MICROWAVE VANILLA CREAM PIE & VARIATIONS
This is a breeze to make! We love cream pies but I have arthritis and a lot of times I don't feel like all the stirring it takes to make a cream pie the traditional way. This cuts out all of that! The taste is exactly the same, delicious! This recipe comes from an old Tappan O'keefe & Merrit Microwave Cooking Guide.

MICROWAVE SUGAR CREAM PIE
This recipe was the grand prize winner a few years ago in a recipe contest held by an area newspaper. I love sugar cream pie, but didn't have an easy recipe until I found this one. I used a store bought pie shell, and ended up with more filling than the shell would hold so we ate the leftover filling like pudding.

- Dump milk, egg yolks, sugar, cornstarch and salt into blender or food processor. (See notes if you need to do this by hand.)
- Blend for about 10 seconds. There may be a lot of foam. That’s OK–it will disappear when cooked.
- Pour into a 2-quart glass batter bowl. (DO NOT USE A SMALLER CONTAINER–it could boil over and make a mess.)
- Cook in a microwave on HIGH for 5-7 minutes. Whisk well after 3 minutes and every minute thereafter. Microwaves vary wildly. If the pudding mixture is not thick after 7 minutes, keep cooking and stirring until the custard looks like pudding. It should heavily coat a spoon.

- Preheat oven to 325 degrees F. Place the pie crust onto a baking sheet. Or, if using a refrigerated crust, lightly grease a 9" pie pan, put the crust in, and set the pan on a baking sheet. Bake for approximately 10-12 minutes or until partially baked. Set aside.
- In a small bowl, mix together the cornstarch and sugar until blended. In a medium saucepan, bring the cornstarch-sugar mixture, melted butter and heavy cream together over medium heat, stirring constantly. The mixture is done when it's thick and creamy. Stir in the vanilla.
- Pour the mixture into the prepared pie crust and smooth out the top. Drizzle on the melted butter and evenly sprinkle on the cinnamon sugar. Bake for approx. 25 minutes, then turn on the broiler and broil for about 1 minute, watching carefully. Remove from oven and allow to come to room temperature before refrigerating for at least one hour to set. Store in fridge.
