SINFUL PEACH ENCHILADAS

A lady brought these to work one day, and I knew I had to try them out. The butter seems like a lot, but I tried it with less-no good. That's why I only make them once a year for my husband, who is a fan of this recipe.

Steps:

  • 1. Spray a 9x13 inch baking dish with nonstick spray. Set aside. Preheat the oven to 350 degrees.
  • 2. In a saucepan, boil butter, sugar and water; reduce heat to low and simmer.
  • 3. Fill each tortilla with pie filling generously, roll and place seam-side down in pan. Pour butter/sugar mixture over top and let sit unrefrigerated for at least 45 minutes to an hour-this is important, and if you don't do this they will not turn out.
  • 4. Sprinkle top with cinnamon sugar generously. Bake, uncovered, 1 hour. Serve warm.

1 1/2 c sugar
1 1/2 c water
12 medium flour tortillas
2 can(s) peach pie filling (or make your own)
1/4 c cinnamon sugar (or 1/4 cup sugar with 3 t. cinnamon)

  • Cook your quinoa while you do all the prep for this. It will make this all come together fairly quickly.
  • I brought the water to a boil, added the rinsed quinoa, let it boil for about 2 to 3 minutes, then reduced it to a simmer. Cover and simmer for 15 minutes.
  • In a large pan or wok over medium heat add your olive oil. Let it start to glisten, takes a minute or two, then add your chicken and onions at the same time. Cook until browned and cooked through. If you've cut your pieces small enough this should only take 5 to 8 minutes tops. Keep tossing the chicken around to make it brown evenly. Once it's almost done add about 2 to 3 tablespoons of the Katsu or Hoisin sauce. Stir until evenly coated and golden brown.
