Steps:

  • Line a 9-by-13-inch baking dish with foil, leaving a 2-inch overhang; coat with cooking spray. Melt 4 tablespoons butter in a large pot over low heat. Stir in 10 ounces mini marshmallows until melted and smooth. Stir in 1 tablespoon each grated lemon zest and lemon juice and 1/2 teaspoon vanilla. Off the heat, stir in 6 cups crisp rice cereal, 12 crushed Lemonades and 1/2 cup white chocolate chips. Press the mixture into the pan and let set. Cut into pieces.

  • In small mixing bowl combine pudding mix and milk.
  • beat on low to blend add cream cheese, flavoring and rum Increase speed; beat til smooth and thickened.
  • Put into individual serving dishes, garnish with toasted coconut.
  • Refrigerate.

1 (1 1/2 ounce) box sugar-free instant vanilla pudding mix
3 cups skim milk
1 teaspoon coconut flavoring
1 tablespoon dark rum (optional)

Steps:

  • Grease 9x13 pan.
  • Preheat oven to 350°F.
  • Spread one can of crescent dough on bottom of pan.
  • Mix softened cream cheese, 1 cup of sugar and vanilla until smooth, and spread on top of crescent dough.
  • Spread 2nd can of dough on top of cheese mixture. Be careful not to leave too many gaps in dough.
  • Pour melted butter all over crescent dough.
  • Mix 1/2 cup sugar with 1 teaspoons of cinnamon. Sprinkle on top of butter. Use all of it--it looks like a lot, but it's just right.
  • Bake for 30 minutes.
  • Allow to cool before cutting.
  • Serve with coffee, milk or ice cream!

Steps:

  • Force cottage cheese through a sieve, or pulse until creamy in a food processor or blender; set aside
  • In a medium saucepan, combine egg yolks, milk, sugar and salt. Cook over medium heat, stirring constantly, until mixture is thickened; remove from heat. In a small bowl, dissolve gelatin in water. Stir into the custard mixture. Stir in creamed cottage cheese and lemon juice.
  • In a large glass or metal mixing bowl, beat egg whites until stiff peaks form. Fold whites into cheese mixture. Pour filling into graham cracker crust. Chill for several hours in the refrigerator before serving.
