HEALTHY AND DELICIOUS SOUTHERN TURNIP GREENS
Traditional seasonings for southern greens are bacon grease or ham. This healthier version is a delicious alternative. Serve as-is or with sauteed bell peppers, onions, and garlic.

SPICED TURNIPS (SHALGAM MASALA)
I love turnips. This Northern Indian dish is great way to spice up traditional mashed turnips. This dish is great garnished with fresh cilantro or parsley and served with basmati rice, or with naan bread. The amount of chiles you use really controls the heat factor in this dish.

GARY'S SAVORY TURNIP GREENS
I used to hate turnip greens until I tried my DH's recipe...This is it! It's really good, and I can honestly say that even the kids eat this one. It's a Must Try, honestly...Sounds odd, but the flavors really mix together to taste addicting! I've even been known to add 2 strips of bacon crumbled and the grease as well...

- Turnips with Spicy Meyer Lemon Dressing. Turnip recipes like this one get us excited for cooler weather. Here, the turnips and their leaves are roasted with a little salt, then sweet, salty, slightly spicy togarashi-spiked sauce.
- Coriander Chicken Thighs with Miso-Glazed Root Vegetables. Miso enhances the umami factor of the root vegetables in this fall dinner. It's low-waste, too: You'll use the sweet greens from the turnips and the beets.
- Turnips With Garlicky Breadcrumbs and Parmesan. Steaming is a simple, elegant way of preparing turnips, but this recipe has plenty of flavor, too, thanks to a double dose of lemon and the garlicky panko.
- Ice Water Salad. When you've roasted your fill of root vegetables, it's time for a bright, crunchy salad like this one. You'll submerge the cut roots and tubers in a big bowl of icy water, which helps them get extra-crisp.
- Roasted and Marinated Root Vegetables. First you roast, then you marinate. It's a move that works wonderfully with turnips—but also with beets and sweet potatoes, too.

- Heat a large saucepan over medium-high heat. Add the sausage and 1 tablespoon olive oil. Cook until the sausage starts to brown. Pour in the water, cover, and bring it up to a boil. Cook for 15 minutes.
- Meanwhile, wash the roots and greens thoroughly. If you’re using Purple Top or another variety of large turnip, separate the roots from the greens and cut the roots into quarters. If you’re using Hakureis, you can leave them whole.
- Make sure you still have 2 quarts of water in the saucepan and add the roots and greens at the same time. They will not be completely submerged right away, but check back in a minute or two and stir things around. The greens will have cooked down, and both the roots and greens should be submerged in the cooking liquid. If they are not, add just enough water to barely cover them.
- Simmer covered for about 10-15 minutes. You’re looking for the roots to be quite tender and the greens to be soft. Once they’re done, drain off all but 1/2 cup — pot liquour is the life-fixing chicken soup of the South.
