LENTIL-VEGETABLE-KIELBASA SLOW COOKER STEW

I adapted this from the "Fix-it and Forget-It Lightly" cookbook. The original recipe is great, but my carnivore husband suggested adding the kielbasa, which I did in the last hour of slow cooking. I also threw in extra veggies, both fresh and canned. This is one of those recipes you don't have to worry about measuring the veggies...in fact, add whatever you fancy!

Lentil-Vegetable-Kielbasa Slow Cooker Stew image

Steps:

  • Combine water, tomatoes with juice, tomato paste, red wine, basil, thyme, bay leaf, crush red peeper in slow cooker.
  • Stir to blend.
  • Add lentils, onion, carrots, celery, potatoes, garlic, greens and kielbasa.
  • Cover.
  • Cook on low 10-12 hours or on high 4-5 hours.
  • Remove bay leaf, and serve with chopped basil, parsley, hot sauce or sour cream garnish (or any combination of these).
  • NOTE: I prefer to add the canned greens and kielbasa in the last hour of cooking, but if you don't have time for that, just throw everything together in the slow cooker and forget about it until dinnertime!

1 (28 ounce) can diced tomatoes (try the kind with green peppers or onions or garlic already added)
6 ounces tomato paste
1 cup dry red wine
3/4 teaspoon dried basil
3/4 teaspoon dried thyme
1 bay leaf
1/2 teaspoon crushed red pepper flakes
1 lb dried lentils, rinsed and drained with any stones removed
1 large onion, chopped
4 carrots, cut into 1/2 inch rounds
4 stalks celery, cut into 1/2 inch slices
3 cloves garlic, minced
3 large red potatoes, cubed
1 (24 ounce) can turnip greens or 1 (24 ounce) can kale
1 lb light pre-cooked kielbasa, sliced (optional)
salt and black pepper

  • Brown kielbasa in oil and butter in a large skillet. Add the potatoes, carrots, celery and onion. Cook and stir for 3 minutes over medium heat. Transfer to a 4- or 5-qt. slow cooker. Steps:

  • Warm water and vegetable bouillon in a slow cooker on High until dissolved. Add lentils, carrots, and potatoes.
  • Heat a medium saucepan over medium heat. Add cumin and coriander and cook and stir until fragrant, about 20 seconds. Add oil, followed by onion. Cook, stirring occasionally, 2 to 3 minutes. Slow Cooker Lentil Soup With Sausage and Apples image

Steps:

  • Melt the butter in a large (12-inch) skillet over medium-high heat. Add the onion, season with salt, and cook, stirring, until the onion is translucent, about 5 minutes. Add half the diced apples and cook, stirring until softened, adjusting the heat as necessary to avoid scorching, about 5 minutes. Add the celery, garlic, sage and thyme, and stir to combine. Pour in the cider and let it come to a bubble. Scrape the mixture into a 6- to 8-quart slow cooker.
  • Add the sausage, lentils, nutmeg, 1 teaspoon salt and a generous amount of black pepper to the slow cooker; pour in 3 cups water. Cover and cook on low until the lentils are tender and the flavors are mellowed and blended, about 8 hours. The soup holds well on the warm setting.
