  • Combine turkey, onion, salt and pepper; mix lightly but thoroughly. Shape into four 1/2-in.-thick patties., Place burgers on an oiled grill rack or in a greased 15x10x1-in. pan. Grill, covered, over medium heat or broil 4 in. from heat until a thermometer reads 165°, 4-6 minutes per side., Top each burger with 1 slice cheese, jalapeno slices and a second slice of cheese. Jalapeño Cheeseburgers with Bacon and Grilled Onions image

Steps:

  • For spicy ranch sauce:
  • Whisk all ingredients in medium bowl to blend. Season sauce with salt and pepper.
  • For burgers:
  • Gently mix all ingredients in large bowl. Form mixture into eight 1/2- to 3/4-inch-thick patties. Place on small baking sheet. Cover and chill at least 2 hours and up to 1 day.
  • For glaze:
  • Stir first 5 ingredients in small saucepan over medium heat until coffee is dissolved. Remove from heat. Whisk in butter. Season glaze to taste with salt and pepper.
  • Prepare barbecue (medium-high heat). Working in batches if necessary, cook bacon in large skillet over medium-high heat until crisp and brown. Transfer bacon to paper towels to drain.
  • Spray grill rack with nonstick spray. Toast buns until golden, about 2 minutes per side. Transfer buns, cut side up, to plates. Place lettuce on each bun bottom. Grill burgers 5 minutes, basting with glaze. Turn burgers, baste with glaze, and grill until cooked to desired doneness, about 5 minutes longer for medium. Press cheese atop each burger and allow cheese to melt. Place some sauce, then 1 burger on each bun bottom. Top each with 2 slices bacon and desired additional toppings. Cover with bun top.   • For the jalapeno jam: In a small saucepot, combine the jalapenos, sugar and marmalade and bring to a simmer over low heat. Simmer until the liquid reduces to a glaze, about 1 hour.
  • For the turkey burgers: In a bowl, combine the ground turkey, salt and pepper and mix well. Form the mixture into 6 patties.
  • Heat a cast-iron skillet over high heat until it begins to smoke. Add 1 tablespoon of the grapeseed oil to the pan and reduce the heat to medium. Add 3 of the patties to the pan and cook until the first sides are seared, 3 to 5 minutes. Flip and cook until the burgers are cooked completely through, about 5 minutes. Repeat with the remaining tablespoon grapeseed oil and the other 3 burgers.
  • Butter each of the buns on both sides and toast them in the hot skillet until golden brown.
  • Dress each of the bottom halves of the buns with lettuce, tomato, red onion and avocado. Place a burger on top of each dressed bun and top with 2 tablespoons of the jalapeno jam. Finish with a bun top.

Steps:

  • For the grill: Preheat the grill to 400 degrees F or a cast-iron pan over medium-high heat.
  • Crumble the beef into a large bowl. Add the salt, seasoning blend and some pepper. Mix the beef mixture gently with your hands so as to not overmix. Just fold the ground beef, don't mush or squeeze the ingredients into the beef. Form 4 patties.
  • Place the patties and the jalapenos over the direct heat of the grill or into the cast-iron pan. Cook the patties on one side until the meat is seared and releases easily from the grill grates or pan, 3 to 4 minutes. Flip the patties and rotate the jalapenos to get them charred on both sides. Cook until desired doneness on the beef, 3 to 4 more minutes for medium-rare to medium.
  • For the toppings: Top the burgers with the cheese and transfer to a plate or sheet pan. Cover with aluminum foil for about 5 minutes. Meanwhile, remove the charred jalapenos and chop. Spread over the cheese on the burgers.
  • Squeeze mustard on both the top and bottom buns if desired. Build the burgers by topping the bottom buns with the cheeseburgers, jalapenos, a pile of red onions, a pile of lettuce and the top buns. Serve.

  • Shape the ground beef into a thin circle the same diameter as the bun. Cover the patty with wax paper and freeze it.
  • When you're ready to prepare the burger, preheat a large skillet over medium heat.
