SWEET HOT PEPPER GLAZED GRILLED PORK CHOPS

Brush grilled pork chops with a pepper-jelly glaze for a sweet and savory entree.

Sweet Hot Pepper Glazed Grilled Pork Chops image

Steps:

  • Preheat a grill to medium-high heat; lightly oil the grill grates.
  • Combine the jelly, vinegar and thyme in a small saucepot. Warm over low heat, stirring, until the jelly is melted; set half aside for serving.
  • Season the pork chops on both sides with the coriander and 1/2 teaspoon each salt and pepper. Grill the pork chops until charred with strong grill marks, about 6 minutes. Flip and continue to grill until just slightly pink near the bone, 4 to 5 minutes, brushing generously with the remaining sauce several times.
  • Transfer the pork chops to a cutting board to rest for about 5 minutes. Serve with the reserved glaze and potatoes and/or corn on the cob.

One 10-ounce jar red jalapeno pepper jelly (about 1 1/4 cups)
1/4 cup cider vinegar
1 1/2 teaspoons fresh thyme leaves, finely chopped
4 bone-in pork chops (about 3 pounds total)
1 teaspoon ground coriander
Kosher salt and freshly ground black pepper
Boiled potatoes and/or corn on the cob, for serving

Steps:

  • Preheat a grill to medium, or heat a grill pan over medium heat.
  • Brush pork chops with hot sauce and sprinkle with garlic, salt, and pepper. Grill over a medium flame for about 5 minutes on each side. Brush with some more hot sauce and grill about 3 additional minutes per side. Serve immediately with your favorite sides.

6 (1/2-inch thick) pork chops (about 2 pounds)
1 bottle hot sauce (recommended: 1 (12-ounce) bottle of Joe Perry's Rock Your World Hot Sauce Boneyard Brew)
2 cloves garlic, minced
Salt and pepper

Steps:

  • Apply Neely's Seasoning to each pork chop. Place pork chops in a large freezer safe plastic bag. Pour 2 cups of Neely's BBQ sauce into bag. Marinate in refrigerator for 8 hours.
  • Place pork chops on grill and cook until internal temperature is 160 degrees F. Reapply BBQ sauce to pork chops prior to serving.
  • Mix all ingredients together in a small bowl.
  • Combine all of the sauce ingredients in a large saucepan or Dutch oven.
  • Over high heat, bring ingredients to a boil, stirring frequently to prevent sticking.
  • Once sauce comes to a boil, reduce temperature to low and simmer, uncovered, for at least 2 hours.
