SPICY MIDDLE-EASTERN ALLIGATOR WITH RICE PILAF AND TABBOULEH SALAD

Spicy Middle-Eastern Alligator with Rice Pilaf and Tabbouleh Salad image

Steps:

  • In a large bowl, thoroughly combine the beaten egg whites, garlic, lemon juice, and red chili powder. Using a meat tenderizer, pound all of the alligator fillets until they are tender. Marinate the alligator in the egg white mixture for about 20 minutes.
  • In a large skillet, heat the olive oil over medium-high heat. Remove the alligator fillets from the marinade and sprinkle them with salt. Carefully place the alligator fillets in the pan, and saute them until browned. Work in batches as necessary. Flip the fillets with tongs or with a spatula, and cook until browned on the other side, and the meat is cooked through.
  • In a medium bowl, cover the bulgur wheat with warm water and allow it to soak for approximately 20 minutes. Pour the bulgur wheat into a strainer, and then squeeze out all of the excess water. Mix the lemon juice, salt, and pepper with the bulgur wheat and set aside.
  • Wash the parsley, and dry it thoroughly. Chop the parsley very finely and combine it, along with the tomatoes and scallions, with the bulgur wheat mixture. Stir the olive oil into the salad until it is thoroughly covered. Add more lemon juice, salt, or pepper as desired, to adjust the taste.
  • In a large saucepan, melt the butter over high heat. Add the rice and noodles to the pan, and fry them in the butter. Add approximately 1 1/2 cups of water to the pan and lower the heat to medium-low. Cover the pan with a tightly-fitting lid, and allow the rice mixture to steam until all the water is absorbed. Season with salt, to taste.

Steps:

  • In large saucepan, cook onion in olive oil until tender. Stir in rice and spices. Cook, stirring constantly, until rice begins to turn golden.
  • Pour in broth and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes. Do not lift lid while cooking.
  • Remove from heat and allow to sit for 5-10 minutes undisturbed.
  • Then add the chopped spinach, raisins, and almonds, stirring, and fluffing with a fork. Sprinkle with rose water, and fluff a little bit more, if desired.

Steps:

  • Heat oil in a saucepan over medium heat and cook onion until soft and translucent. Add rice and toast until fragrant, 2 to 3 minutes. Pour in hot vegetable broth and bring to a boil. Add saffron and allspice, reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, about 20 minutes.
  • Toast pistachios in a skillet over medium heat until nuts start to turn golden brown and become fragrant, 5 to 10 minutes. Set aside.
  • Stir butter into the cooked rice. Remove from heat and mix in pistachios and pomegranate seeds. Fluff with fork and season with salt and pepper.

  • Pour the rice and water mixture through a strainer and wash the rice thoroughly with warm water. Place the strainer over a bowl to allow the excess water to drip for about ten minutes.
  • After the excess water has drained, place the shortening or oil in a pot over high heat. If you're using the shortening, stir until it's fully melted. Pour the vermicelli noodles into the pot. Stir frequently. After about 5 minutes or once the noodles have gotten to more of a brownish color, add the rice to the noodles and cook both for a couple more minutes. We just want to toast the rice for a couple of minutes and this will also finish off cooking the noodles to a color we're satisfied with. The noodles should be browned, but not burned. They're naturally golden in color and will darken as you cook them.
  • Once the sauteeing is done, pour cold water into the pot. Add in the vinegar and salt. Stir just a little bit until the rice is fully covered by the water. Cover with the lid and cook on high heat until most of the water is soaked up from the top. This takes about 5 minutes or so on high heat. Make sure to check to see if the water is soaked up just enough. Some water should be visible, but most of it should be soaked up from the top. It's important not to overdo it or the rice will be overcooked.
