MAPLE SAUCE
This maple sauce is served over Jane's Deluxe gingerbread cake. Jane is the owner of a restaurant, Jane's On The Common,in Halifax, Nova Scotia. I like this sauce served over an old-fashioned cottage pudding or ice cream. Recipe adapted by the Chatelaine Test Kitchen.

- Melt butter in a medium saucepan over low heat.
- In a medium bowl, whisk eggs. While constantly whisking, slowly drizzle in melted butter.
- Whisk in icing sugar until smooth, then maple syrup and rum.
- Pour back into saucepan and set over medium heat. Stir often, just until mixture starts to bubble.
- Immediately pour into a small pitcher.
- Serve over squares of gingerbread.
- Sauce will keep well, covered and refrigerated, up to 3 days.
- Reheat in a low microwave until warm.

- In a saucepan on low heat, combine syrup, vinegar, butter spread, garlic, and salt, and heat for several minutes.
- Meanwhile, in a bowl, combine arrowroot and tamari, stirring through until well incorporated. Add tamari mixture to saucepan, whisk to combine, and increase heat to bring mixture to a boil, stirring continually.
- Let boil gently for 1 minute, then remove from heat and let cool slightly (the mixture will thicken more as it cools down). Enjoy! (this can be chilled or used as it).

- In a medium bowl, mix together the stone-ground mustard, yellow mustard, maple syrup and black pepper. Serve with fries or chicken tenders and GET TO DIPPIN.
NORTH ATLANTIC-STYLE MAPLE BBQ SAUCE
Steps:
- Add liquid ingredients, except the water, to sauce pan. Simmer these ingredients for 15 minutes or until all ingredients have blended. Sift in fenugreek and paprika. Stir while spices are blending into sauce.
- Bring sauce to slow rolling boil. Then add cornstarch and water to sauce. Continue to simmer until sauce has thickened.
- Sauce is great on pork, beef, lamb, chicken or anything you desire. This sauce is also a great marinade when used with citrus juice base!!!
VANILLA MAPLE SAUCE

- Pour off most of the fat from the roasting pan. Add garlic, and place pan over medium heat. Cook for 1 minute, stirring. Pour in the stock and scrape up any brown bits from the bottom of the pan. Pour the contents of the pan into a small saucepan. Add the wine, maple syrup, and vanilla and cook over medium-high heat, stirring often, until the flavors are concentrated and the sauce starts to become syrupy. Taste for salt and pepper and stir in optional butter if you want a silkier sauce.
CHICKEN WITH BLACK-PEPPER MAPLE SAUCE
Steps:
- Cut out backbone from chicken with kitchen shears and discard. Pat chicken dry, then spread flat, skin side up, on a cutting board. Cut a 1/2-inch slit on each side of chicken in center of triangle of skin between thighs and breast (near drumstick), then tuck bottom knob of each drumstick through slit. Tuck wing tips under breast. Sprinkle chicken all over with salt and ground pepper.
- Heat 3 tablespoons butter in 10-inch cast-iron or heavy nonstick skillet over moderate heat until foam subsides. Add chicken, skin side down, and arrange larger rosemary sprigs over chicken. Cover with parchment round and second skillet, then top with weights. Cook chicken until skin is browned, about 15 minutes. Remove and reserve weights, top skillet, parchment, and rosemary, then carefully loosen chicken from skillet with a spatula. Turn chicken over and re-place rosemary sprigs, then re-cover with parchment, skillet, and weights. Cook until chicken is just cooked through, 15 to 20 minutes more.
- Make sauce while chicken cooks:
- Toast peppercorns in a dry 1-quart heavy saucepan over moderate heat, shaking pan occasionally, until fragrant, about 3 minutes. Transfer to a clean cutting board and coarsely crush with a rolling pin. Return peppercorns to saucepan and bring to a simmer with syrup, 1/2 cup broth, and small rosemary sprig, then reduce heat and simmer 20 minutes.
- Transfer chicken to a platter and loosely cover with foil. Add vinegar to skillet and deglaze, boiling and scraping up brown bits with a wooden spoon until liquid is reduced by half. Stir in maple mixture and remaining 1/4 cup broth and boil until slightly syrupy, about 3 minutes. Reduce heat to low and swirl in remaining 2 tablespoons butter. Season sauce with salt and pour through a fine-mesh sieve into a bowl, discarding solids. Serve chicken with sauce.
BLUEBERRY MAPLE SAUCE
I have not tried this sauce. I'm posting this for safe keeping. I found this recipe in Complete Book Of Small Batch Preserving. A spoonful of this sauce is a scrumptious topping for sliced fresh peaches or other fruit. Of course, serve it on pancakes and waffles as well.

