MILE HIGH POPOVERS

Adapted from The Art of Quick Breads, by Beth Hensperger Easily multiplied for more. It's easy to eat three of these, but hard to eat just one. I recommend using the butter instead of oil.

Steps:

  • Beat eggs until foamy, then add remaining ingredients and beat until smooth. Do not overmix.
  • Refrigerate 1 to 8 hours.
  • Pour batter into popover cups which have been buttered or sprayed, and place in cold oven. Turn heat to 375, bake 30 minutes without opening oven door. Pierce the side of each one to allow steam to escape before continuing to bake them 10 to 15 minutes longer, until firm and golden.
  • Let cool briefly, the pierce each one again to release steam. Serve while warm.
  • Note: if not pierced, they will still be delicious, just a little wetter inside.

  • Preheat the oven to 425 degrees F.
  • Generously grease aluminum popover pans or Pyrex custard cups with softened butter. You'll need enough pans to make 12 popovers. Place the pans in the oven for exactly 2 minutes to preheat. Meanwhile, whisk together the flour, salt, eggs, milk, and melted butter until smooth. The batter will be thin. Fill the popover pans less than half full and bake for exactly 30 minutes. Do not peek.

1 1/2 cups flour
3/4 teaspoon kosher salt
3 extra-large eggs, at room temperature
1 1/2 cups milk, at room temperature

Steps:

  • If eggs and milk are cold, before combining, submerge whole eggs in warm water 10 minutes and heat milk until just warm. Preheat oven to 450 degrees with a nonstick popover pan on rack in lowest position.
  • After you have combined eggs and milk in a large bowl, whisk together until very frothy. This should only take about 1 minute. Have the flour and salt measured out and ready to go.
  • Add flour and salt to egg mixture. We tested out a blender and an electric stand mixer when making the batter, but concluded that whisking by hand produces the most tender, airy popovers.
  • Whisk flour and salt into egg mixture just until batter is the consistency of heavy cream with some small lumps remaining. See those air bubbles? They are what will cause the popovers to rise.
  • Remove popover pan from oven and coat with cooking spray. If you prefer a standard muffin tin, only coat (and fill) the outer cups; they get better circulation in the oven. (Also, reduce baking time by 5 minutes.)
  • Fill popover cups about three-quarters full with batter. Bake 20 minutes, then reduce oven temperature to 350 degrees. Continue to bake until golden brown and dry to the touch, about 20 minutes more.
  • Popovers lose their crunch if they linger in the pan, so turn them out on a wire rack immediately and poke a small opening in the side of each with a paring knife to let the steam escape. Serve right away.

  • The Eggs and Milk Must Be At Room Temperature. Keeping the eggs and milk at room temperature, or even using slightly warmed milk, will give these ingredients a "head start" in the oven.
  • Mix the Eggs and Milk First. The other secret to a great popover is to mix the eggs and milk first, before adding the flour. This will allow the eggs to become incorporated well without over mixing the flour.
  • Use a Popover Pan. Certainly you can make these in a muffin tin, but they will be denser, and your yield will be more than 6 popovers. So it's best to have 2 muffins tins at the ready.
  • Grease with Oil Not Butter. While butter tastes pretty good, it's trickier to get an easy release from the pan when greasing with butter! Instead, I use vegetable oil, and save the butter for when the popovers are baked!
  • Heat The Pan Before Adding The Batter. This is another secret to great popover success! Preheat the pan. It's important to allow the oven to be preheated and come up to 450F first.
