MAPLE AND WALNUT BEER BREAD
Ok, this is a specific recipe ... but is also a method. The flour beer and sugar are consistent ... everything else is extra. Here are some of my favorites and you can really do what you like. Dried vs fresh herbs are best, not too many "wet" ingredients; such as olives, onions, sundried tomatoes, etc., and if you add cheese, no more than 1 cup. - Chile beer at any specialty liquor store, monterey jack cheese and cilantro - Pumpkin beer, yes in the fall, pecans, rosemary, and swiss cheese - Any good dark like Amberbock, apples, dried cranberries and gruyere - Honey wheat, caramelized onion, cheddar, and thyme - Light beer, green chilies, jalapeno jack and cilantro - Red berry or any berry beer, walnuts and provolone with cinnimon - Any dark beer, raisins, cranberries, cinnimon and brown sugar vs white - Bock beer, sundried tomatoes, olives and oregano - Maple or pumpkin beer, cinnimon, raisins, pecans and dried apples I have used bacon bits and cheddar; all herbs; or just cheese. Endless combinations. But this is a favorite for breakfast or even a late night snack with cream cheese. Many of these are available year round at most larger liquor stores any many of the beers are available during seasons, like the Pumpkin and Maple available during the Fall and Winter months. A hearth Bock for some brewers is available in winter and it is good with Mediterranean flavors. Now this is the basic recipe ... 12 oz beer (I use a standard bottle with is 12 oz) 3 cups flour self rising, sifted (sifted is important), if not using self rising, use all purpose, but add 1 tablespoon baking powder and 1 teaspoon salt 1/4 cup sugar (flavorings) However below is my updated recipe for the maple walnut.

- The batter -- Sift the flour and add to a large bowl. Add the sugar, beer and seasoning and mix. I do like the beer to set for a few minutes so it isn't ice cold. Pour all in a loaf pan and cook for 50-60 minutes at 375. Half way through brush the melted butter on the top of the loaf for a golden color. For the sweater breads I usually top it with melted butter.
- Have fun with it and try a variety of flavors. Just stick to the basic recipe and it is virtually full proof. I have probably made 50+ varieties by now.

- Weigh or lightly spoon flours into dry measuring cups; level with a knife. Combine flours, sugar, baking powder, baking soda, and salt in a large bowl; make a well in center of mixture.

Steps:
- Place ingredients in bread machine pan according to manufacturer's instructions.
- Yeast is optional if baking in conventional oven.
- Select basic white cycle, or dough cycle if you prefer to bake in the oven.
- At end of dough cycle, shape into loaf and place in lightly greased bread pan.
- Cover and let rise until about doubled.
- Bake at 350 degrees F for 30 to 40 minutes, or until golden brown.
- Turn out of pan onto wire rack to cool.
- Brush crust with melted butter if desired, for a soft crust.
- NOTE: To toast walnuts, spread on a shallow baking pan and place in a 350 degree F oven for about 10 minutes.

