STUFFED JALAPENO PEPPER MONKEY BREAD
A new, savory take on monkey bread, this version brims with spiced biscuits, crispy, cream cheese-stuffed jalapenos and what else but more creamy cheese. It's the perfect pull-apart recipe for the big game day.

- Preheat the oven to 375 degrees F. Brush a 10-inch nonstick bundt pan with butter to lightly coat, then put the remaining butter in a medium bowl.
- Cut the biscuits into quarters. Combine the paprika and garlic salt in a large bowl.
- Working in batches, toss the biscuit pieces in the butter, then transfer them with a slotted spoon to the bowl with the spices; do not stir. When all of the biscuit pieces have been added to the spice mixture, stir gently until evenly coated.
- Build a ring of alternating biscuit pieces and jalapeno poppers in the bottom of the prepared bundt pan. Top the first layer with half of the remaining biscuit pieces and jalapeno poppers, pressing down gently so they stick together. Sprinkle the Monterey Jack in a ring over the top, making sure that none of it hits the sides or middle of the pan. Scatter the remaining dough pieces and jalapeno poppers over the top. Brush with any remaining butter.
- Cover the pan tightly with foil and bake for 35 minutes. Remove the foil and continue to bake until the top is a deep golden brown and the dough is cooked through, about 30 minutes. Let cool in the pan for 10 minutes, then use an offset spatula to gently loosen any cheese that might have baked onto the sides of the pan. Flip out the monkey bread onto a serving platter. Serve with the ranch dressing for dipping.

- In a small bowl, mix together softened cream cheese, 3/4 cup each of the cheddar and jack cheeses, jalapeno, salt & pepper. Spread mixture over rolls, dividing it evenly. Sprinkle remaining shredded cheese on top of bread.
- Place bread on baking sheet and bake until bread is lightly toasted and cheese is starting to brown (about 10 minutes). Remove from oven, sprinkle with crumbled bacon and cilantro. Serve immediately.

POPPIN' JALAPENO BREAD
Bergy gave me the idea to use jalapeno bread to make hamburger rolls... while my hamburger idea didn't quite fly, the buns were out of this world! I used 2 fresh and 1 canned Trappey's jalapenos, and sprinkled sesame seeds on top. I thought it had a wonderfully spicy flavour, and my fiancee informed me that many folks would think these were 'hot'. Give it a shot! I baked the buns on a baking stone for about 20 minutes. They made 6 large rolls.

Steps:
- Dissolve yeast in warm water in a large bowl; let stand 5 minutes until foamy.
- Combine dissolved yeast, egg and butter; mix until butter melts.
- Combine 3 cups flour, sugar, salt and garlic salt.
- Gradually add flour mixture to yeast mixture, beating at medium speed of electric mixer until smooth.
- Beat in peppers, cheese, onion and enough of the remaining flour to form a soft dough.
- Turn dough out onto a well-floured surface and knead 1 minute.
- Shape dough into a loaf; place in a greased 9 x 5 x 3-inch loaf pan.
- Cover and let rise in a warm place, free from drafts, 30 minutes or until doubled in bulk.
- Preheat oven to 400.
- Bake 40 to 45 minutes or until done and loaf sounds hollow when tapped.

JALAPENO POPPERS

- Take one whole chilli and using a small sharp knife make an incision along the length without cutting all the way through. Open up the cavity and using the end of a teaspoon scrape out and discard the seeds and the membrane. It's very good idea to wear gloves when you're preparing chillies in this way, and make sure you wash your hands thoroughly afterwards. Repeat with all the other chillies.
- Mix the cream cheese with the mozzarella, season with salt and pepper then use it to fill the chillies. Push them gently to close them up and wipe off any excess.
- Put the flour, egg and breadcrumbs in separate shallow bowls or dishes and roll the stuffed chillies first in the flour then egg then breadcrumbs then repeat so they get a good double coating.
- Heat the oil in a large saucepan until it reaches 160C. Carefully lower the chillies into the oil using a slotted spoon and deep fry in batches for around 2-3 mins or until deep golden brown. Transfer to a plate lined with kitchen paper to soak up the excess oil.
- Once the chillies are fried season them with pepper and salt and spread out on a plate or board so everyone can help themselves. Great with beer and a movie.

- Preheat oven to 350 degrees.
- Using a sharp bread knife, cut the bread into about 1 inch slices from side to side going into both directions, repeating until entire loaf is cut. Do not cut through the bottom crust. It should look something like an onion mum.
- Mix together cream cheese, jalapeno pepper juice and garlic powder. Spread cream cheese mixture inbetween cuts. Sprinkle diced jalapeno peppers and bacon bits on bread, making sure to lodge most inbetween cuts. Top bread with cheese, again, stuffing in between cuts.
- Wrap in foil the entire loaf and place on a baking sheet. Bake for 15 minutes; unwraping foil packet enough to expose the bread. Bake for an additional 10 minutes or until cheese is melted.
BREADED JALAPENO POPPERS

- Remember to wear some disposable gloves when working with jalapeno peppers-- and don't touch your face!
- If you don't have any plastic gloves, I have slipped my hands into baggies to protect them from the oils that can really burn and sting for hours.
- In a medium bowl, mix the cream cheese, and pepper jack cheese.
- In a pot of barely simmering water, blanch the pepper halves for 2 minutes, drain and dry thoroughly.
- Spoon mixture into the jalapeno pepper halves.
- Put the milk and flour into two separate small bowls.
- Dip the stuffed jalapenos first into the milk then into the flour, making sure they are well coated with each.
- Allow the coated jalapenos to dry for about 10 minutes.
- Dip the jalapenos in milk again and roll them through the breadcrumbs.
- Allow them to dry, then repeat to ensure the entire surface of the jalapeno is coated.
- In a medium skillet, heat the oil to 365 degrees F (180 degrees C).
- Deep fry the coated jalapenos 2 to 3 minutes each, until golden brown.
- Remove and let drain on a paper towel.
