FIREHOUSE CHILI

As one of the cooks at the firehouse, I used to prepare meals for 10 men. This firehouse chili recipe was among their favorites. -Richard Clements, San Dimas, California

Steps:

  • In a Dutch oven, heat canola oil over medium heat. Brown beef in batches, crumbling meat, until no longer pink; drain and set aside. Add onions and green pepper; cook until tender. Return meat to Dutch oven. Stir in remaining ingredients. Bring to a boil. Reduce heat; simmer, covered, until flavors are blended, about 1-1/2 hours.

2 tablespoons canola oil
4 pounds lean ground beef (90% lean)
2 medium onions, chopped
1 medium green pepper, chopped
4 cans (16 ounces each) kidney beans, rinsed and drained
3 cans (28 ounces each) stewed tomatoes, cut up
1 can (14-1/2 ounces) beef broth
3 tablespoons chili powder
2 tablespoons ground coriander
2 tablespoons ground cumin
4 garlic cloves, minced
1 teaspoon dried oregano

LORI'S CALICO CHILI

This is a hearty, spicy chili,perfect for winter nights. Cornmeal Cheddar biscuits are a great combination.

Steps:

  • 1. Brown meat with onions, pepper, and celery. Drain. I put it in a dutch oven at this point.
  • 2. Add all other ingredients. Allow to simmer until the flavors marry. About 30 minutes-1 hour.

2 lb lean ground chuck
1 lb breakfast sausage
2 medium onions, chopped
1 medium bell pepper, chopped
2 stalk(s) celery, chopped
1- 15 oz can(s) kidney beans
1 large can(s) pinto beans
1 can(s) whole kernel corn, drained
1 can(s) tomatoes with green chilies
1 can(s) chili ready diced tomatoes
1 can(s) tomato paste
3-4 Tbsp steak sauce (i used an a-1 type)
seasoned salt (to taste)
ground red pepper (to taste)
2 pkg chili seasoning
2 Tbsp chili powder
1 tsp cumin
hot sauce to your liking!

LORI'S FLEXIBLE CHILI

I got this mild chili recipe from my mom, and its changed even since then! I seem to make it a little different every time. The only rule was to always use at least 3 cans of beans, with the one staple being chili beans for flavor. You can also add in anything else you want: corn, garbanzo beans, etc. Here is how I (usually) make mine! Please note that the seasonings are an estimate.

Steps:

  • In a 2 qt sauce pan, combine meat and onions.
  • Brown meat.
  • Add in green pepper, half of chili powder and half of black pepper. Cook for additional 2 minutes on high.
  • Add in all beans and tomatoes. Stir together.
  • Add in Worcestershire sauce, chipotle chili powder, rest of chili powder, and rest of black pepper.
  • Bring to a boil, cover and reduce heat to low.
  • Cook for 20 minutes.
  • Serve with any garnishments you choose. (Mine are corn chips, shredded cheese and sour cream!).

1 onion, chopped
1 green pepper, chopped

Steps:

  • In large kettle, brown cubed round steak in oil with 1/2 the onions, 1 clove minced garlic, 1/2 teaspoon cumin, and 1 teaspoon chili powder. Add 2 cups water. Bring to boil, reduce heat, and cook down until liquid is almost gone. Set aside. In saucepan, brown ground beef with remaining onion and garlic, plus green pepper and celery. Combine both meat mixtures in kettle. Add oregano, canned tomatoes, tomato sauce, jalapeño peppers, red pepper, bay leaf, and remaining cumin and chili powder. Bring to a boil and reduce heat. Add salt and pepper and simmer at least 1 1/2 hours. Stir occasionally and add water, as needed. If beans are to be used, add them during the last 20 minutes or so. Remove bay leaf before serving. Serve with grated cheese, onions, and peppers.
