MOIST APPLE BREAD/MUFFINS
I found this recipe on another website, and I thought it was so tasty. I especially like the nice addition of the cinnamon and sugar on top! I've made both a loaf and muffins out of this. The time shown is specific for the loaf. I think I baked the muffins for about 15-20 minutes or until a toothpick came out clean.

Steps:
- Preheat the oven to 350 degrees.
- Cream sugar and shortening. Add eggs.
- Sift together baking powder, salt, flour, and baking soda. Add sugar/shortening mixture and blend.
- Add apples, nuts, and vanilla.
- Place in loaf pan.
- Sprinkle cinnamon and sugar on top.
- Bake for 1 hour.
- Allow to cool slightly in pan before placing on a cooling rack.

- Preheat oven to 400 degrees F (200 degrees C). Lightly grease 12 muffin cups or line with paper muffin liners.
- Stir together flour, baking powder, sugar, cinnamon and salt. In a separate bowl, stir together milk, egg and butter. Stir egg mixture into flour mixture just until combined. Fold in chopped apples. Spoon batter into prepared muffin cups.
- Bake in preheated oven for 20 minutes, or until a toothpick inserted into center of a muffin comes out clean.

- Preheat oven to 400 degrees F (200 degrees C). Grease six muffin cups or line with paper muffin liners.
- Stir together 1 1/2 cup flour, 3/4 cup sugar, salt, baking powder and 1 teaspoon cinnamon. Mix in oil, egg and milk. Fold in apples. Spoon batter into prepared muffin cups, filling to the top of the cup.
- In a small bowl, stir together 1/2 cup sugar, 1/3 cup flour, butter and 1 1/2 teaspoons cinnamon. Mix together with fork and sprinkle over unbaked muffins.
- Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean.

- 1. Preheat oven to 350 degrees. These are "regular" size muffins (not large or mini) and cooking time is based on this size muffin. Line muffin pans with paper liners. Or you cans spray pans with baking spray. Not sure it's necessary but I sprayed the paper liners. NOTE: this batch made 16 muffins
- 2. Grate zucchini and apples; set aside. Melt butter; set aside.
- 3. In a large bowl, combine sugar, eggs and vanilla; stir in zucchini, apples and melted butter.
- 4. In another bowl, mix the dry ingredients together.
- 5. Stir dry ingredients into the wet ingredients. Add raisins and walnuts.
- 6. Spoon batter into muffin tins, filling to the rim.
- 7. Bake 20 to 25 minutes or until done. Test at 20 minutes with wooden toothpick or cake tester.
- 8. Remove from oven and cool. However, they are pretty yummy still warm. Enjoy!

- Preheat the oven to 400 degrees F. Coat a 12-capacity standard muffin pan with cooking spray.
- In a small bowl, mix together the pecans, 2 tablespoons of the brown sugar and the cinnamon.
- In a medium bowl, whisk together the all-purpose and whole wheat flour, baking soda and salt.
- In a large bowl, whisk the remaining 3/4 cup sugar and the oil until combined. Add the eggs, one at a time, whisking well after each addition. Whisk in the applesauce and vanilla.
- Whisk in the flour mixture in two batches, alternating with the buttermilk. Whisk just until combined. Gently stir in the apple chunks.
- Pour the batter into the prepared muffin pan and sprinkle with the pecan mixture. Tap the pan on the counter a few times to remove any air bubbles. Bake until a wooden pick inserted in center of one of the muffins comes out clean, 20 to 25 minutes.
- Let cool on a wire rack for 15 minutes. Run a knife around the muffins to loosen them and unmold. Cool completely on the rack.

I was first introduced to this wonderful Apple Bread from a co-worker more than 20 years ago! I just recently begged her to bring me the recipe so I could make it. - Heat over to 350 and grease and flour loaf pan.
- Cream together the 1 cup sugar, shortening, eggs and vanilla.
- Stir in flour, baking powder, baking soda and salt until smooth.
- Stir in apples and nuts and spread in pan.
- Mix the 1 tablespoon sugar and cinnamon; sprinkle evenly over batter.
- Bake until toothpick inserted in center comes out clean, about 50-60 minutes.
- Immediately remove from pan; cool bread completely before slicing.
