AWESOME RICE-A-RONI SALAD
I have been making this delicious rice salad for years. The pages to my little community cookbook where I found this recipe is starting to fall apart from so much use. Anyway, this recipe is one of my favorites. I hope you enjoy it, too.

Steps:
- 1. Drain artichokes, saving marinade. Add artichokes to cooked rice. Mix the mayonnaise and curry powder. Add to marinade and mix well. Add remaining ingredients. Toss together. Chill.

- Prepare Rice A Roni according to directions omitting butter. Let cool completely.
- Combine drained marinade, curry powder, mayonnaise and spices. Whisk until smooth with a fork or small whisk.
- Mix cooled Rice A Roni in a 2-quart bowl with marinade dressing and chopped vegetables.
- Chill.
MARY'S RICE-A-RONI SALAD
This is a great salad on hot summer days. It does take 4 hours to chill before serving, so make in the morning to go with lunch.

Steps:
- Cook rice-a-roni according to package directions except leave out the butter step. Let the rice mixture cool and add green pepper, and onion.
- Slightly chop up artichokes and stir in rice mixture.
- Mix mayo and reserved artichoke juice together. Mix into salad mixture. Chill for 4 hours before serving.

Steps:
- Bring brown rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low; cover and simmer until rice is tender and the liquid is absorbed, 45 to 50 minutes.
- Combine red bell pepper, peas, raisins, onion, and olives in a bowl.
- Whisk vegetable oil, vinegar, and mustard together in a separate bowl for the balsamic dressing.
- Stir brown rice and balsamic dressing into vegetable mixture. Season with salt and black pepper.
- Top brown rice and vegetables with feta cheese before serving.

RICE-A-RONI CHICKEN CURRY SALAD
This is a recipe for a cold rice/chicken salad with a curry twist, using Rice-a-Roni. My sister-in-law makes this for potlucks, baby showers, family get-togethers. It is always a favorite dish. I have made it as well and love the curry taste in it....and I'm not a huge curry fan! This recipe will serve 6 if it's used as a main dish or 8 for side servings. If you make it for a crowd, just double the recipe.

- Cook Rice-a-Roni according to directions and cool.
- Cook chicken separately and chop.
- Add into rice, the diced onion, green pepper, artichoke and chicken.
- Next, stir together the three dressing ingredients in a small bowl.
- Add dressing to rice salad mixture and stir.
- Place salad into a 9 x 13 dish or deep bowl edged with curly lettuce leaf to make it pretty.
- Chill 2 hours and serve.

This is a great dish to serve when it's too hot to cook and you want a main dish salad for dinner. You can add shrimp or chopped crab or lobster instead of the chicken. I sometimes add a green or red pepper to the mix.

ORIENTAL RICE-A-RONI CURRY SALAD
This is a different Rice-a-Roni Salad. No olives or artichokes. You can use chopped chicken or turkey but seafood or crab is delicious. If you refrigerate overnight, the flavors really blend. So easy! Any time of the year to serve, just leave out the chopped radishes in the winter! I prefer using the crab.

- Cook the Rice-a-Roni as per pkg directions. Cool.
- In large bowl add all of the sliced and diced vegetables including the water chestnuts. Mix. Add the seafood or the poultry.
- Mix the mayonnaise, curry powder, soy sauce and ground ginger.
- Note: You may use Miracle Whip if you wish.
- Add the cooled Rice-a-Roni to the salad. Mix. Then add the dressing.
- It is best if this dish is cooled overnight. The flavors really pop!
- Serve individually on lettuce leaves or in a large bowl.

I certainly don't remember where I found this recipe. Think it was a magazine. I tried it and it has been a treat for my family since. My 38 year old son, is still stealing bites.

- 1. Cook the Chicken-Rice-a-Roni according to package directions. Let cool.
- 2. While rice is cooking, drain the artichoke hearts and green olives.
- 3. Even though the hearts say they are quartered, I always quarter them and cut them into halves or thirds. This lets me find any tough leaves and remove them.
- 4. Put all ingredients together in a bowl. Add the three heaping tablespoons of mayo onto the salad. Mix well and enjoy! To double or even triple the recipe, just add extra boxes of the rice, artichoke hearts and green olives.
RICE-A-RONI SALAD WITH ARTICHOKES AND SHRIMP!
This is a delicious salad, that can be served warm or cold. It would be great for a luncheon, but also great as a supper/dinner meal. I adapted it from a Paula Deen TV Show.

- Prepare RICE-A-RONI as box directs.
- Remoce from heat and place in a large bowl to cool off. Lift with a large spoon a few times to help speed up the cooling process.
- Get all your vegetables prepared.
- Make the dressing by combining the Mayo with the marinade, lemon juice, curry powder, pepper.
- Add everything to the bowl. Pour over the dressing last, and combine well.
- Serve right away. or refrigerate and serve at another time. This is a wonderful lunch treat or a supper worthy of company! :-).
