MAPLE CINNAMON CHIP COOKIES
Created to satisfy my craving for maple & cinnamon. It's a twist on the favorite chocolate chip cookie. Not too sweet but a good and different cookie

Steps:
- 1. Sift all dry ingredients(flour, salt, baking soda, cinnamon) together set aside
- 2. In a stand mixer, using paddle attachment on medium speed, cream butter and shortening until well blended, add sugars, continue to mix, add eggs one at a time, until all ingredients are incorporated, scraping sides of bowl, frequently.
- 3. Slowly (on slow speed) add flour mixture a little at a time, until risk of flour flying out, is gone. Then increase speed to medium, continue mixing until it's the consistency of soft dough. Hand stir in nuts and cinnamon chips to dough until well blended. Cover and chill for an hour (or overnight is fine)
- 4. Line baking sheet with parchment paper. drop tablespoon size onto cookie sheet spacing 2 inches apart. Bake at 350: 10-12 minutes. Cookies will have a soft center with crispy edge. Sprinkle with sugar/cinnamon mixture while still warm. Cool, Enjoy!

- Cream together egg yolks and butter.
- Add maple syrup, sugar, and cinnamon before stirring.
- Add flour and beat until a biscuit-like dough is formed.
- Scoop onto baking sheet coated in non-stick spray. Bake at 370 degrees for 15-20 minutes or until edges are brown.

MAPLE, CINNAMON & BROWN SUGAR COOKIES
They say that we eat with our eyes first - well, with the aroma of these cookies baking in the oven, everyone will be waiting in the kitchen for these cookies to get finished.

- 1. Preheat oven to 375 degrees. Line a 13 X 17 cookie sheet with parchment paper; set aside. Place the pecans and white chips in a small bowl. Stir until combined; set aside.
- 2. In a medium mixing bowl, add the butter, brown sugar and salt. Use a hand mixer and mix until well blended. Into the bowl, add the egg, vanilla and cinnamon. Continue to mix until blended. Add the baking powder, flour and pecans. Mix until all ingredients are well combined. Take dough out of the bowl and place on a well floured counter top. Lightly flour the top of the dough and roll with a rolling pin until dough is ¼ inch thick. Using a 2 ½ inch round cookie cutter, cut out cookies and place in four rows with 3 cookies per row. Leave at least 1-inch space in between cookies. Place cookies in oven and bake for 9-10 minutes or until golden on the sides. Let cookies sit for 5 minutes then transfer to cooling rack, to finish cooling. Continue with the remaining dough. Remaining dough can be mixed together and rolled one more time. (The same cookie sheet and parchment paper can be reused.)
- 3. In a medium bowl, mix together the cream cheese, powdered sugar and maple flavoring. Mix until well blended. Spread evenly to the top of the cooled cookie. Evenly sprinkle the pecan/white chip topping to the top of each cookie. Cookies are ready to serve.
- 4. Hint: I use a little chopper or food processor to chop my white chocolate chips.
ICED CINNAMON CHIP COOKIES
I take these cookies to family gatherings and socials and give them as gifts to friends. The cinnamon flavor and soft frosting make them special. My mom helped me bake my first batch of cookies when I was 8. She's my role model.

- In a large mixing bowl cream butter with an electric mixer. Then add brown sugar and mix until combined. Add syrup,egg and mix thoroughly.
- Wet your fingertips with warm water when forming balls to avoid sticky fingers
- In a small mixing bowl combine flour, nutmeg, cinnamon and baking soda.Then add flour mixture to batter.
- Blend thoroughly and chill for 30 minutes. Roll dough into one inch balls and place on cookie sheet. Bake at 375 for 9 to 11 minutes. Remove and place on cooling rack. Cool slightly then frost.
- To make frosting combine butter,vanilla in a small mixing bowl. Add sugar, milk and mix until creamy.

Yes, really. After recently having a bacon chocolate bar (made by the skilled hands of those at Vosgues Haute Chocolat) and loving it, I was inspired to make the same thing in cookie form. It's the prefect combination of savory and sweet. Adults can't get enough of them. Try them and I promise you'll be making a second batch! Thank you Dallas Morning News! - In a large bowl, beat together the butter, sugars, extracts and eggs until creamy. In another bowl, sift together the dry ingredients. Add the dry ingredients to the butter mixture and stir together.
- Dough will be slightly soft. If you want a more cakelike cookie, add another 1/2 cup of flour. Mix in chocolate chips and crumbled bacon. Stir until well integrated.
- Place dough on a sheet of wax paper and refrigerate at least 1 hour.
- Preheat oven to 350°F.
- Remove dough from fridge. Pinch off 1 ½ -inch pieces and roll into balls. Set dough balls about 2 inches apart on an ungreased cookie sheet. Flatten dough balls in the center slightly with your fingers. Bake about 10 minutes, or until the dough starts to turn golden brown. Allow cookies to cool on a cooling rack while you make the glaze.
- Maple-Cinnamon Glaze: Mix 2 cups powdered sugar, 1 tablespoon maple extract, 1 teaspoon vanilla extract and ½ teaspoon cinnamon with enough water to make a thick glaze, about 3 tablespoons. Mix all ingredients together until smooth and creamy. If lumpy, use a whisk.
- Spread a small amount of glaze on top of each cookie and top with a small piece (1 to 1 ½ inches) of crisp bacon.
