BROILED SALMON WITH CITRUS YOGURT SAUCE

Broiled Salmon with Citrus Yogurt Sauce image

Steps:

  • Preheat broiler. Line rack of broiler pan with foil and lightly oil foil with some olive oil.
  • Pat fish dry and check for bones by running your hand over fish from thinnest to thickest end. Remove any bones with pliers. Sprinkle fish with salt and pepper, then broil 4 inches from heat 7 minutes. Cover fish loosely with foil and continue broiling until just cooked through, 7 to 9 minutes more.
  • While salmon broils, whisk together all sauce ingredients in a bowl until combined.
  • Serve salmon with sauce.

For salmon
1 (3-lb) piece salmon fillet with skin (1 inch thick at thickest part; preferably center cut)
3/8 teaspoon salt
1/4 teaspoon black pepper
For sauce
1 cup low-fat plain Greek yogurt or plain whole-milk yogurt (see cooks' note, below)
2 tablespoons extra-virgin olive oil
2 tablespoons water
1 teaspoon finely grated fresh lime zest
1 tablespoon fresh lime juice
1/2 teaspoon finely grated fresh orange zest
1 teaspoon fresh orange juice
3/4 teaspoon salt
1/4 to 1/2 teaspoon mild honey (to taste)
Accompaniment: lime wedges

Steps:

  • Thaw fish, if frozen. Sprinkle both sides of fish with lemon-pepper seasoning.
  • Spray the unheated rack of a broiler pan with nonstick coating. Place fish on rack of broiler pan.
  • Broil 4" from the heat for 4 minutes; turn fish. Broil 3 to 5 minutes more or until fish flakes when tested with a fork.
  • Meanwhile, spray an unheated medium saucepan with nonstick coating. Add onions; cook and stir over medium heat until tender.
  • In a bowl combine orange peel, orange juice, cornstarch, and salt.
  • Add to onions in saucepan. Cook and stir until mixture is thickened and bubbly.
  • Cook and stir for 2 minutes more. Add orange sections, grapes, and if desired, sherry.
  • Heat through. Spoon sauce over fish.

Steps:

  • With a spoon mix together soy sauce, juices, mustard and spice powder in a shallow dish or pan.
  • Add salmon and turn to coat all sides; cover and refrigerate for 1 hour.
  • Bring salmon back to room temperature and preheat broiler.
  • Remove salmon from the marinade and pat dry with paper towels.
  • Brush sides and tops of fillets with sesame oil and place on broiler pan; broiler 4 inches from heat until fish is cooked through, about 5 minutes (you might want to spray your broiler pan w/cooking spray).
  • While fish is broiling heat a small skillet over medium-high heat until hot; Add sesame seeds and, stirring constantly, toast just until golden -be careful, seeds can go from golden to burnt in a flash.

  • Preheat broiler.
  • Line baking sheets with fillets.
  • Broil 6-inches from heat, about 3 -5 minutes total for thin fillets, about 10 minutes total for fish about 1-inch thick.

Broiled Orange Roughy - Low Fat and so Healthy! image

Steps:

  • Place fillets in a shallow baking dish. Combine white wine, ginger, onion, garlic, lemon juice, soy sauce and crushed red pepper and process in a blender until smooth. Pour over fillets, cover and marinate in refrigerator about 1 hours.
  • Remove the fillets from the marinade and season with salt and pepper then coat both sides with sesame seeds. Spray broiler pan with non-stick vegetable spray and pre-heat broiler.
  • Broil about 4 inches from heat for 6 to 8 minutes or until fish flakes easily with a fork.
  • Be careful not to overcook!
  • Serve with lemon.
  • Garnish with Parsley and or Lemon.
