BEEF TIPS AND TOTS
I'm going to show you this very old-school method of making beef tips, which, once made, can be used to top lots of things--but my favorite thing to top with tips is probably Tater Tots®. And if you're looking for new ways to prepare lean, cheap, tough cuts of beef, this is one of my all-time favorite methods. You can give this an upgrade by topping with diced red onion, grated Cheddar cheese, and freshly sliced green onions, or you can serve the beef tips over hot mashed potatoes instead of tots, if you like.

Steps:
- Slice beef into 3/4-inch strips; then slice these pieces, at an angle, into smaller "tips." Season beef with salt and pepper.
- Heat oil in a large skillet over high heat until shimmering. Transfer in beef, arranging in a single layer. Let the meat sear until browned, 3 to 5 minutes, before turning over and browning the other side.
- Reduce heat to medium and add tomato paste, garlic, and butter. Stir everything until the butter melts, and then stir in the flour. Cook and stir for 1 minute.
- Stir in broth. Raise heat to high and bring to a simmer. Reduce to low, cover, and cook until beef is starting to get tender, about 1 hour and 15 minutes.
- Meanwhile, preheat the oven to 425 degrees F (220 degrees C).
- Uncover, turn heat to medium, and simmer, stirring occasionally, until the sauce has thickened, and the meat is tender, about 30 minutes.
- While meat simmers, bake potato nuggets in the preheated oven until crispy and heated through, 20 to 25 minutes.
- Taste beef tips and adjust the seasoning. Serve immediately over hot potato nuggets.

TACO TATERS
This quick dinner was inspired by many other posts while looking for easy, gluten-free meal idea for a large crowd. It got such rave reviews i had to post for future meal. I failed to take a picture though.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add corn, salsa, processed cheese, cream cheese, and taco seasoning to ground beef and stir until combined.
- Spread beef mixture over bottom of 9x13-inch baking dish. Arrange potato nuggets over beef mixture, sprinkle black olives, jalapenos, and Cheddar cheese on top.
- Bake in preheated oven until potato nuggets are crisp and cheese is bubbly, about 25 minutes. Garnish with sour cream.

MEATBALL-TATER BITES
Wrap up tater tots in bacon and skewer them with some meatballs for delightful tater meatball skewers. This appetizer makes for great party food!

Steps:
- Heat oven to 400ºF.
- Wrap 1 bacon piece around each TATER TOT; secure with small wooden skewer. Place on parchment-covered rimmed baking sheet.
- Bake 10 min.; turn. Place meatballs on separate parchment-covered rimmed baking sheet; add to oven with the TATER TOTS. Bake 15 min. or until meatballs and TATER TOTS are heated through, and bacon is crisp. Meanwhile, mix remaining ingredients until blended.
- Thread meatballs onto same skewers as TATER TOTS. Serve with mayo mixture.

This is my husband's favorite of my "One Pot Wonders". So simple to make and only one pan to wash!

Steps:
- In baking dish layer potatoes to cover bottom.
- Pop rings out of onions and layer on top of potato slices.
- Place meat on top of onion rings.
- Sprinkle with Mrs. Dash (or any other favorite spices).
- Place small pieces of butter on top of meat and potatoes.
- Place a small amount of water in bottom of dish (to keep potatoes from burning).
- Cover with tinfoil and bake 350* for an hour or until meat is desired doneness.
- (Also great with baby carrots added in).

- Preheat oven to 350 degrees F (175 degrees C).
- Cook and stir ground beef in a large skillet over medium heat until no longer pink and completely browned, 7 to 10 minutes; season with salt and black pepper. Stir cream of mushroom soup into the cooked ground beef; pour the mixture into a 9x13-inch baking dish. Layer tater tots evenly over the ground beef mixture; top with Cheddar cheese.
- Bake until tater tots are golden brown and hot, 30 to 45 minutes.

- 1. Prepare mashed potatoes or use left over mashed potatoes. Set aside. Cook meat, onion, pepper and drain. Add salt and pepper. Pour mixture into oven proof serving dish. Pour soup evenly over meat mixture. Do not stir. Spread potatoes over this mixture. Heat in oven about 350 degrees for 20 minutes or until mixture is hot. Sprinkle a little grated cheddar over top to serve and 1 teaspoon sour cream on each serving.

- Preheat oven to 425 degrees. Prepare a 13x9 inch pan lightly coated in cooking spray and set aside.
- In a large skillet, over medium to medium high heat, cook ground meat and onion until meat is no longer pink. Drain if necessary or desired.
- Add the soup, pepper, onion soup mix, ketchup, Worcestershire sauce, corn and beans to the skillet. Stir until blended.
- Spoon the mixture into your prepared pan and flatten it as evenly as possible. I usually take a spatula or wooden spoon and press the meat mixture down and slide the spoon or spatula across the top of it all. It's never perfect!
