THE BEST MOIST LOTUS COOKIE BUTTER BANANA BREAD RECIPE EVER
Hey its Carla Bruno from CarlasCakes! Here is another great recipe I had to share with you. I am obsessed with banana bread and so it my husband, and I am also obsessed with Lotus Cookie Butter! If you don't know what that is yet, I strongly suggest you become familiar because I am telling you, it is the best thing ever! There are lots of different types of cookie butters. However, I love Lotus because it has a caramel taste to it.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan with cooking spray.
- Combine sugar and butter in a large bowl; beat with an electric mixer until creamy. Beat in bananas and eggs.
- Mix 1 1/2 cup plus 3 tablespoons cake flour, baking soda, and salt together in a bowl. Mix into the banana mixture. Stir in vanilla extract. Pour half of the batter into the prepared pan.
- Heat cookie spread in the microwave until softened, about 20 seconds. Spread over the batter in the pan. Cover with remaining banana batter; swirl decoratively with a knife.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 to 60 minutes. Cool in the pan for 5 minutes. Invert onto a wire rack. Cool for 10 to 15 minutes before serving.

- Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter and flour a 9- by 5- by 3-inch loaf pan. Set aside.
- In a medium bowl, whisk together the flour, baking soda, salt, baking powder, cinnamon and nutmeg. In a large bowl, beat the sugar, oil, eggs and vanilla until blended. Stir in the bananas and blueberries. Add the dry ingredients and stir just until blended.
- Pour the batter into the prepared loaf pan. Bake until a cake tester inserted in the center of the loaf comes out clean, about 1 hour. Cool for 15 minutes. Remove the loaf from the pan and cool completely on a wire rack, about 2 hours.

My mom used to have the perfect recipe for banana bread. It was the best! Unfortunately her recipe is nowhere to be found. So, with a little trial and error, I think I have found the right combination of ingredients to make the best banana bread. We love this and I think you and your family will too!

- Cream together the butter and sugar. Add eggs one at a time and beat well. Add the mashed bananas and mix well. Add the vanilla and mix well. Mix the salt, baking soda and baking powder to the flour. Gradually add the flour mixture to the creamed mixture. Stir in desired amount of walnuts - OPTIONAL. Divide mixture evenly between two loaf pans. Bake at 350 degrees for about 1 hour or until inserted toothpick comes out clean from the center.

- Preheat oven to 350 degrees Fahrenheit. Grease a standard-size loaf pan (mine is 4.5" x 8.5"). Set aside.
- To a large mixing bowl, add the bananas. Using a potato masher, smash until as smooth as possible. Stir in the sugar and canola oil. Add the eggs and whisk together until smooth. Whisk in the vanilla.
- Set a fine-mesh sieve over the bowl. Add the flour, baking soda, cinnamon, and salt to the sieve. Sift over the wet ingredients. Using a spatula, fold the dry ingredients into the wet, just until combined.
- Pour into the prepared loaf pan.
- Bake until middle is set and a toothpick inserted into the middle comes out clean, 45 - 55 minutes (if you're using a larger pan than my 4.5" x 8.5" pan, start checking at around the 45 minute mark. For the smaller pan, it'll take a bit more time to cook in the middle - closer to 55 minutes).
- Remove from oven and let the loaf cool in the pan for about 10 minutes. Use a butter knife to loosen the sides of the loaf then gently invert the pan to remove the loaf. Let cool on a wire rack.
- Wrap in plastic wrap to store. Bonus: The plastic wrap also makes it nice and moist. Yum!

- Preheat the oven to 350 degrees F (175 degrees C). Line 23 muffin cups with paper liners.
- Mash bananas in a large bowl. Add pumpkin puree, sugar, buttermilk, safflower oil, eggs, pumpkin pie spice, and vanilla extract; mix by hand until well incorporated.

LORILOU'S QUICK N EASY BANANA BREAD
A super easy, tried and true banana bread. No mixer required! Been making this for as long as I can remember. And now that I have bananas literally growing outside my front door, it's the most frequently made recipe in my house! It's equally good as a loaf or as banana muffins. The original recipe is by Anita Strauss, La Jolla, but I have changed it up to my taste. You can add 1/2 cup of chopped walnuts or pecans if you like nuts in your banana bread - I don't! This is a very versatile and forgiving recipe. Try adding crushed pineapple, coconut, raisins, craisins, chocolate chips, etc... You won't be sorry!
