  • Dredge the pork chops in this mixture.
  • Brown the pork chops on both sides in the cooking oil.

  • For the sauce: In a large bowl or pitcher, mix all of the sauce ingredients together. Set aside.
  • Preheat the oven to 350 degrees F.
  • For the pork chops: Heat a large heavy skillet over medium heat and add enough cooking oil to coat the bottom. Dredge the pork chops in the seasoned flour and brown for approximately 2 minutes per side in the skillet. Transfer the chops to a baking pan. Fan the chops so that each chop is exposed as much as possible.
  • Pour the sauce over the chops and cover the baking pan with heavy aluminum foil.
  • Bake until the chops are tender 1 to 1 1/2 hours. Transfer the chops to a serving platter and serve.

Steps:

  • WHISK together the mustard and mayonnaise in a small bowl. In a shallow bowl mix together the bread crumbs, lemon zest, sage, salt, and pepper.
  • POUND the pork chops between two sheets of wax paper until just tenderized, but not too thin. Working with each chop individually, dip the chop in the mustard mixture so that it is well coated. Then place it in the Panko mixture and turn it once or twice to make sure it is completely coated. Set side. Repeat with remaining three pork chops so they all are evenly breaded.
  • MELT 1 tablespoon of butter with 1 tablespoon of olive oil over medium heat in a large skillet. Swirl so that it all coats the bottom of the pan. Then, place the pork chops in the pan and cook for about 10 minutes per side. Drizzle in a touch more olive oil if the bottom of the pan gets dry. Check doneness by cutting into one of the chops.   • Tear off a generous square of tin foil for each chop, enough to wrap and seal completely. Coat both sides of each chop with lemon pepper.

Pork Chops With Lemon image

Steps:

  • Heat butter or oil in pan and add chops and cook gently until meat is well browned on both sides and cooked to your liking, remove and keep warm.
  • Combine grated ginger, dry sherry, soy sauce, lemon juice, sugar, cornflour and water.
  • Drain excess butter or oil from pan and add the combined sauce ingredients and stir until sauce boils and thickens and then add the spring onions, stir to combine and then add the chops covering with the sauce and heat through and then serve.

30 g butter (10z or 1 tablespoon oil)
2 1/2 cm ginger (1inch grated)
1 teaspoon dry sherry
1 tablespoon soy sauce
2 tablespoons lemon juice
2 1/2 teaspoons sugar
1 1/2 teaspoons cornflour
1/4 cup water
4 spring onions (sliced diagonally)

I found this recipe in one of the London Sunday papers. It's extremely quick and easy. Serve with a couple steamed vegetables drizzled with toasted sesame oil and lemon juice and you're done.

Steps:

  • Trim 4 pork chops of all visible fat.
  • Put in a pyrex baking dish and add lemon juice, oregano, thyme and black pepper.
  • Marinate for 10 minutes.
  • Coat a non-stick frying pan with olive oil.
  • On a medium-high heat, cook chops 4-5 minutes each side depending on thickness and desired doneness.
