THE BEST LENTIL SOUP
Brown lentils are the star of this dish. To boost flavor, we used a classic mirepoix-onion, celery and carrot - as well as thyme, bay and oregano for an herby finish. We found the fresh lemon juice and parsley at the end brightened up the soup and added a nice pop of color.

Steps:
- Heat the oil in a large heavy-bottom pot over medium-high heat. Add the carrot, onion, celery and 1 teaspoon salt and cook, stirring occasionally, until the vegetables are starting to caramelize and take on a dark brown color, 8 to 10 minutes (this step is important as it will add tons of flavor to your soup!).
- Stir in the tomato paste and garlic and cook, scraping up the brown bits, until the garlic is fragrant and slightly softened, 1 to 2 minutes. Add in the lentils, stock, 4 cups water, thyme, bay leaf, oregano, red pepper flakes, lemon zest, 2 teaspoons salt and a generous amount of black pepper and stir to combine. Bring to a boil then reduce the heat to low. Cover and cook until the lentils are softened with just a bit of bite, 25 to 30 minutes.
- Remove the bay leaf. Puree 2 1/2 cups of the soup in a blender until smooth then stir back into the pot. Stir in the lemon juice and parsley. Ladle into bowls and garnish with more parsley.
LENTIL SOUP WITH BEEF

- Heat the oil in heavy large pot over medium-high heat. Sprinkle the beef with salt and pepper. Add half of the beef and cook until brown, about 8 minutes. Using a slotted spoon, transfer the beef to a bowl. Repeat with the remaining beef. Add the celery, carrots, onion, garlic, rosemary, and oregano to the pot. Saute until the onions are translucent, about 8 minutes. Return the beef and any accumulated juices from the bowl to the pot. Add the broth and tomatoes with their juice. Bring the soup to a boil. Reduce the heat to medium-low. Cover and simmer until the meat is just tender, stirring occasionally, about 1 hour. Add the lentils. Cover and continue simmering until the lentils are tender, about 40 minutes. Stir in the parsley. Season the soup, to taste, with salt and pepper. Ladle the soup into bowls and serve.
SPICY LENTIL SOUP

- Combine the lentils and 7 cups warm water in a pot, cover and bring to a boil. Add the chile pepper, tomato, ginger, garlic, turmeric and 2 teaspoons salt. Partially cover and simmer over medium-low heat, stirring frequently, until thickened, 18 to 20 minutes. Stir in the cilantro. Thin the soup with water, if desired, and season with salt.
- Mix the yogurt with 2 teaspoons water and a pinch of salt in a small bowl. Ladle the soup into bowls and top with the yogurt and more cilantro. Serve with naan.
LENTIL SOUP FOR STUDENTS
This was a staple during my student years as it is incredibly cheap and ridiculously easy to make. Then we would dine off lentil soup for several days, just occasionally adding water when it had somehow thickened into a gloop (or used the gloop as a sandwich spread!).

- Dump the lentils in your largest pan and add a LOT of water (at least 750 ml to start with).
- Crumble in the stock cubes, and add the onion, preferably grated (if not, then very very finely chopped). If you like garlic, add as much crushed garlic as you feel like.
- Cover and start cooking over a high heat.
- Now for the technique (blender-free): when the water starts boiling, the lentils will start fluffing up and turning yellow. You have two tasks: to stir briskly and frequently (to prevent sticking AND to break up the lentils), and to add about a cup of water every time the lentils seem to have absorbed most of the liquid (if it's boiling water from the kettle, you do save time). An MP3 player is a useful accessory here while you stand by the pot.
- After about 30 minutes, the lentils should have gone from yellow to beige, and have lost their lentil-like form - they should have pretty much broken up and dissolved. This is NOT a recipe for smooth, liquid soup involving hours of painstaking rubbing through a sieve - at this point, you CAN use a blender or even electric hand whisk for a smoother soup - but I much prefer this more rustic version where you can actually feel the texture of the lentils.
- Stirring all the time, add enough water for the soup to reach the consistency you prefer - it's supposed to be thick, so it's better not to go over the top!
- Now you can add salt to taste. My downstair neighbours liked to add a hefty dose of red chilli flakes, but I always feel that the simpler you keep this, the better.
- Just before serving, or after you've ladled the soup into bowls, you can add a drizzle of olive oil.
- Serve with plenty of bread and a plate of lemon wedges - lemon is absolutely perfect squeezed over this soup.
- You now have a large potful of extremely cheap, nourishing and tasty soup to heat up for days to come!

- Heat the oil in a heavy large pot over medium heat. Add the onion, carrots, and celery. Add the garlic, salt, and pepper and saute until all the vegetables are tender, about 5 to 8 minutes. Add the tomatoes with their juices. Simmer until the juices evaporate a little and the tomatoes break down, stirring occasionally, about 8 minutes. Add the lentils and mix to coat. Add the broth and stir. Add the thyme sprigs. Bring to a boil over high heat. Cover and simmer over low heat until the lentils are almost tender, about 30 minutes.
- Stir in the pasta. Simmer until the pasta is tender but still firm to the bite, about 8 minutes. Season with salt and pepper, to taste.
- Ladle the soup into bowls. Sprinkle with the Parmesan, drizzle with olive oil, and serve.

LENTIL NOODLE SOUP
Couldn't find a lentil soup recipe that didn't have something in it that I didn't like or it had a lot of spicy things had meat in it which I was trying to not use in a lentil soup. I played around in the kitchen with these ingredients and really liked what I come up with. It's got a lot of things other recipes have in them but yet it's different than all I searched on this site or other sites I searched. So I hope you enjoy it as well. I believe corn bread would be really good with this.

- In a large stock pot add the oil, onions, carrots, celery, and garlic. Cook over medium heat stirring occasionally around 15 minutes or until the onions start to get translucent.
- Then add in the dried basil, Italian Seasoning, Salt, Pepper and tomatoes. Stir well and cook another 2 minutes.
- Then add in the water, chicken bouillon cubes, Lentils and vinegar. Cook until lentils are almost tender.
- Then add in the pasta stir and cook until pasta is tender.
- Simmer until ready to eat.
- Serve in bowls and sprinkle with Parmesan cheese if desired.

- Heat the stock in a large pan and add the lentils. Bring to the boil and allow the lentils to soften for a few minutes.
- Add the carrots and leeks and season (don't add salt if you use ham stock as it will make it too salty). Bring to the boil, then reduce the heat, cover and simmer for 45-60 mins until the lentils have broken down. Scatter over the parsley and serve with buttered bread, if you like.

- Make the bouquet garni by placing the herbs in a cheesecloth or a metal tea ball. Place in large stock pot.
- Add all ingredients in stock pot--water, vegetables, lentils.
- Simmer the soup for one hour, covered, or until the lentils are tender. Discard the bouquet garni.
- Remove the ham hocks. Cut the meat from them. Reserve. Discard bones.
- Optional: in the container of a food processor or large blender, whirl half of the soup until it is smooth, 2 cups at a time. Return to pot with other half of soup. Add meat. Taste and adjust salt and pepper, if necessary. Serve.

- Fill a large pot with two liters of water and bring it to the boil. Add some salt if you wish (though you don't really need to).
- Peel the carrots and cut them into a small dice (no need to be too specific about size).
- Boil half of the carrots in the water. Whilst they are boiling, dice the potatos and onion.
- When the carrots are soft, mash them lightly.
- Add the vegetable stock and add the remaining carrots, potatos, and onion. Add the lentils now, too.
- Bring to the boil again and cook slowly until the vegetables are soft, and the lentils have thickened the soup.
- Enjoy with a hunk of chunky bread.
