- In a small bowl, whisk the first five ingredients until blended. Remove 1/2 cup for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag. Add salmon; seal bag and turn to coat. Refrigerate 1-3 hours., Drain salmon, discarding marinade in bag. Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Place salmon on grill rack, skin side down. Grill, covered, over medium heat or broil 4 in. from heat 10-12 minutes or until fish flakes easily with a fork, basting frequently during the last 4 minutes.

- Preheat the oven to 400 degrees F.
- In a small bowl, combine the brown sugar, maple syrup, olive oil, teriyaki sauce and some salt and pepper. Whisk until fully combined.
- Arrange the salmon in a single layer in a baking dish. Brush the glaze over the fish, coating evenly. Bake until the fish is cooked through, about 15 minutes.

- In bowl, whisk together first five ingredients.
- Reserve 1/2 cup for basting, cover and chill.
- Pour remaining mixture into large zippered plastic bag.
- Add fillets, press air from bag and seal.
- Chill 1 to 3 hours.
- Turn on broiler.
- Drain off marinade and broil fillets 4 to 6 inches from heat for 5 minutes.
- Baste with some of the reserve of marinade and broil 7 to 10 minutes longer, or until fillets are firm when pressed.

TERIYAKI SALMON
Recipe sourced from Curves recipe book. I was unsure because I don't like ginger much but - mmmmmm! Yummy! We served with stir fried yellow squash, zucchini and brown rice. I also used a little of the leftover marinade to flavour the vegetable/rice concoction as I figured it would cook any of the salmon from the marinade anyway.

I was out of honey but still wanted to make salmon teriyaki one night, so I improvised with maple syrup. The recipe turned out to be a success. The orange juice and maple syrup give the salmon just the right balance of sweetness, and the onion and garlic add to the flavor. Note: Preparation time includes marinating time.

- Prepare the marinade by mixing the sake, soy sauce (a reduced-sodium variety if you prefer), ginger, garlic, and brown sugar together in a small bowl.
- Reserve 1/4 cup of the marinade.
- Rinse the salmon fillets under cold water, place in a glass or ceramic dish, and pour the marinade over it.
- Cover and let marinate in the refrigerator for 1 to 3 hours, spooning the liquid over any exposed parts of the fish once or twice.
- Prepare the grill or preheat the broiler to high heat.
- Remove the fish from the marinade and place on foil on the grill or a broiler pan.
- Broil or grill until done, being careful not to overcook.
