  • In a medium bowl, combine all ingredients. Toss gently, and serve.

1 1/2 tablespoons seeded, minced fresh jalapeno pepper (about 1 medium)
1/4 cup coarsely chopped fresh cilantro
2 tablespoons fresh lime juice

Steps:

  • Heat the vegetable oil in a small saute pan over medium-high heat. Lightly fry the jalapeno chiles, turning them in the pan until their skins are blistered, about 5 minutes. Set aside to cool. Once cooled, stem, seed and finely chop the jalapeno chiles and place them into a large mixing bowl. Add the cilantro, mangoes, lime juice and onions and season with salt and pepper. Serve immediately or store the salsa in the refrigerator in an airtight container for up to 3 days.

Chop the cilantro. Juice 1-2 limes. Fresh lime juice is best. I swear by my citrus juicer! Combine all ingredients, along with 1/4 tsp kosher salt, stir to combine. Taste and add more salt if needed. Allow to sit at room temperature for at least 10 minutes before serving to allow flavors to meld.
