Steps:

  • Separate eggs.
  • Beat whites to a soft peak.
  • Cream butter with sugar in a large bowl.
  • Add egg yolks and beat.
  • Stir in the flour until it disappears completely.
  • Then fold in beaten egg whites.
  • Grease bottom of 13x9x2" pan.
  • (Yes, I mean the bottom. It'll be a lot easier than using the pan like normal.) Measure out 2/3 cup of batter.
  • Spread on pan, not quite to the edges.
  • Bake at 350F oven about 10 minutes until golden brown.
  • Slide off carefully and let cool.
  • Repeat until you have made five thin layers of cake.
  • In a small bowl, grind almonds until fine.
  • Mix in sour cream.
  • Then take 1 layer and spread 1/4 cup apricot preserves over it.
  • Spread 1/3 cup of sour cream mixture on top of preserves.
  • Cover with another layer of cake.
  • Spread 1/4 cup raspberry preserves over top layer.
  • Cover the preserves with more sour cream.
  • Alternate layers between raspberry and apricot preserves.
  • When all layers are put together, cover with wax paper.
  • Lay flat weights on top of it- a few good sized books should do the trick.
  • Leave in refridgerator with weight overnight.
  • In the morning, trim off rough edges.
  • Use Jewel Cake Icing to cover.
  • We usually create little flowers on each of the cakes, using a dragee to make the centre.
  • Cut into 64 square cakes and enjoy!

4 eggs
1 cup butter
1 cup sugar

1/2 cup red raspberry preserves
1/2 cup apricot preserves
1 (5 ounce) can slivered almonds
1 cup sour cream
3/4 cup powdered sugar

Steps:

  • Make the colored gelatin: Lightly coat three 9-inch square cake pans with cooking spray. Combine the purple gelatin and 2 cups boiling water in a medium bowl; stir until dissolved. Pour into one of the prepared pans. Refrigerate until firm, about 2 hours. Repeat to make pans of red and pink gelatin. (You can make these in batches if you don¿t have three pans.)
  • When all three colors are set, make the white gelatin: Sprinkle the unflavored gelatin over the cold water in a large bowl; let stand 1 minute. Add the boiling water and condensed milk and stir until dissolved. Let cool to room temperature, at least 20 minutes.
  • Meanwhile, make the crust: Coat an 8-inch round cake pan with cooking spray, then line with plastic wrap, leaving an overhang; coat with more cooking spray. Pulse the chocolate cookies in a food processor until finely ground. Add the melted butter and pulse until combined. Press the mixture into the bottom of the prepared pan and freeze until firm, about 10 minutes. Generously coat two more 8-inch round cake pans with cooking spray; set aside.
  • Loosen the edges of the purple gelatin with a knife and turn out onto a cutting board. Cut into 1/2- to 3/4-inch cubes and layer over the chocolate cookie crust. Cut the red and pink gelatin into cubes and layer each one in the remaining two pans. Divide the cooled white gelatin mixture among the three pans, pouring it over the cubes (about 2 cups per pan). Refrigerate until firm, about 4 hours.
  • Make the whipped cream: Beat the heavy cream and confectioners' sugar in a large bowl with a mixer until soft peaks form; set aside. Using the plastic wrap to help you, lift the purple gelatin cake out of the pan. Discard the plastic wrap and transfer the cake to a platter. Spread with a thin layer of whipped cream. Loosen the edges of the red gelatin cake with a knife and turn out of the pan; place on top of the purple cake and spread with more whipped cream. Remove the pink gelatin cake from the pan and place on top of the red cake. Cover the top and side of the cake with the remaining whipped cream.

2 3-ounce boxes purple gelatin (such as grape)
6 cups boiling water
2 3-ounce boxes red gelatin (such as strawberry)
2 3-ounce boxes pink gelatin (such as watermelon)
6 1/4-ounce packets unflavored gelatin

2 14-ounce cans sweetened condensed milk
Cooking spray
30 chocolate wafer cookies (from a 9-ounce package)

Jewelled fruit, nut & seed cake image

Steps:

  • Make the Hot toddy cake (see link, right) in a loose-bottom tin, holding back about 2 tbsp of the mix for later. While it bakes, bake the fruit and nut topping. Melt the butter and golden syrup together, then toss with the nuts, dried fruit and seeds. Set aside; the butter mix will start to cool and thicken.
  • Take the cake out of the oven 30 mins before the end of cooking, then gently spread over the remaining cake mix with the back of a spoon. The cake will still be quite soft but will take the weight, don't worry about it sinking. Scatter the fruit and nut mix over the top in an even layer. Bake for the remaining 30 mins until the cake is cooked and the nuts golden. Test for doneness by poking a skewer through the topping and into the cake. If it's underdone, but the nuts are golden, just cover with foil and give it another 10 mins; then test again.
  • Leave the cake to cool completely in the tin, so that the nutty topping firms up. Loosen any obviously sticky edges, then push the cake out of the tin from the bottom. Transfer to a cake board or plate and fix the ribbon around the base before serving. Can be kept in an airtight tin for up to a week.

Steps:

  • Prepare jewels: In shallow pans, prepare orange, cherry, lime Jell-O. In each pan add 1 cup boiling water, 1 flavor of Jell-O, and 1/2 cup of cold water. Stir and dissolve Jell-O in each pan. Chill overnight.
  • Prepare cake: Over medium heat, mix pineapple juice, sugar, lemon Jell-O until Jell-O dissolves. Then add 1/2 cup cold water. Chill for about 1-2 hours until mixture is syrupy.
  • Meanwhile, line a large springform pan with the lady fingers--bottom and sides. Place the lady fingers "standing up" around the side of the pan for best presentation. Then cut the "jewel" Jell-O trays into smallish cubes and set aside. Add heavy cream to the lemon Jell-O mixture. Fold in the "jewels." Then pour into the springform pan. Chill overnight. PARTY JEWEL CAKE

This is an old recipe that my mother found back in the 1950's. It is perfect for Christmas or New Year's. You can use any type of cake mix you like including yellow, white, French vanilla, or a mild chocolate such as Swiss chocolate or German chocolate. We usually use yellow or white cake mix. If you let it chill overnight in the refrigerator, the flavors will blend and it is absolutely heavenly! Note that prep and cooking times do not include cooling times for cake and filling.

Steps:

  • Bake cake according to package directions. I usually use yellow or white cake mix, but you can use others too. (See personal notes.) Cool cake completely.
  • Combine egg, sugar, evaporated milk, salt, and butter in a 2-quart saucepan. Cook and stir over medium heat, stirring constantly, until mixture thickens, about 10 minutes. Do not boil. Mixture should be thick enough when it just begins to boil. Remove from heat.
  • Stir in vanilla, coconut, pecans, and cherries. Mix well. Cool completely at room temperature, or chill to cool if you are short on time.
  • When cake and filling are both cool, spread filling between layers and on top of cake (not around sides). If desired, decorate top of cake with additional pecan halves and whole maraschino cherries (drained well). Refrigerate until thoroughly chilled before serving.

2 - 9" layers of cake, baked and cooled (plus ingredients to make cake according to box directions)
1 - egg, beaten
1 cup(s) white granulated sugar
1 cup(s) evaporated milk
1/4 teaspoon(s) salt
1/2 cup(s) butter or margarine, melted
1 teaspoon(s) vanilla extract
1 1/2 cup(s) shredded coconut
1 cup(s) chopped pecans
1 cup(s) maraschino cherries, well drained and cut in halves
