Lemon Blossom Cookie Balls Recipes
LEMON BLOSSOM COOKIES
We make these every Christmas! We should make them more often, so lemony and good! Remember to allow time to chill dough 2 hrs. before baking.

Steps:
- 1. Preheat oven to 350*
- 2. In large mixer bowl, beat butter and sugar until fluffy. Add ReaLemon juice; beat well. Gradually add flour, mix well. CHILL 2 hrs.
- 3. Shape into 1" balls. Place 1" apart on greased baking sheets. Press thumb in center of each ball, fill with jam.
- 4. Bake 14 to 16 minutes or until lightly browned. Makes 6 dozen! Tip: Put bowl of cookie dough back in fridge between baking batches, if dough gets to room temperature, the cookies spread too much.

- 3. Shape into 1 - in balls; roll in nuts if desired. Place 1 inch apart on greased baking sheet. Press thumb in center of each ball; fill with preserves.
- 4. Bake 14 to 16 minutes or until lightly browned.

- In a food processor or by hand, finely crush cookies. Add cream cheese and mix until evenly combined (filling should have a fudgy texture and appearance). Shape into 36 (1-inch) balls. Freeze 10 minutes.
- Meanwhile, set chocolate in a bowl over a pot of simmering water (double-boiler method) or melt in the microwave at 50% power in 30-second increments.
- Using a spoon, carefully roll chilled balls in melted chocolate. Place in single layer in baking sheet lined with parchment or a silicone mat and decorate if desired. Refrigerate at least 30 minutes or until firm.

- In large mixing bowl combine butter and sugar. Mix well with electric mixer until creamy and combined. Add in lemon juice and mix again.
- In separate bowl stir together with a spoon flour, baking powder, baking soda, and salt. Add this to the butter mixer and beat with an electric mixer until well incorporated and a dough forms. Cover or wrap dough and refrigerate for an hour.
- Roll out dough to 1/4 inch thickness on floured surface. Cut with small circle cutter (I used 1-1/2 inch). Place on ungreased baking sheets and bake at 400 for about 8 minutes. Remove to cool.
- Combine glaze ingredients and stir with a spoon until lumps disappear. Spoon a little bit into center of each cookie and spread around with the back of a spoon. Make more glaze if needed. Allow to dry for an hour or so and then stack cookies and store in cookie jar.
