LADD'S CHICKEN BACON SLIDERS
Ladd loved Ree's sliders so much that she decided to name the recipe after him.

Steps:
- For the marinade: Combine the honey, Dijon mustard, lemon juice, paprika, salt, pepper and crushed red pepper flakes in a large bowl.
- Add the chicken cutlets and toss to coat. You can the cook the cutlets straight away or cover and marinate in the fridge for a couple of hours or overnight.
- For the rolls: Preheat the oven to 350 degrees F. Heat a grill or grill pan over medium-high heat.
- Place the rolls on a sheet pan. Brush the tops of the rolls with the melted butter and sprinkle over the seasoning. Bake to warm through and toast slightly, 5 to 6 minutes, then set aside.
- For the filling: Meanwhile, grill the chicken pieces for 3 to 4 minutes on the first side. Flip and top each with a halved piece of bacon and a halved piece of Cheddar. Continue to cook until the cheese is melted and the chicken is cooked through, 3 to 4 more minutes. Remove.
- Separate the rolls and slice in half horizontally. Place the bottoms on a platter and top each one with a tablespoon of ranch dressing, a lettuce leaf and a chicken piece. Add a slice of tomato, some fried onions and pickled jalapeños to each. Add the tops of the rolls and place a decorative toothpick through each slider. Serve.

- Preheat oven to 300 degrees.
- In a large mixing bowl combine the ground pork, bread crumbs, egg, 2 tablespoons of the seasoning mix, shallots, Parmesan cheese, salt and pepper, mixing well with clean hands just until well blended. Shape into small (approximately 1-inch diameter) balls/sliders.
- Mix remaining tablespoon seasoning mix with the Greek yogurt and lemon juice (reserve zest for later use), blending well; reserve, keeping chilled.
- Heat the oil in a large nonstick skillet over medium-high heat. Cook the sliders in batches, being careful not to crowd them, for about 5 minutes, or until browned on all sides, shaking the pan frequently to turn. Drain on paper towels and place in the oven while cooking the remaining batches.
- Place basil leaves into lettuce leaves; serve the sliders "nestled" into the basil/lettuce leaves topped with a small dollop of the Greek yogurt mixture; sprinkle with reserved lemon zest. Makes 4 main dish servings.

WINE AND LEMON RANCH PORK CHOPS
Ranch-seasoned pork chops are browned in the same pan used to simmer the simple pan sauce of wine, lemon juice, and broth.

Steps:
- Sprinkle pork chops with ranch dressing mix.
- Heat butter and olive oil in a skillet over medium-high heat. Add pork chops and cook until browned, 3 to 5 minutes per side. Reduce heat to medium and cook, flipping occasionally, until chops are barely pink in the centers, 8 to 10 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
- Transfer chops to a warm platter; spoon on all but 1 tablespoon of fat from the pan. Pour broth, wine, and lemon juice into the pan and bring to a boil while scraping the browned bits off the bottom with a wooden spoon. Simmer until sauce is reduced to desired thickness. Spoon over the chops to serve.

- First in a blender add the greek yogurt, lemon zest and grain mustard now pulse slightly until the mixture is creamy and smooth. Remove and chill before use. Next in a large mixing bowl add the ground pork, hidden valley ranch mix, black pepper, parmesan cheese, eggs, bread crumbs, shallots, Worcestershire, honey and using your hands mix the mixture until all ingredients are evenly incorporated. Next make 12 small Pattie portions and place on to a baking sheet and place into a 350 degree oven for 12 minutes. Next place the small patties on the Kaiser rolls and top each one off with the dressing, serve immediately.

- Combine dry ingredients and herbs. Cut in butter. Beat egg and mix with dressing, then pour over dry ingredients, mixing with a fork. Turn dough onto floured board and knead briefly. Pat out to about 1/2 to 3/4 inch thick. Cut out with 2 inch circle cutter. Make 12 biscuits. Place on an ungreased baking sheet and bake at 350 degrees F. for 12 minutes or until golden brown.
- While biscuits are cooking, combine pork, beef and pepper in a bowl. Mix well but do not overwork. Shape into patties about 2 1/2 inches round. Heat a grill pan and grill the burgers for 4 to 5 minutes on each side.
- Split the biscuits and add patties with a bit of mustard to each one, add some of the remaining shredded Parmesan cheese and top with half of a lettuce leaf. Makes 12 sliders.

- Heat an outdoor grill or griddle pan to medium high. Place a skillet over medium-high heat. Add a drizzle of Olive oil and the bacon to the pan and cook until crisp, about 5 minutes. Drain on paper towels to cool, then dice.
- While the bacon cooks, place the chicken in a large bowl. Grate the shallots on top of the chicken . Add the hot sauce, poultry seasoning, salt and lots of pepper. Stir in the cooked bacon, mix and form 8 slider patties, about 2- 1/2 to 3 inches wide. Drizzle with Olive Oil to coat lightly.
- Cook on the grill or griddle, turning once, until cooked through, 8 to 10 minutes.
- While the sliders cook, heat the broiler.
- Place the avocado in a food processor. Add the yogurt, lemon juice, Ranch Seasoning Mix and process into a smooth, thick sauce.
- Butter the buns and place on a baking sheet and toast under the broiler. Serve the Ranch Slider with the lettuce, tomatoes and avocado-ranch sauce between the toasted buns.

- 1. Preheat oven to 400 degrees F. and coat bottom of 9" x 13" inch baking dish with non-stick cooking spray.
- 2. Place chicken breasts between two sheets of plastic wrap and pound to 1/2-inch thickness; Set aside.
- 3. In shallow bowl, combine flour, salt and freshly ground black pepper.