- Combine blueberries, water, lemon juice and cinnamon stick in a 4-cup (1 L) microwavable bowl. Microwave, uncovered, on high (100%) for 5 minutes, stirring once. Stir in sugar and maple syrup. Microwave, uncovered, on high for 3 minutes or until sugar is dissolved and mixture comes to a boil. Let cool.
- Discard cinnamon stick and store sauce in a tightly sealed container in refrigerator for up to 1 month.

SALMON WITH MUSTARD MAPLE SAUCE

- Pat salmon dry and season with salt and pepper. Heat oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then sauté salmon in 2 batches, starting with skinned sides up and turning over once, until just cooked through, 6 to 9 minutes per batch. Transfer to a platter and keep warm, covered.
- Remove skillet from heat and cool 1 minute. Whisk in remaining ingredients and salt and pepper to taste. Pour sauce over salmon.
CRANBERRY MAPLE SAUCE
A lovely holiday fruit sauce to serve with the traditional bird, with a couple of twists. Instead of straight-up sugar, a cup of pure maple syrup balances the tartness of the fruit. A cup of cranberry juice ensures the essential flavor remains the focus of the dish, and a bit of orange brightens the whole shebang. The Grand Marnier is optional. This is to say nothing of the texture, which to paraphrase the great Roseanne Conner, is "so far beyond canned sauce, that the light from canned sauce would take one billion years to reach the Earth." - Rinse cranberries under cool running water, pick over and discard any bad berries. Place berries into a medium saucepan.
- Stir in the orange zest, Grand Marnier (or orange juice), cranberry juice, and pure maple syrup.
- Bring to a rolling boil over medium-high to high heat, keeping a close eye and stirring often.
- Reduce heat to medium-low and continue to cook for about 10 minutes, until sauce thickens and most of the berries have popped.
- Pour into a glass dish and let cool. For best results let sit in fridge overnight.
BAKED HAM WITH MAPLE MUSTARD GLAZE

- Preheat the oven to 350 degrees F.
- Place the ham in a roasting dish with 1 cup water in the bottom of the dish. Roast for 1 hour and 15 minutes. (Check the ham after 45 minutes and add more water if necessary or tent with aluminum foil if it is getting past a dark golden brown.)
- Meanwhile, combine the syrup, mustard, soy sauce, brown sugar, vinegar, Worcestershire and cayenne in a saucepan over medium-high heat. Cook, stirring frequently, until the mixture is thick and bubbly, 15 to 20 minutes.
- If you used it, remove the foil from the ham and slather the ham with the glaze. Return the ham to the oven uncovered. Continue to roast, brushing the ham with the glaze every 15 minutes, until the internal temperature is between 140 and 150 degrees F, another 1 hour and 30 minutes. (If the ham starts to become too dark on the outside, tent it with aluminum foil. We are looking for a dark, sticky, flavorful glaze on the outside of the ham. Use all the glaze! Really slather it on!)
- Remove the ham from the oven, remove the foil, brush with any remaining glaze and cook, uncovered for another 5 minutes. Let it rest for 20 to 30 minutes.
- Serve hot or at room temperature.

- In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper.

- Butter a 9x9x2-inch square baking pan, and place in the oven to melt; remove.
- Stir the maple syrup, brown sugar, lime juice, and allspice into the pan, mixing well.
