.
- Cut into 14 equal pieces (more if you want smaller buns).
- The dough is a bit moist from all the ingredients in it so you may want to use a little flour on your hands to form the buns- do not use too much flour or the buns will not rise as easily Place buns on a baking sheet that has been sprayed with veggie oil.
- For best results bake the buns on a baking stone, covered with a piece of parchment and lightly sprayed with veggie oil Cover and place in a warm spot until the buns have doubled in size (I place them in the oven with the oven light on this gives a lovely warm, even heated, no breeze place where they can rise undisturbed).
- This step may take 1-2 hours dependinbg on your dough.
- Bake in 350F oven for apprx 20-25 minutes.
- Place on a rack to cool.
- They freeze well.

Steps:
- Add warm water to the bowl of your mixer and sprinkle the yeast over top. Let sit 10 minutes, until frothy.
- Add the, oil, 1 egg, and sugar to the bowl.
- Add the flour, salt, cheese and jalapeno peppers and mix on medium-low speed with the hook until the dough holds together, about 2 minutes. The dough should clean the sides of the bowl. If not, add additional flour by the tablespoon.
- Increase speed to medium and knead the dough for 5 minutes.
- Transfer the dough to a large bowl that has been lightly greased with oil.
- Cover it with a towel and let rise in a warm place until doubled in bulk, about 1 1/2 hours.
- Line a baking sheet with parchment.
- Turn out the dough onto a lightly floured surface.
- Divide the dough in half and each half into 4-6 pieces (depending on the size of your burgers, typically about 8-9 buns per batch).
- Roll into rounds and flatten with the palm of your hand onto the baking sheet; placing buns about 1/2-1 inch apart.
- Cover with a damp towel and let them rise for 20 minutes + oven preheating time.
- Preheat oven to 350.
- Whisk the remaining egg with 1 tablespoon water.
- Brush the buns with the egg wash and bake for 20 to 30 minutes, until golden brown. Let cool minutes before slicing and serving.
- Store leftovers in a zip-top bag at room temperature. Freezes well.

- Remove the seeds from the jalapeno and mince.
- Combine the turkey, egg yolk, jalapeno, garlic, Worcestershire sauce, and tomato paste.
- Form the mixture into four patties.
- Grill the burgers until done, about 8 minutes on each side.
- Serve with shredded Monterrey Jack cheese melted over top on a whole wheat bun, and enjoy!

This is my family's favorite burger. I got the idea from my local HEB meat department. Rather than pay through the nose, I decided to make my own.

- Dice cheese into small cubes (best done with cheese cold).
- Dice the jalapenos. (seeds and all if you want the heat).
- Coarsely chop the parsley.
- Mix cheese, jalapenos, parsley, Cajon seasoning with mayo.
- Mix mixture into to ground beef. Do not over work, but try to make sure the cheese is distributed evenly. Pat beef into 1/2 pound patties ( I use a patty press). Refrigerate.
- Melt butter and sauté garlic. Spread garlic butter on both top and bottom of buns.
- Place burgers on hot grill. Rotate 90 degrees after 3-4 minutes. Turn over after 3-4 more and repeat. This will give you a great diamond grill marks. Remove from heat and let rest for 10 min while toasting the buns.
- Place the buttered buns on grill and lightly toast. Watch them closely or they will burn.
- Place burger on bun and add condiments. I like mine with just spicy mustard and pickles.

- Grill for about 10-15 minutes over direct heat. Ken did the grilling so I am not sure what temp he grilled the burgers on. I forgot to ask him but I think he usually does it on high and cooks them until they are medium well. So the time I mentioned above may vary.
