Simple yet tasty way to serve asparagus. It is low cal too! I like to make the sauce in a large skillet and when ready to serve add the steamed asparagus to the skillet and roll them in the sauce - just for a minute you want the asparagus to still have some crunch

Steps:

  • Keep your asparagus warm.
  • Saute the shallot and garlic in the oil, low heat, until the the garlic turns golden about 10 minutes.
  • Whisk the lemon juice& wine together and add to the sauted shallot & garlic, add pepper.
  • Pour over steamed asparagus& serve.

1 lb asparagus, Steamed until heated through but still crisp
1 shallot, peeled and crushed
2 garlic cloves, peeled and crushed
2 teaspoons olive oil
2 tablespoons dry white wine
1 tablespoon fresh lemon juice

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Coat asparagus with vegetable and arrange on a baking sheet. Season with salt and black pepper to taste.
  • Roast in preheated oven until lightly browned at the tips, about 15 minutes.
  • Meanwhile, combine lemon juice, butter, 1 teaspoon salt, and 1 teaspoon black pepper in a microwave-safe bowl. Heat in on high in microwave until butter is completely melted, about 1 minute; stir to combine. Pour butter mixture over roasted asparagus and toss to coat.

Lemon-Roasted Asparagus image

Steps:

  • Preheat oven to 375°F.
  • Prepare asparagus. First rinse thoroughly and cut off fibrous ends. To do this, pull one spear out of the bunch. Gently bend the spear until it snaps. Then cut the remaining spears at the same length as the first.
  • Arrange asparagus in a baking pan with all spears in one layer.
  • Drizzle with olive oil and lemon juice, season with salt and pepper and toss within baking pan to combine. Rearrange into one layer.
  • Roast for 12-15 minutes or until crisp-tender.

1 lb asparagus
1 tablespoon olive oil

Garlic Shrimp With Asparagus and Lemon image

Steps:

  • Place shrimp on paper towels and dry very well.
  • Sprinkle shrimp with a bit of the pepper.
  • Using a vegetable peeler, peel off strips of the lemon peel and then cut the strips into very thin long pieces; be sure to peel only the yellow part of the peel, not the bitter white part.
  • Cut lemon in half and juice it into a small dish, removing seeds.
  • Heat a deep 12 inch skillet (preferably NOT non-stick) over medium high heat for 1 minute.
  • Add 2 Tbsp of the oil and heat until it's shimmering hot -- just a few seconds.
  • Add the shrimp in a single layer and do not disturb it; let cook for about 2 minutes until browned.
  • Turn shrimp over and brown the other side, about 1 1/2 minutes, then transfer to a plate. Shrimp should not be cooked through.
  • Reduce heat to medium-low and add garlic, stirring for 30 seconds.
  • Add asparagus, lemon zest strips, red pepper flakes and cook, stirring for 2-3 minutes.
  • Add chicken broth and cover, simmering for 1-2 minutes until asparagus is almost done.
  • Stir cornstarch with 1 Tbsp water and stir into the pan.
  • Add shrimp back to the pan and cook another 1-2 minutes until done.
  • Stir in 1 Tbsp lemon juice, then taste and add more juice and pepper if needed.

Steps:

  • Break off woody ends of asparagus.
  • In a small bowl, combine olive oil, garlic, lemon zest and paprika and mix together well with a fork.
  • Lay the asparagus side by side and pierce with skewers to form a raft.
  • If you use bamboo skewers, don't forget to soak them for 30 minutes before using, so they don't catch fire.
