Maple Nut Pie Bars image

Steps:

  • Preheat oven to 350. Line a 13 x 9 inch baking pan with foil, extending foil over edges of pan. Lightly coat foil with cooking spray. Set aside
  • For crust, in medium bowl, stir together flour, powdered sugar and salt. Using pastry blender, cut in the ¾ cup butter til mixture resembles coarse crumbs. Press mixture evenly onto bottom of prepared pan. Bake for about 20 minutes or til lightly browned.
  • Meanwhile, for filling, in medium bowl, mix eggs, mixed nuts, brown sugar, maple syrup, the 3 Tbsp. melted butter and maple flavoring. Spread filling evenly over hot crust. Bake for about 20 minutes more or til filling is set. Cool in pan on wire rack. Using edges of foil lift uncut bars out of pan. Cut into bars.
  • For garnish, if desired, in large glass measuring cup, mix white baking pieces and shortening. Microwave on full power for 1 minute or til mixture is melted, stirring every 30 seconds. Spoon or drizzle bars with white chocolate mixture. Top each with a pecan half. Makes 36 bars. Store in single layer in an airtight container, covered. Store in refrigerator for up to 2 days.

Steps:

  • Preheat oven to 350°. In a large bowl, combine flour and confectioners' sugar. Cut in the butter until crumbly. Press into a greased 15x10x1-in. baking pan. Bake until edges are lightly browned, 12-15 minutes., Meanwhile, in a large heavy saucepan, combine brown sugar, butter, syrup, cinnamon and salt. Bring to a boil. Cook and stir over low heat until butter is melted. Stir in pecans, cream and vanilla. Remove from the heat; spread over crust., Bake until bubbly, 20-25 minutes longer. Cool on a wire rack. Cut into bars.

Steps:

  • Line 15x10x1-inch baking pan with foil. Butter or spray foil with nonstick cooking spray.
  • In large saucepan, melt chocolate chops and 1 cup of the margarine over low heat, stirring frequently. Remove saucepan from heat. Add peanut butter; mix well.
  • Spread half of mixture in buttered foil-lined pan. Freeze 10 minutes or until set. Place pan in refrigerator.
  • Meanwhile, stir peanuts into remaining chocolate mixture. Set aside.
  • Melt remaining 1 cup margarine in large saucepan over low heat. Gradually stir in evaporated milk. Stir in pudding mix. Cook until mixture is slightly thickened, stirring constantly. Do not boil. Remove saucepan from heat. Add powdered sugar and maple flavor; mix well. Cool about 10 minutes or until slightly cooled.
  • Carefully spread pudding mixture over chilled chocolate layer. Refrigerate 30 minutes.
  • Stir reserved chocolate-peanut mixture. Drop by spoonfuls onto chilled pudding layer; spread to cover. Refrigerate at least 3 hours or until firm. Cut into bars. Store in refrigerator.

  • Preheat the oven to 375 degrees. In a large mixing bowl, cream the butter and 1 cup brown sugar. Add the flour and beat until coarse crumbs form. If the mixture is too soft, add a little more flour. It should be crumbly but stick together when pressed.
  • Press the crust into a 9×13 baking dish. Bake for 12-15 minutes or until top appears dry and slightly puffed. I like to underbake mine so the crust stays softer, but if you like more of a shortbread-type crust, bake a few minutes longer.
  • For the filling, whisk the eggs, corn syrup, brown sugar, maple syrup, and vanilla. Stir in the pecans and pour the mixture over the crust. The filling should not be more than just a light layer of sauce over the crust. Arrange any stray pecans and return to the oven for 15-20 minutes. Remove from oven when the filling appears mostly set. Sprinkle with coarse sea salt.

  • Position a rack in the middle of the oven and preheat the oven to 350 degrees F. Line a 8x8 baking dish with foil or parchment that goes all the way up the sides, so it is easy to remove the bars from the baking pan. Set aside.
  • Combine the flour, 1/2 cup of light brown sugar, 1/2 teaspoon salt, and 1 1/2 sticks butter in a food processor and pulse until mixture begins to form small lumps. Alternately you can combine the ingredients in a large bowl and using a pastry cutter, break the butter into the flour until the butter is cut enough to resemble the size of peas or oat flakes. Sprinkle the mixture into the baking dish and press, creating an even layer of shortbread crust. Bake for 20 minutes or until golden brown in color.
  • In a medium bowl that is microwave safe, melt the remaining 1/2 stick of butter. Whisk in the corn syrup, remaining 3/4 cup of brown sugar, maple syrup, eggs, remaining 1/2 teaspoon salt, and vanilla extract. Continue to whisk until all the lumps from the brown sugar have been worked out. Add the pecans and stir. Pour into the prepared shortbread crust. Bake for 20 - 25 minutes until the center is set and the pecans start to brown. Cool the baking pan on a wire rack. Remove from baking pan and allow to cool completely before cutting and serving. Serve by themselves, with whipped cream, or a big scoop of vanilla ice cream.
