COLD SOBA NOODLES WITH DIPPING SAUCE

In Japan, where it gets plenty hot in the summer, cold soba noodles, served with a dipping sauce, are a common snack or light meal. Soba are brown noodles, made from wheat and buckwheat, and the sauce is based on dashi, the omnipresent Japanese stock. You would recognize the smell of dashi in an instant, even if you have never knowingly eaten it. It's a brilliant concoction based on kelp, a seaweed and dried bonito flakes. It is also among the fastest and easiest stocks you can make, and its two main ingredients - which you can buy in any store specializing in Asian foods - keep indefinitely in your pantry. I would encourage you to try making it, though you can also use chicken stock (or instant dashi, which is sold in the same stores).

Cold Soba Noodles With Dipping Sauce image

Steps:

  • Bring a large pot of water to a boil, and salt it. Cook noodles until tender but not mushy. Drain, and quickly rinse under cold running water until cold. Drain well.
  • Combine dashi or stock, soy sauce and mirin. Taste, and add a little more soy if the flavor is not strong enough. Serve noodles with garnishes, with sauce on side for dipping (or spooning over).

Steps:

  • Boil water, soy sauce and mirin. Allow to cool and place in the refrigerator.
  • Cook soba according to package instruction.
  • Wash soba in cool running water.
  • Place soba in bowl and garnish with ginger, leeks and nori.
  • Pour cold broth over the noodles.
  • Add wasabi according to taste.

These cold soba noodles are my son's favorite snack! You can adjust the amount of heat by increasing or omitting the chili oil. A great side dish or add tofu, chicken, or shrimp for a complete meal.

Spicy Cold Soba Noodles image

Steps:

  • Bring soy sauce to a boil in a small saucepan over medium-high heat. Reduce heat to medium-low and simmer until reduced by half, 10 to 15 minutes. Remove soy sauce from the heat and stir in molasses.
  • Whisk sesame oil, tahini, balsamic vinegar, and chili oil together in a medium mixing bowl. Slowly whisk in soy sauce mixture. Stir in 1/2 of the scallions.
  • Bring a large pot of lightly salted water to a boil. Add soba noodles and cook, stirring occasionally, until tender yet firm to the bite, about 3 minutes. Immediately drain and rinse thoroughly in cold water.
  • Combine noodles and sauce. Sprinkle remaining scallions and sesame seeds over top and refrigerate until cold, at least 30 minutes.

Spicy Cold Soba Noodles image

Steps:

  • Heat soy sauce until reduced by half.
  • Turn to low and add molasses.
  • Warm briefly and transfer to bowl.
  • Add remaining ingredients except noodles.
  • Add salt to taste.
  • Boil noodles about 3 minutes.
  • Drain and plunge in ice water.
  • Drain and rinse.
  • Combine with sauce and chill.

  • In a medium saucepan, add ¼ cup sake and bring it to a boil over medium-high heat. Let the alcohol evaporates for a few seconds.
  • Boil a lot of water in a large pot. Unlike pasta, you do not add salt to the water. Add dried soba noodles in the boiling water in a circulate motion, separating the noodles from each other. Cook soba noodles according to the package instructions (each brand is slightly different). Stir the noodles once in a while so they don’t stick to each other. Check the tenderness and do not overcook. Before you drain, reserve 1 to 1 ½ cup of soba cooking water "Sobayu" (Read what you can use this in the blog post).
  • You will need 90 ml (6 Tbsp) of dipping sauce per cup/person, which means 360 ml (1 ½ cup) for 4 servings. Since the sauce to water ratio is roughly 1:3, combine 1 part (90 ml) of dipping sauce and 3 parts (270 ml) of iced water in a measuring cup and check the taste. If it's salty, add more water. If it's diluted, add more sauce.
