Mincemeat Peach Cobbler image

Steps:

  • Place rack in the lowest position & preheat the oven to 425 degrees F.
  • Roll out [or unroll!] 1 pastry round & line a shallow 2 quart baking dish.
  • Combine the mincemeat & walnuts, then pour the mixture into the baking dish.
  • Pour the peach filling over the mince mixture, then top with the 2nd pastry round.
  • Seal & flute the pastry edges, & cut several vents in the top.
  • Bake for 30-35 minutes until lightly golden brown.
  • Remove from the oven & let it cool down some on a wire rack, before serving it warm.

Steps:

  • Preheat oven to 400 degrees.
  • Mix together the mincemeat, apples, 2 tablespoons sugar, nutmeg& melted butter.
  • Blend together and spread on the bottom of a baking dish.
  • Sift the flour, baking powder, salt& 1 tablespoon sugar.
  • Cut in the shortening.
  • Add the milk and beaten egg.
  • Mix and spread over the first mixture.
  • Bake 30 minutes.
  • Serve hot with cream.

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the peaches in a 9-by-9-inch baking pan. In a medium bowl, mix together the flour, 3/4 cup of the sugar, the baking powder and 1/2 teaspoon of the salt. Add the milk and melted butter and mix well. Pour the batter evenly over the peaches.
  • In a small bowl, mix together the remaining 1/4 cup sugar, the cornstarch and remaining 1/2 teaspoon salt. Sprinkle the mixture over the batter. Evenly pour the boiling water all over.

  • For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.

  • Preheat oven to 375 degrees F (190 degrees C). Place a baking sheet on the rack under the middle rack to catch drips. Generously butter a 2-inch deep (2-quart) baking dish.

This recipe came from my high school cooking class. Over the years I have tweaked it and retweaked it so many times that I have changed it to a mincemeat cake with either pecans or walnuts. It tastes similar to fruitcake, but without the candied fruit. When the kids ask me to make a fruitcake, this is the one they are referring to. At different times I have added coconut, candied fruitcake fruit, and chopped dried fruit. It has a bit of a fruitcake flavor. If you add extra ingredients and it causes the batter to be too moist, more flour can be added. Up to 1/2 cup flour can be added without changing other ingredients. If you add more flour than that, add 1/2 teaspoon of baking powder.
