Mango Bellini image

Steps:

  • Put the cut mango in a blender and puree until smooth adding 1 tablespoon cava to help blend.
  • Spoon 1 tablespoon of the mango puree in the bottom of 4 Champagne flutes. Pour in the Cava to fill the glass and serve.

1 mango, peeled, flesh removed and chopped
1 (750-ml) cold bottle sparkling wine (recommended: Freixenet Cava Brut)

JAMAICAN MANGOTINI

I remember my first time visiting Jamaica. Two things stand out in my mind the most; The first is walking through the waterfalls at Dunn's River near Ocho Rios. The second... rum everywhere! I remember ladies shoving rum shots in my face trying to get me to sample it, which is hilarious because I was, like, 15! My folks grabbed my arm and yanked me away before I could sample any, but I understand why they were so invested in having people try their rum-- it is among the best in the world. This cocktail is a tribute to Jamaican rum and the island flavors of Jamaica! Please do not leave out the spiced rim-- it makes the cocktail unique and delicious! Cheers!

Steps:

  • In a wide, shallow bowl, combine the sugar and cayenne. Moisten the rim of 2 chilled martini glasses with a lime and dip it into the sugar mixture.
  • Fill a shaker with ice. Add the mango juice, rum, Grand Marnier and lime juice and shake vigorously. Strain into the glasses. Serve with a mango slice, if desired. Makes 2.

  • Mix together all of the meatball ingredients in a large bowl until well-combined. Spoon out 1-inch of meat mixture with a cookie scoop (or tablespoon), shape into balls and place onto 2 large baking sheets or trays lined with baking or parchment paper.
  • Heat a non-stick pan or skillet over medium-high heat. Whisk ALL of the sauce ingredients together in the pan until well blended. Bring to a simmer and continue cooking until sauce thickens, while stirring occasionally to prevent burning or sticking on the bottom of the pan (about 8 minutes).
  • When meatballs have finished cooking, add half of the meatballs into the pan and gently coat each meatball generously and evenly in the sauce. Transfer the glazed meatballs to a serving dish or tray with a slotted spoon and add in the remaining non-coated meatballs to the sauce. Coat and transfer to serving dish.
