ONE-DISH MICROWAVE SPAGHETTI
Quick and easy comfort food. Complete meal on it's own, but garlic bread and a tossed salad make great additions.

Steps:
- Crumble ground beef into a microwave-safe casserole; add garlic salt& onion.
- Microwave on high until no longer pink (about 4 minutes); stirring once.
- Drain; stir to break meat into smaller pieces.
- Add tomato sauce, water, mushrooms, remaining seasonings and spaghetti.
- Cover with casserole lid; microwave for 10-12 minutes or until spaghetti is tender, stirring twice.
- Let stand 5 minutes, sprinkle with Parmesan cheese and serve.
THE BEST SPAGHETTI CASSEROLE

- Preheat oven to 350 degrees F (175 degrees C). Grease a deep 9x13 inch baking dish.
- Bring a large pot of salted water to a boil over high heat. Stir in the spaghetti. Boil the pasta until cooked through but still firm to the bite, 8 to 10 minutes. Drain well.
- Brown ground beef and onion in a large skillet over high heat; drain fat. Stir in the spaghetti sauce, sour cream, and 1 cup of the mozzarella. Mix in the cooked pasta. Transfer pasta mixture to prepared baking dish. Top with remaining 1 cup of mozzarella and the Parmesan cheese. Cover pan with aluminum foil.
- Bake in preheated oven until hot and bubbly, about 30 minutes.

- Pierce squash with a fork. Place on paper towel in microwave; cook on high for 3-1/2 minutes per pound or until squash is soft. Let stand 5-10 minutes. Cut in half; remove seeds and scoop out pulp. Set aside. In a 2-qt. casserole, toss red pepper, onion, garlic and olive oil. Cover and microwave on high for 1-1/4 minutes or until slightly soft. Add tomato, zucchini, mushrooms, vinegar, tarragon, salt and pepper. Cover and microwave on high for 2 minutes or until crisp-tender. Toss with squash and serve immediately.

COOKING PASTA IN THE MICROWAVE
This method is useful for cooking for a single serving or two of pasta. Ideally, use a 1 1/2-quart ceramic pot. According to "Microwave Cooking for One" by Marie T. Smith, the shape and arrangement of the food in the microwave makes a difference in its cooking. This recipe is from the previously mentioned book.

Steps:
- Pour 1 cup of water into a microwaveable pot for short pasta like elbow and ziti. Pour 2 cups of water for long pasta like linguine and spaghetti.
- Cook in the microwave at full power until water boils (2:30 minutes for 1 cup and 5 minutes for 2).
- Add all the other ingredients except pasta. Stir.
- If adding short pasta, cook for 12 minutes at 350 watts (50% power if your microwave is 700 watt), until water is absorbed. Serve however you like it.
- If adding long pasta, the ends will stick out of the pot. Cook for 1 minute at full power. The pasta in the water will have softened, and you can then push the ends into the pot.
- Cook another minute at full power, then stir, making sure all the pasta is covered by water.
- Cook 6 to 8 minutes, depending on how wide the pasta is, at 350 watts until the pasta is done.
- Drain the water away and serve however you like it.
- To increase the recipe, add 1 cup water for each additional 2 oz of pasta. Cook the water until it boils, then follow the recipe above exactly, because all the other cooking times remain the same.
MICROWAVE TUNA NOODLE CASSEROLE
This is one surefire dish that gets my picky 2 year old to eat anything in the "protein" group; he always asks for more. It's easy, delicious and creamy. The french fried onions and cheese (I've always used shredded cheddar) are the key ingredient in this recipe.

- Combine soup and milk in a 2 quart microwavable shallow dish.
- Stir in pasta, tuna, 2/3 cup French Fried Onions, vegetables and cheese.
- Cover and microwave on HIGH for 10 minutes or until heated through, stirring halfway through cooking time.
- Top with remaining 2/3 cup onions and microwave for 1 minute or until onions are golden.
- For oven baking, follow steps 1 and 2 then top casserole with the remaining 2/3 cup onions and bake at 350 degrees, covered, for 30 minutes or until onions are golden.

MEATLESS, MICROWAVE, SPAGHETTI PIE
This is a really quick and easy way to use up leftover spaghetti and still make it a little bit different than the original meal. I can't find my original recipe and I'm sure this could be jazzed up a bit to make it a bit more interesting - let me know your suggestions.

- If desired, lightly cook the green pepper in frying pan.
- Combine the spaghetti, mozzarella, and green pepper in a medium sized bowl.
- Grease a 3 quart microwave casserole dish.
- Spread the spaghetti mixture into the casserole dish.
- Spread the spaghetti sauce over the spaghetti mixture.
- Sprinkle with shredded Romano cheese.

Microwaving spaghetti squash is much easier and quicker than waiting for it to roast in the oven. Once done, it is ready to be topped with your favorite ingredients, or kept simple with just a pat of butter and some salt. For longer strands, cut the squash crosswise instead of lengthwise.

- Carefully cut stem end off the spaghetti squash. Poke a few small slits in the squash in a dotted line where you plan to slice the squash. Carefully cut between the slits until the squash is cut in half. Scoop out seeds and pulp.
- Place squash in a 9x13-inch microwave-safe dish, cut-side down. Pour water into the dish so it is at least 1/2 inch deep.
- Microwave on high power until skin is soft and can be pierced with a fork, 12 to 15 minutes. If dish is too big to rotate, turn off the turntable and rotate dish halfway through.
