Steps:

  • Preheat oven to 250-275 degrees.
  • Batter will make about 15 lbs. Prepare pans according to chart below. Grease and line pans with brown paper, waxed paper, or parchment. Grease again. Cut paper about 1 inch taller than pans. Fill pans a little over half full with batter. If you have room in the oven, put a pan with some hot water in it in the bottom, to keep the cakes moist. Enjoy!
  • Pan sizes and baking chart:
  • 9 x 5 x 3-inch loaf pan: 6 1/2 cups batter, bake for 3 hours
  • 10" tube pan: 2 1/2 quarts batter, bake for 3 hrs 15 mins
  • 1 lb. coffee cans: 3 3/4 cups batter, bake for 3 hrs 15 mins
  • 9 1/4 oz. tuna cans: 1 cup batter, bake for 1 hour 30 mins
  • No.303 (16oz) cans: 1 2/3 cup batter, bake for 2 1/4 to 2 1/2 hours
  • 4 1/2 x 2 1/2 x 2-inch mini loaf pans: 3/4 cup batter, bake for 1 hour

Granmama's Uncooked (No Bake, No Cook) Fruitcake image

Steps:

  • Crush the graham crackers into fine crumbs.
  • Granmama's recipe calls for "puffed" raisins. To puff them, soak in hot water for 30 minutes.
  • Chop the nuts; drain and cut cherries in half (if they are whole).
  • Melt marshmallows in milk.
  • Mix all ingredients together.
  • Pack into regular sized loaf pan.
  • Refrigerated overnight and cut with a hot knife.
  • Coconut is an optional ingredient.
  • Cook time is refrigeration time.

Steps:

  • Line a 9-inch (23cm) round cake pan with parchment paper and set aside. Position the oven rack to just below the center of the oven so that when the cake is in the oven it will be central. Preheat the oven to 300 degrees F (150 degrees C).
  • In the bowl of an electric mixer, cream together the butter, sugar, and molasses until the mixture is light and fluffy and pale in color. Beat in the eggs, 1 at a time, adding 1 tablespoon of flour along with each egg, to help prevent the mixture from curdling. Add 6 eggs and then check the consistency of the batter; it should be a "dropping" consistency, which means that if you lift a spoonful of the mixture out of the bowl and turn the spoon over, the mixture should drop off the spoon in 2 to 3 seconds. Add more eggs, 1 at a time, until the batter reaches a "dropping" consistency is reached.
  • In a separate large bowl, mix the remaining flour with all of the remaining ingredients, except the brandy. Add the flour mixture to the creamed mixture and beat until just incorporated. Spoon batter into the prepared cake tin, and level the surface. Bake in the center of the oven for 3 to 3 1/2 hours. As cooking times can vary considerably in different ovens, check the cake regularly, covering the top with a sheet of parchment if the cake starts to brown too quickly; begin checking for doneness after 1 1/2 hours. To test if the cake is cooked, insert a skewer and then remove it; if it comes out clean then the cake is cooked; otherwise bake for a little longer. Also listen to the cake; if you can still hear it bubbling then it isn't cooked through.
  • Remove the cake from the oven and let it cool in the pan for about 30 minutes. Then spoon the brandy on top. Set aside until completely cooled. Remove the cake from the pan and then wrap it in parchment paper and then aluminum foil before storing it in a cool, dry place.
  • The cake may be eaten immediately but is best left about a month before decorating so that it has time to "mature."

  • Preheat oven to 325 degrees F (165 degrees C). Spray a 9-inch fluted tube pan, such as a Bundt®, with cooking spray.
  • Mix the cake mix, eggs, vegetable oil, lemon pudding mix, lemon extract, and vanilla extract together in a large bowl until smooth, and stir in candied cherries, pineapple, pecans, and dried cranberries. Pour the batter into the prepared cake pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 1 hour and 15 minutes. Allow to cool in the pan for 20 minutes before turning it out onto a cake plate to finish cooling. Store in a covered container to help retain moisture.

Mrs. Maus's Fruitcake image

Steps:

  • Heat oven to 275 degrees. Butter five 6-by-2-inch round cake pans. Butter five strips of 18-by-3-inch parchment paper to form a collar for each pan.
  • Cream butter and 2 cups sugar in the bowl of an electric mixer until light and fluffy, about 3 minutes. Add eggs one at a time. Mix in molasses and 2 cups of candied fruit, blending well. Remove batter to a large bowl and add one-quarter of the nuts. Sift in flour and allspice 1 cup at a time, mixing well between additions. Add remaining candied fruit and nuts, stirring with a spoon. Divide batter evenly among pans; bake until a toothpick inserted in the center comes out clean, 3 to 3 1/2 hours. While still warm, brush with 1/3 cup brandy mixed with remaining 1 tablespoon sugar. Let cool on wire rack.
  • Gently remove cakes from pans and remove paper collars. Decorate cakes with glaceed fruits and candied cherries and kumquats. Heat apricot jam and remaining 1/3 cup brandy in a small saucepan over medium heat. Strain and brush over fruits to hold in place.

  • Preheat the oven to 300 degrees F (150 degrees C). Grease a 9 inch tube pan and one 9x5 inch loaf pan.
  • Sift the flour, sugar, cocoa, cornstarch, baking soda, salt, cinnamon and cloves into a large bowl. Stir in the applesauce and oil, then mix in the raisins, dates, mixed fruit and 2 cups of walnuts. Pour into the prepared pans. Pans should be about 3/4 full if using mini pans, or an assortment.
  • Bake for 1 hour in the preheated oven, or until a toothpick inserted into the crown of the cake comes out clean.

Steps:

  • Preheat oven to 300°. Grease and flour three 9x5-in. loaf pans. Line bottoms with waxed paper; grease and flour the paper. Combine currants, raisins, walnuts, candied citron and 1/4 cup flour. Toss to coat; set aside., Cream butter and brown sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in molasses. In another bowl, whisk baking soda, cinnamon, nutmeg, cloves and remaining flour; add to creamed mixture alternately with coffee. Stir into currant mixture and mix well., Transfer to prepared pans. Bake until a toothpick inserted in the center comes out clean, 1-1/4 to 1-1/2 hours. Cool in pans 10 minutes before removing to wire racks to cool completely. Wrap tightly and store in the refrigerator for at least 2 days to blend flavors. Slice and bring to room temperature before serving. Refrigerate leftovers.

Fruitcake always looked so festive to me but I did not like the hard citron fruit so I came up with my own recipe using dried fruits and nuts. I place these in Christmas themed petit fours paper cups and give them to neighbors and friends along with the many other cookies and candies I bake. Steps:

  • Spray 10 mini loaf pans with vegetable oil cooking spray.
  • In a 2-quart saucepan, heat the milk and marshmallow together over low heat.
  • Stir constantly, because condensed milk scorches easily, until the marshmallows are melted.
  • Remove the mixture from the heat.
  • Combine the cracker crumbs, pecans, coconut, dates and cherries in a large bowl.
  • Add the bourbon to the milk mixture and pour over the crumb mixture.
  • Mix well with your hands.
  • Scoop the mixture into the prepared pans and press down firmly to mold into shape.

Steps:

  • Drain cherries, reserving 3 tablespoons juice. Cut in half. Drain prunes, reserving 6 tablespoons syrup. Pit prunes.
  • Cream sugar, shortening and eggs or egg substitute at medium speed of a mixer for two minutes. Stir in cherries, reserved cherry and prune juice, prunes, walnuts, whiskey, pineapple and raisins. Combine flour and dry ingredients, add to creamed mixture and stir well.
