CABBAGE WITH MEAT SAUCE
This is one we'll be using for an upcoming week of menu planning. I always make meat sauce in large batches and freeze it, so I'll be using what I have on hand, so if you don't like the sound of this one, feel free to substitute your favorite. Prep time/cooking time is for the recipe as written.

GRILLED CABBAGE STEAKS WITH CILANTRO-LIME SAUCE
These smoky cabbage steaks make a hearty side dish, but they're also substantial enough to serve as a vegetarian main dish if you add a grain or some beans. Our easy herb sauce made in the blender is light, bright and very versatile. If you have any leftover, it can serve as a salad dressing or a drizzle for other grilled foods.

- Prepare a grill for medium heat. If using wooden skewers, soak them in water for 15 minutes.
- Combine 1 1/2 cups of the cilantro, 1 1/2 cups of the parsley, the garlic, jalapeño, lime juice, rice vinegar, honey and 1/2 teaspoon salt in a blender and blend on high until smooth. With the blender running, drizzle in the oil in a slow stream to make a very smooth sauce. Transfer to a serving bowl and season with more salt, if needed.
- Remove any loose leaves from the exterior of the cabbage and set it on its stem end. Cut a thin piece off one side of the cabbage to make it flat; then slice a thin piece off the other side of the cabbage. (Reserve the pieces for another use.) Slice the cabbage vertically to make 4 thick steaks, each about 3/4- to 1-inch thick.
- Lay the steaks on a baking sheet and stick a skewer horizontally through any that are not holding together. Brush both sides of the steaks with olive oil and sprinkle with the lime zest, ancho powder and 1 teaspoon salt.
- Grill the steaks, covered, moving them occasionally so they cook evenly, until charred and crisp-tender, 6 to 7 minutes per side. Transfer to a serving platter, brush the tops lightly with olive oil and remove any skewers you used.
- Coarsely chop the remaining 1/2 cup cilantro and 1/2 cup parsley. Drizzle about half of the sauce over the cabbage. Sprinkle with the herbs and red onion and serve the remaining sauce on the side.
MEAT SAUCE OVER STEAMED CABBAGE
Everyone has those times when it's the end of the week and the fridge is nearly empty. This recipe was born during one of those times. My husband needed to be out the door in half an hour and I was running late on preparing diner and I had very little to pick from. Luckily, I had brought in a cabbage from the garden earlier that afternoon and I had some leftover spaghetti sauce in the fridge. *Poof* Dinner! I invite you to give this a try. It's very simple, and is ready to eat in about 20minutes. My children enjoyed it, too (even the 17mo old ate it!). I have written recipe exactly as I made it the other night but as it's a "leftover creation" it's forgiving and I'm sure anyone that tries it will find it's very adaptable. I'm betting it would be even better with a home-made sauce.

- Brown the ground beef with salt and pepper to taste.
- Start the cabbage steaming. I actually put down a layer of cabbage, lightly salted it, put down another layer, lightly salted and the left the butter on top. I like to use unrefined sea salt in my cooking and of course, you can totally leave it out, if you need to. The butter, though, is part of what makes it so tasty!
- Back to the ground beef: Add sauce, thyme and brown sugar (adjust salt/pepper if needed).
- Stir the beef mixture regularly and allow it to simmer, adjusting temperature as needed. If your spaghetti sauce was thin, allow it to cook down. When it's done, it should have a consistency similar to that of Sloppy Joe's.
- The cabbage is done when it's soft but still somewhat crunchy.
- Spread cabbage out on the plate as if it were spaghetti and serve with sauce on top. The flavor is similar to sloppy joe's, just not as sweet and with more emphasis on tomato.

- Trim the cabbage, then shred it. To shred, cut the cabbage in half, then slice each half into thin slices and separate the slices with your hands into strips, as shown in the video below. Place the strips in a colander and rinse.
- Transfer the rinsed cabbage to a large, deep skillet, without drying it off - the water adhering to the cabbage will allow it to steam. You can a tablespoon of water to the bottom of the pan, but I don't find it necessary.
- Turn the heat on medium-high and cover. When the cabbage starts to steam, which should take about 1 minute, lower the heat to medium.
- Steam, covered, for about 5 minutes. Uncover, stir, and cook 2 more minutes to allow any remaining water to evaporate. If you still have too much water in the pan, you can drain it into a colander.