Steps:
- Preheat the oven to 325 degrees F. Cut a piece of foil 8 by 16-inches. Butter the corners and sides of an 8-by-8-inch baking pan. Line the pan with the foil, leaving an overhang on two sides.
- Beat the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment on medium-high speed until light and fluffy, about 5 minutes. Reduce the speed to medium and add the egg yolk, syrup, vanilla extract and vanilla bean seeds if using. Reduce the speed to low, add the flours and salt, all at once, and beat until just combined. Add the walnuts and continue to mix until fully combined.
- Using your hands, drop the dough in pieces evenly into the prepared pan. Flour your hands lightly and press the dough together and into the corners of the pan. Put a piece of waxed paper on top of the dough and use something square and heavy-another pan, a pound of cold butter-to press the dough into the pan and make a smooth, even top. Chill until firm, about 30 minutes.
- When it is firm, use a fork to score the dough all over. Bake until deep golden brown and starting to pull away from the sides of the pan, about 45 minutes. Cool completely on a rack, about 2 hours, then wrap with plastic wrap, and let sit at room temperature overnight.
- Place a lightweight cutting board or a baking rack over the top of the pan. Flip and set on the counter. Gently pull the pan from the foil and the foil from the pan to lift off the pan. Gently peel the foil off the bar. Place another lightweight cutting board on top, and flip the bar right-side-up.
- Using a sharp, serrated knife, slice the square in half. Then slice each half into 8 bars.
MAPLE WALNUT AND FIG BREAD
Steps:
- Position a rack in the center of the oven and preheat the oven to 350 degrees F.
- Put the diced figs in a medium bowl and add the warm water. Let soak until softened.
- Whisk the unbleached flour, cake flour, oats, baking powder, and salt together in a large bowl. Set aside.
- Put the maple syrup, milk, eggs, egg yolks, and canola oil in a medium bowl and stir with the whisk to combine. Add the mixture to the dry ingredients, stirring with a spoon just until all the flour is moistened. This should be a wet batter, because the oats absorb a lot of the liquid during baking.
- Fold the walnuts and figs into the batter (the figs do not need to be drained). Divide the batter evenly between two oiled 9- by 5-inch loaf pans. Bake for about 1 hour, until a toothpick inserted in the center comes out clean. (If your oven bakes unevenly, rotate the pans from left to right and front to back about halfway through the baking time.)
- Remove the pans from the oven and use a pastry brush to glaze the tops of the loaves with maple syrup. Set them on a rack to cool for about 10 minutes. Turn the loaves out of the pans and set them on the rack to cool completely before serving. Wrap any leftovers tightly in plastic wrap and store at room temperature. They may also be frozen, wrapped first in aluminum foil and then in plastic wrap or a heavy-duty freezer bag.

- Make the blondies: Preheat the oven to 350˚. Line a 9-by-13-inch baking dish with foil, leaving a 2-inch overhang on two sides; coat the foil with cooking spray. Spread the walnuts on a baking sheet and bake until lightly browned, 10 to 12 minutes. Let cool slightly, then transfer to a cutting board and roughly chop; set aside.
- Whisk the flour, baking soda and salt in a large bowl. Melt the butter in a medium saucepan over medium heat and cook, stirring occasionally with a whisk, until brown flecks appear, 10 to 12 minutes; remove from the heat and immediately whisk in the brown sugar and maple syrup. Let cool slightly, about 5 minutes. Whisk in the eggs one at a time, then add the vanilla and maple extracts.
- Whisk the brown butter-egg mixture into the flour mixture, then fold in the walnuts with a rubber spatula. Spread the batter in the prepared pan. Bake until lightly browned and a toothpick inserted into the center comes out clean, about 25 minutes. Transfer to a rack and let cool completely in the pan. Lift the blondies out of the pan using the foil overhang; discard the foil.
- Meanwhile, make the frosting: Beat the butter and salt in a large bowl with a mixer on medium-high speed until fluffy, about 2 minutes. Add the maple syrup and beat until smooth. Gradually beat in the confectioners' sugar on low speed, increasing the speed to medium high after each addition until fluffy. Beat in the lemon juice and maple extract; add more maple extract, 1/4 teaspoon at a time, to taste. Spread the frosting over the cooled blondies. Cut into squares.

- Mix together the first six ingredients.
- In another bowl, throughly stir together the eggs, bananas, melted butter, milk and flavoring.
- Stir wet ingredients into dry until just moistened.

- Preheat oven to 325 degrees F (165 degrees C). Grease an 8 x 8 inch pan.
- In a medium bowl combine flour and baking soda. Mix well and set aside.
- In a large bowl with an electric mixer, blend brown sugar and 1/2 cup margarine to form a grainy paste. Scrape down sides of bowl, then add 1 cup syrup, egg and vanilla. Beat at medium speed until smooth.
- Add the flour mixture and walnuts and blend at low speed just until combined. Pour batter into baking pan and smooth top with a spatula. Bake 40 to 45 minutes or until toothpick inserted into center comes out clean. Cool in pan.
- To Make Maple Frosting: In a medium bowl, cream 1/2 cup margarine and cream cheese with an electric mixer at high speed. Add 1 tablespoon brown sugar and 3 tablespoons maple syrup, and beat until smooth. Slowly add confectioners sugar and reduce mixer speed to low. Once sugar is added mix until smooth. If frosting appears thin gradually add confectioners sugar until frosting thickens. Spread frosting on top of bars in pan and cut into squares.
