SWEET AND YUMMY MASHED ACORN SQUASH
If you're having trouble trying to find something to do with the acorn squash in your refrigerator, this sweet side is perfect for kids and for adults too! If you would like some more cinnamon or brown sugar, feel free to add some more.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Place acorn squash, cut-side down, on a baking sheet.
- Bake in the preheated oven for 30 minutes. Flip squash and sprinkle cinnamon into the center and dot with butter. Continue baking until flesh can be easily pierced with a fork, about 30 minutes more.
- Scoop flesh into a bowl and mix in brown sugar until evenly combined.

MAPLE-ROASTED ACORN SQUASH
When I was growing up, my mother served a lot of canned vegetables, but the one thing she always made from scratch was acorn squash, which she roasted with butter and maple syrup. When I revisited her old method, I found it was just as good as I remembered. The sweet squash filled with a big puddle of melted butter and sweet syrup is so irresistible!

Steps:
- Preheat the oven to 350°F.
- Place the squash, cut sides up, on a sheet pan. Place ½ tablespoon butter and ½ tablespoon maple syrup in the cavity of each squash. Brush the cut sides with olive oil and sprinkle the squash with 3 teaspoons kosher salt and 1 teaspoon pepper. Roast for 40 to 60 minutes, depending on the size of the squash, until tender when pierced with a small knife.
- Place the squash on a serving platter. If the halves are too large for one serving, cut each piece in half through the stem. Drizzle lightly with extra maple syrup, sprinkle with sea salt, and serve hot.
- Cooks' Note
- Acorn squash is hard to cut. To halve a whole squash, plunge the blade of a large chef's knife into the side of the squash as far as it will go. Holding the handle of the knife, bang the squash (with the knife in it) on the board until the blade cuts all the way through.
ACORN SQUASH WITH RASPBERRY STUFFING
Steps:
- Preheat oven to 400 degrees F.
- Cut squash in half and scoop out seeds. Use a pastry brush to brush squash with olive oil and sprinkle with pumpkin pie spice; set aside.
- In a large mixing bowl, stir to combine remaining ingredients. Fill centers of squash with stuffing mixture.
- Place in a baking dish and cover with foil. Bake in preheated oven for 45 minutes.
- Remove foil and continue baking another 15 to 20 minutes or until squash is fork tender.
- Cut each half acorn squash into half and serve hot.
MASHED ACORN SQUASH
I love squash, and this one is delicious. I saved the seeds and toasted them, yummy. I actually didn't add the brown sugar or spices, but just crushed a clove of garlic and threw it into the hollow of the squash while it was baking. I do this with spaghetti squash too. Sometimes I prefer the savory to the sweet.

- 1. Preheat oven to 400'F, brush the inside of the squash with the olive oil and sprinkle with salt and pepper.
- 2. Place on a baking sheet for 45 minutes.
- 3. When done remove the insides of the squash and place in a mixing bowl. Add the butter, nutmeg or cinnamon and brown sugar until smooth. Serve warm.

ACORN SQUASH VELOUTé WITH GINGER AND MUSTARD SEEDS

- Heat 3 tablespoons oil in heavy large pot over medium-high heat. Add onions; sauté until light golden, about 8 minutes. Add squash and ginger; sauté 5 minutes. Add 4 1/2 cups broth. Simmer until squash is very tender, about 35 minutes.
- Working in batches, purée soup in blender. Return to same pot. Add tomato purée and cayenne. Season to taste with salt and pepper. Simmer 10 minutes to blend flavors; add more broth if soup is too thick. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm soup over medium heat before serving.)
- Heat 1 teaspoon oil in small skillet over medium heat. Add cumin and mustard seeds and stir until fragrant, about 2 minutes. Ladle soup into bowls. Top with seed mixture and serve.
