This is a fabulous coffee cake. Cream Cheese adds to the richness and it just melts in your mouth. I like to make this when I have a good friend coming by for coffee, as if I just whipped it up! Impressive and Yummy!

Steps:
- Grease and flour (or spray with Pam) bottom and sides of a 9-inch spring form pan.
- Combine flour and 3/4 cup sugar.
- Cut in butter until mixture resembles coarse crumbs; reserve 1 cup of mixture setting aside.
- To crumb mixture in bowl add baking powder, soda, salt, sour cream, 1 egg and almond extract blending well.
- Spread batter in pan.
- Combine cream cheese, 1/4 cup sugar, and 1 egg and poor over batter in pan.
- Sprinkle reserved 1 cup of crumb mixture over all.
- Bake at 350° 45 to 50 minutes or until cheese filling is set and cake is golden.
- Cool at least 15 minutes before removing sides of pan slice and serve warm or at room temperature.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch tube pan. In a small bowl, beat cream cheese, confectioners' sugar and lemon juice until smooth; set aside. In a medium bowl, stir together flour, baking powder, baking soda, and salt; set aside.
- In a large bowl, cream together the butter and 1 cup white sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the sour cream, mixing just until incorporated. Pour half of batter into prepared pan. Spoon cream cheese mixture on top of batter to within 1/2 inch of pan edge. Spoon remaining batter over filling, spreading to pan edge. In a small bowl, combine chopped nuts, 2 tablespoons white sugar and 1/2 teaspoon cinnamon. Sprinkle over batter in pan.
- Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a serving plate and serve warm.

COFFEE CAKE WITH ORANGE MARMALADE AND ORANGE GLAZE
Everything that's great about breakfast comes together in this crumb-topped coffee cake with orange marmalade filling and OJ glaze.

Steps:
- Combine the flour, brown sugar, nutmeg and salt in a small bowl and mix well. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers.
- Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
- Whisk together the flour, baking powder, baking soda and salt in a small bowl.
- Beat together the butter and granulated sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream, beginning and ending with the flour, beating until just incorporated.
- Spoon half of the cake batter (it will be very thick) into the prepared pan and smooth with an offset spatula. Dollop the marmalade on top and carefully smooth with the spatula. Spoon the remaining cake batter on top and smooth the top. Sprinkle on the crumb topping.
- Bake until the cake and topping are golden brown and a toothpick inserted into the center of the cake comes out clean, about 1 hour. Let cool in the pan 20 minutes, then invert onto a plate; invert back onto a rack to cool completely.
- When the cake is cool, whisk together the confectioners' sugar, orange juice and orange zest in a medium bowl until smooth. Drizzle the glaze over the cake and let set.

- Preheat the oven to 350 degrees.
- Line 18 muffin cups with cupcake papers.
- In a medium bowl, stir together flour, baking powder, baking soda and salt.
- Set aside.
- In a large bowl, with the mixer at medium speed, beat butter and sugar until light and creamy, about 5 minutes.
- Add eggs, 1 at a time, beating well after each addition.
- Beat in marmalade.

- Preheat oven to 350 degrees F (175 degrees C). Generously grease a 12 cup Bundt cake pan or a 9 or 10 inch tube pan.
- Soak raisins in warm water until plump. Drain and dry. Chop coarsely. Mix with 1/3 cup dark brown sugar, cocoa, chocolate, cinnamon, and chopped nuts. You can also mince filling ingredients in a food processor for another texture.
- Cream the unsalted butter with 1 cup brown sugar and white sugar until fluffy. Add cream cheese, and cream until blended. Add eggs and vanilla, and mix thoroughly. Blend in yogurt or sour cream. Fold in flour, salt, baking powder, soda. Mix well on low speed of mixer. Spread one third batter in prepared pan. Top with some of the filling mixture. Layer in this fashion until filling and batter are used up.
- Bake until done, 50 to 60 minutes. Cool in pan 10 minutes before removing.

- Preheat oven to 325 and butter two 9 inch round cake pans, line with parchment or waxed paper, and then butter the paper.
- Sift flour, baking soda and salt in a bowl.
- In another bowl with an electric mixer, beat the butter until light, add the sugar a little at a time and beat until light and fluffy.
- Beat in the eggs and vanilla.
- Beat in 1/3 of the dry ingredients alternately with 1/2 of the butter milk until combined well.
- Add half the remaining dry ingredients and the remaining butter milk, beat until combined well.
- finally add in the remaining dry ingredients and beat until smooth.
- Evenly divide the batter between pans and bake for 45 minutes or until a cake tester interted comes out clean.
- (The cake turns a dark golden brown) Leave the cakes in the pans Meanwhile make the syrup by mixing the juice and sugar until dissolved.
- Once the cake is cooked, poke holes 1/2 inch apart with a toothpick and spoon the syrup over each layer.
- Let the layers cool completely in the pans.
- When the cakes are cool, heat the marmalade over moderate heat until it's meltetd and let it stand for 5 minutes.
- Place the first layer on a cake plate and carefully peel off the waxed paper Spread 2/3 of the marmalade over the top right to the edge.
- Invert the remaining layer and peel off the waxed paper.
- Spoon the Marmalade onto the center of it, leaving a 1 1/4 inch rim bare along the edges.
- In another bowl prepare the frosting by whisking the heavy cream with the sugar until stiff peaks form.
- Add the sour cream a little at a time and whisk until spreading consistency.
- Spread the frosting along the sides of the cake and along the bare rim on the top, leaving the marmalde on the top exposed.
- Chill for 2 hours at least and STAND BACK when you serve it!

- Position rack in center of oven; preheat to 425°F. Butter 9-inch-diameter springform pan with 2-inch-high sides. Whisk egg yolk, lemon juice, lemon peel and vanilla in small bowl to blend. Run small knife around sides of pan to loosen cake. Cool cake in pan on rack. Refrigerate cake overnight.
- Boil marmalade and 2 teaspoons lemon juice in saucepan until slightly reduced, about 2 minutes. Spread warm glaze atop cake. Chill cake 10 minutes. Remove pan sides. Transfer cake to platter. Garnish with orange and mint.
